1/4 gallon apple cider
1/2 cup dark rum
1/2 cup cinnamon schnapps
1 Granny Smith apple, peeled, cut into large chunks
1/2 lemon, juiced

Steps:

Mix together the cider, rum, and schnapps in a large pitcher. Add the apples to a small bowl and toss them with the lemon juice. Thread the diced apples onto skewers. Pour the spiked cider into glasses filled with ice, then garnish with an apple skewer and serve.

1 quart water
3 orange spice tea bags
½ cup light brown sugar
2 cups apple cider
1 ½ cups light rum
8 cinnamon sticks
3 teaspoons butter

Steps:

Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.
Ladle hot cider into 6 mugs and drop 1/2 teaspoon butter into each. Garnish with a cinnamon "swizzle" stick.

They make vats of it in the restaurant and keep it chilled, but the recipe is easily to scaled down to reproduce at home. Come spring you might replace the Demerara syrup with maple syrup.

1 cup nonalcoholic cider
3 ounces applejack
2 ounces gin
1 tablespoon lemon juice
1/2 tablespoon Demerara simple syrup (see note), or maple syrup
Dash Angostura bitters
Crushed ice
Pinch nutmeg
10 thin apple slices for garnish

Steps:

Combine cider, applejack, gin and lemon juice in a jar or pitcher. Stir in simple syrup and add bitters. Cover and refrigerate at least 4 hours.
Fill 2 old-fashioned glasses with crushed ice. Pour in cider mixture. Dust with a little nutmeg and poke apple slices into the ice for garnish.

3 gala apples, or fuji apples, cored and cubed
10 fl oz spiced rum
cinnamon stick, for garnish

Steps:

Add the apple cider, cinnamon sticks, and allspice berries to a slow cooker. Turn the heat setting to high, cover, and warm for 30-60 minutes, or until steaming. Once steaming, reduce the heat setting to warm.
Add the apples and rum and stir to combine.
Ladle into mugs and garnish with cinnamon sticks.
Enjoy!
