SPICY ASIAN PIG TROTTERS
Growing up in the south, pig's feet was something we had a few times a year. My mom always made the best TROTTERS! This is my Asian revamped version. This isn't for everyone, but it sure is for me! Cooking with Love & Passion sw :)

Steps:
- 1. Boil pig's feet for about 15 minutes in Dutch oven and drain. Add pig's feet back to Dutch oven. Cover with water. Add remaining ingredients to Dutch oven, bring to a boil. Reduce heat to low and cook for 2 hours, until pig's feet are tender. Remove pig's feet from Dutch oven. Increase heat to concentrate the juice. Plate up pig's feet, pour juice on pig's feet and top with garnish. Enjoy!

Steps:
- Marinate the goat feet with the ginger-garlic paste.
- Place them in a pressure cooker with the cinnamon, cloves, cardamoms, black peppercorns, pepper powder and 1 tablespoons oil.
- Cover with enough water{should be atleast 2 inches above the level of the goat feet}.
- Cook for about 50 minutes or till they are tender.
- Heat oil in a pan.
- Toss in the onions and spring onions.
- Stir-fry until the raw smell is gone and they change colour.
- Add chopped green chillies and all the spice{masala} powders.
- Mix well.
- Add chopped tomatoes and cook until the mixture is pulpy.
- Add the chopped mint and corriander leaves alongwith salt to taste.
- Mix well.
- Pressure cook for another 50 minutes or until tender.
- Serve in soup plates with crisp bread rolls and spring onions.
- Enjoy!

- Soak pig’s trotter in cold water at least 4 hours to overnight. Shave the hair if necessary with a new sharp razor or beauty razor.
- Bring 10 cups of water to boil (doesn’t need to be exact, just enough to cover the pig’s trotter). Add instant coffee and carefully drop the pig’s trotter.
- Bring it back to boil and let it keep boil for 10 minutes. Rinse under cold water and discard the water. It’s full of blood and scums, you don’t want to eat that.
- Into the clean pot (either wash the previous pot or a new pot), place all ingredients for the broth. Place all dried spices into a tea/stock bag and tie them tightly. Add into the pot. Give it a good mix to all the sugar and rice syrup to dissolve into liquid.

- Place pork feet and ginger slices in a large pot and add water to cover pork feet. Bring the water to a boil and continue boiling for about 3 minutes. Discard water and wash pork feet carefully.
- Add pork feet into pressure cooker and add water until the pork is covered completely. Cook over high heat until rated pressure has been reached. Turn to lowest heat and cook at rated pressure for 15 minutes. (*see footnote 3)
- After releasing pressure naturally, transfer pork feet to a wok (or dutch oven). Transfer pork broth from pressure cooker to wok until it almost covers the pork. Add the rest of the ingredients into wok and turn to high heat. After bringing the broth to a boil, reduce to low heat and simmer covered for 30 minutes. Stir pork feet every 10 minutes to avoid burning on the bottom. Stir more often toward the end of braising, after the sauce has thickened. Add water during the braising process if the broth becomes thick while the pork is still tough. If the pork turns very soft but the sauce is still thin, turn to medium heat and boil uncovered. Reduce sauce until desired thickness.
- To cook without a pressure cooker, skip step 2 and add boiled pork, water and all ingredients into a wok or a dutch oven. Add water until it covers pork and boil for around 2 hours. If the water level becomes too low while pork is still though, add warm water, 1 to 2 cups at a time, and continue braising.
