SPICY THAI FISH KEBABS



Spicy Thai fish kebabs image

1 tbsp Thai spice mix (we used the widely available Schwartz Thai Lemon Grass and Coconut Stir-Fry Seasoning)
1 tsp vegetable oil
250g skinless plaice or pollock fillets, cut into strips
1 yellow pepper , seeded and cut into chunks
1 onion , cut into chunks
4 cherry tomatoes
Thai jasmine rice , to serve
1 tbsp chopped fresh parsley
150ml low-fat yogurt
lemon juice to taste

Steps:

  • Preheat the oven to 180C/gas 4/ fan 160C. Line a baking tray with foil and brush lightly with oil.
  • Mix the spices and oil in a shallow bowl and season well. Roll the fish in the spice mixture, then loosely concertina it on 4 skewers. Follow with 2-3 chunks of pepper and onion per skewer and finish with a cherry tomato.
  • Roast the skewers on the foil for 8-10 minutes or until the fish is white and opaque. Stir the parsley into the yogurt, then add the lemon juice and salt and pepper to taste. Serve with the kebabs and rice.

¼ cup olive oil
1 lemon, juiced
6 cloves garlic
2 tablespoons harissa (red pepper paste)
1 teaspoon ground cumin
½ teaspoon freshly ground black pepper
salt to taste
1 ⅓ pounds 1-inch-thick tuna, skin removed and flesh cut into 30 cubes
1 red bell pepper - seeds and ribs removed and pepper cut into 15 squares
1 yellow bell pepper - seeds and ribs removed and pepper cut into 15 squares
1 large red onion, cut into wedges and layers separated
6 skewers

Steps:

  • Blend olive oil, lemon juice, garlic, harissa, cumin, black pepper, and salt together in a blender or food processor until marinade is smooth. Place tuna in a bowl and pour marinade over tuna; toss to coat. Marinate in the refrigerator for at least 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Thread 1 piece tuna, 1 piece red bell pepper, 1 piece yellow bell pepper, and 1 piece onion onto 1 skewer; repeat 4 times. Repeat with remaining ingredients using the remaining 5 skewers.
  • Cook skewers on grill until fish flakes easily with a fork, about 10 minutes.

Easy to make, appetizer or finger food, these hot and spicy little fish cakes are not only delicious but also healthy, and kind on the waistline!!!

Number Of Ingredients 9

1 lb white fish fillet
1 red chili peppers or 1 green chili pepper, de-seeded and chopped finely
2 ounces green beans, chopped very finely
2 spring onions, chopped finely
2 tablespoons coriander leaves, and roots chopped finely
1 tablespoon Thai fish sauce
4 -5 fresh kaffir lime leaves, finely shredded or 1 tablespoon fresh lime juice
1/2-1 tablespoon Thai red curry paste, more if you like it really hot
oil (for frying)

Steps:

  • Cut the fish into chunks, put in your food processor with the rest of the ingredients, except the oil, and blend using the on/off technique until you have a minced texture but not a paste.
  • Remove from the food-processor bowl to another dish.
  • Take approx a dessert spoon full of the fish mix, with wet hands form into balls then flatten them with the palm of your hand into cakes.
  • Leave them in the fridge, covered, to firm up for an hour or more.
  • When ready to cook, heat up the oil and fry the little cakes about 1 minute on each side.
  • Drain on paper kitchen towel.
  • Serve with a Thai dipping sauce**There several recipes on the site.
