5 large eggs, divided
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon chili powder
1-3/4 cups refrigerated shredded hash brown potatoes
1 small onion, finely chopped
1/4 cup canned chopped green chiles
2 tablespoons salsa
2 tablespoons canola oil
1/2 cup shredded cheddar-Monterey Jack cheese
Optional toppings: Salsa, guacamole, sour cream and minced fresh cilantro

Steps:

  • In a large bowl, whisk 1 egg, salt, cumin, pepper and chili powder. Stir in potatoes, onion, green chiles and salsa. Bake in a preheated waffle iron coated with cooking spray until golden brown and potatoes are tender, 8-12 minutes., In a large skillet, heat oil over medium-high heat. Break remaining eggs, 1 at a time, into pan. Reduce heat to low. Cook to desired doneness, turning after whites are set if desired. Remove from heat. Sprinkle with cheese; cover and let stand 3 minutes or until melted., Serve eggs with waffles and toppings of your choice.

1 1/2 teaspoons paprika
1/2 teaspoon ground coriander
1/2 teaspoon mustard powder
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
4 skinless, boneless chicken breasts (about 8 ounces each)
2 tablespoons vegetable oil, plus more for the waffle iron
1/4 cup pure maple syrup
5 teaspoons apple cider vinegar

Steps:

  • Preheat a waffle iron to high. Combine the brown sugar, paprika, coriander, mustard powder, onion powder, garlic powder, cayenne, 1 1/2 teaspoons salt and 1/4 teaspoon black pepper in a small bowl. Reserve 1/2 teaspoon of the spice mixture for the syrup.
  • Halve each chicken breast crosswise. Lightly pound the thicker pieces between 2 pieces of plastic wrap with the flat side of a meat mallet or heavy skillet so that they are the same thickness as the other pieces. Toss the chicken with the vegetable oil, then rub all over with the spice mixture.
  • Generously brush the waffle iron with vegetable oil. Put a larger chicken piece in the center of each back quadrant of the waffle iron and a smaller piece in each of the front quadrants. Press the lid down to flatten the chicken and cook, pressing on the lid periodically, until the chicken is just cooked through, 3 to 5 minutes. Transfer to a platter and repeat with the remaining chicken.
  • Meanwhile, combine the maple syrup, vinegar and the reserved 1/2 teaspoon spice mixture in a small saucepan over high heat. Cook until bubbling and thick, about 5 minutes. Drizzle over the chicken.

Steps:

  • Soak the moong dal in water for 3 to 4 hours.
  • Then wash it well Blend the soaked dal in a blender with the green chillies and a little water.
  • Add the fenugreek leaves,gram flour,asafoetida,soda bi-carb,sugar,oil,salt and mix well.
  • Pour a little batter at a time in a waffle iron or sandwich toaster and bake until crisp.
  • Repeat with the remaining batter.
  • If you are using the sandwich toaster spread a little oil on the toaster before pouring the mixture.
  • Serve hot with mustard dip or green chutney.

1 ½ cups shredded smoked Gouda cheese
2 cups buttermilk
3 eggs, separated
⅔ cup light sour cream
½ cup vegetable oil

Steps:

  • In a large bowl, stir together the flour, baking powder, baking soda, garlic salt, parsley, rosemary and tarragon. Stir in the shredded Gouda. Set aside.
  • In another bowl, mix together the egg yolks, buttermilk, sour cream and vegetable oil until well blended. Pour the wet ingredients into the flour mixture, and stir until just blended. In a separate clean bowl, whip the egg whites until stiff peaks form. Fold into the waffle batter.
  • Heat the waffle iron, and grease with vegetable oil spray. Use the recommended amount of batter for each waffle according to your iron. Close the lid, and cook until golden brown. Waffles can be held in a warm oven while the others are cooking. Serve with creamed beef or chicken.
