SPICY CHICKEN DRUMSTICKS

- Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
- Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
- Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
- If you wish, garnish with chopped parsley and red pepper flakes, then serve.

TEXAS SPICY DRUMSTICKS RECIPE - TRAEGER GRILLS
Try these smoked Texas spicy drumsticks. Texas-style BBQ sauce is riddled with spices & will give your taste buds a kick in the keyster.

Steps:
- When ready to cook, set the Traeger temperature to 180℉ and preheat with the lid closed for 15 minutes.
- Pat the drumsticks dry with a paper towel and season generously with salt and pepper.
- Arrange the drumsticks directly on the grill grates. Insert the probe into the thickest part of a drumstick, avoiding the bone. Close the lid and smoke for 30 minutes.
- Increase the Traeger temperature to 350℉ and continue cooking the drumsticks for another 30 minutes.
- Brush the Texas Spicy BBQ Sauce over the drumsticks, then close the lid and cook until the internal temperature reaches 165°F, 15-30 minutes more.
- Remove the drumsticks from the grill and serve. Enjoy!
SMOKED SPICY TERIYAKI DRUMSTICKS
This is a recipe that was adapted from Kraft Foods. It was a big hit at my recent cookout. I made my own barbecue sauce and used 1960's Catalina Dressing for the quick marinade. This is delicious served with smoked corn on the cob and coleslaw.

- In a small bowl, mix together the dressing through oil. Wash and dry the drumsticks and add to a large bag. Pour prepared dressing mixture over chicken and gently coat .
- Remove chicken and arrange on large cookie sheet. Allow to stand while preparing smoker and bringing to temperature.
- Fill smoker water pan as directed by manufacturer, add pre-soaked wood chips. Bring smoker to a temperature of 250 degrees. Lightly grease or spray racks. Arrange chicken drumsticks on racks leaving enough space for chicken to cook.
- Cook chicken at 250 degrees for 2 to 2 1/2 hours or until internal temperature is 185 degrees, turning every 30 minutes and basting with barbecue sauce.
SPICY TEXAS DRUMSTICKS
Yield 2 Servings; CAN BE DOUBLED

- Prepare barbecue (medium-high heat).
- Sprinkle drumsticks with salt and generous amount of pepper. Grill drumsticks 12 minutes, turning occasionally.
- Meanwhile, stir chili powder and cumin in heavy small saucepan over medium heat until toasted and fragrant, about 1 minute. Mix in chili sauce, molasses, cider vinegar, orange juice, orange peel. Reduce heat to medium-low and simmer until sauce thickens slightly, about 6 minutes.
- Reserve half of sauce in small bowl. Brush remaining sauce on chicken; continue to grill until cooked through, crisp and brown, turning occasionally, about 15 minutes longer. Serve chicken with reserved sauce.

- Spray a 13x9 inch baking pan with cooking spray.
- Put drumsticks in the baking dish and sprinkle with salt and pepper.
- Bake at 375 degrees for 30 minutes.
- In a bowl, mix together the remaining ingredients.
- Take drumsticks out of the oven and pour sauce mixture over them.
- Bake the drumsticks for 30 minutes or until juice run clear.
