Make the most of summer's best with this Mojito Watermelon Salad! This sweet watermelon salad with the right amount of mint and lime is a refreshing and easy summer side dish.

1 medium seedless watermelon - about 8 cups chopped watermelon
2 tablespoons honey or sugar
1/4 cup fresh lime juice
zest from 1 lime
1/3 cup mint leaves plus extra for garnish

Steps:

  • Cut your watermelon into bite-sized cubes. If using part of the rind as a bowl, be careful when scooping the flesh from the bowl side.
  • Cut the 1/3 cup of fresh mint leaves into small strips. Set aside.
  • In a small bowl, whisk together the sweetener, lime juice, and lime zest.
  • Pour the dressing over your watermelon. Add the mint leaves. Stir.
  • Enjoy!

1 seedless watermelon (sliced)
1/4 cup of lime juice
1/4 cup mint leaves (sliced)
1 jalapeno (sliced)
2 tablespoons agave syrup
pinch of sea salt

Steps:

  • In a large dish add sliced or cubed watermelon.
  • In a small mixing bowl combine the lime juice, mint leaves, jalapeno, and agave syrup. Whisk well to combine.
  • After it's well combined, muddle the mint and jalapenos into the dressing using a wooden spoon.
  • Pour the dressing over the watermelon and top with flaky sea salt.

  • Place watermelon into serving bowls; sprinkle with spice mixture. Squeeze lime juice over spiced watermelon.
