SPINACH AND ARTICHOKE STRATA WITH RED PEPPERS



Spinach and Artichoke Strata with Red Peppers image

Here's an excellent breakfast casserole that can also be used as a light dinner. It must be refrigerated at least 8 hours before baking. Prep time does not include refrigeration.

1 tablespoon olive oil
1 (10 ounce) package frozen chopped spinach, thawed
9 eggs
1 large red bell pepper, cut into 2 inch long thin strips
3 1/2 cups milk
2/3 cup parmesan cheese, grated
1/4 teaspoon nutmeg
1/2 teaspoon salt
fresh ground pepper
2 1/2 tablespoons butter, softened
9 slices day old Italian bread
2 (6 ounce) jars marinated artichoke hearts, drained
3 scallions, sliced thin
3 cups extra-sharp cheddar cheese, grated

Steps:

  • Heat oil in medium skillet over medium heat.
  • Add peppers, and saute until tender, about 6 minutes, then set aside.
  • Press all liquid out of thawed spinach and set aside.
  • Beat eggs in a large bowl until frothy.
  • Beat in spinach, milk, parmesan cheese, nutmeg, salt, and generous fresh pepper.
  • Grease a 13x9 baking dish with a small amount of the butter.
  • Use the rest of the butter to coat one side of each slice of bread, and then cut bread into 1 inch cubes.
  • You should have 9 cups approximately of cubed bread.
  • Layer half the bread cubes, then half the red pepper strips, 1 jar of artichoke hearts, half the scallions, half the spinach mixture, and half the cheddar cheese.
  • Repeat layers in order, ending with cheddar cheese.
  • Cover dish and refrigerate overnight.
  • Remove from refrigerator and uncover 30 minutes prior to baking.
  • Preheat oven to 350 degrees F.
  • Bake for 1 hour until golden brown on top and firm in center, a knife inserted in center will come out clean.
  • Let rest 15 minutes before serving.

1/2 cup white wine or chicken broth
2 shallots, minced
1 garlic clove, minced
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 cup reduced-fat sour cream
1/2 cup prepared pesto
2 tablespoons all-purpose flour
1 tablespoon reduced-sodium soy sauce
1 teaspoon grated lemon zest
1/2 teaspoon hot pepper sauce
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
3/4 cup roasted sweet red peppers, drained and chopped
2 cups shredded part-skim mozzarella cheese, divided
Assorted crackers and/or breads

Steps:

  • In a large skillet, combine the wine, shallots and garlic. Bring to a boil; cook until liquid is reduced to about 2 tablespoons. Stir in the soup, sour cream, pesto, flour, soy sauce, lemon zest and pepper sauce. Fold in the spinach, artichokes, red peppers and half the cheese., Transfer to a greased 11x7-in. baking dish; sprinkle with remaining cheese. Bake at 400° until set, 30-35 minutes. Serve with crackers and/or breads.

9 ounces frozen creamed spinach, thawed
1/2 cup finely diced red onion
1/2 cup diced roasted red bell pepper
1/3 cup grated Parmesan
2 tablespoons jarred pesto sauce
2 tablespoons mayonnaise
1 teaspoon freshly cracked black pepper
1/2 teaspoon salt
1 package tortilla chips
1 package pita chips

Steps:

  • Preheat a gas or charcoal grill to 350 degrees F.

1/2 cup chopped red peppers
4 cups tightly packed torn fresh spinach
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 eggs, beaten
2 Tbsp. chopped fresh cilantro
3/4 cup KRAFT Shredded Four Cheese

Steps:

  • Heat oven to 375°F.
  • Cook and stir onions and peppers in large skillet sprayed with cooking spray on medium-high heat 5 min. or until crisp-tender. Remove from heat. Stir in spinach.
  • Prepare stuffing as directed on package. Add to spinach mixture along with the eggs and cilantro; mix well.
  • Spoon into 8-inch square pan sprayed with cooking spray; top with cheese.

Here's a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt
freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

Steps:

  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.
  • Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.
  • Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. Slice in half and serve hot.

1 9 ounce box frozen artichoke hearts
2 6 ounce bags fresh baby spinach
8 eggs
2 1/2 cups 2% milk
3/4 teaspoon salt
1/4 teaspoon pepper
7 ounces feta cheese, crumbled
1/3 cup pitted Kalamata olives, chopped
1 oval loaf Italian bread, cut into 1-inch cubes (about 1 lb)

Steps:

  • 1. Spray a 13 x 9-inch baking dish with nonstick cooking spray. Heat oil in a large saute pan over medium-high heat. Add artichoke hearts; cook 3 to 5 minutes or until thawed and browned. Stir in spinach; cook until wilted, about 1 to 2 minutes. Remove to a mesh strainer and gently press to release some liquid from spinach. Set vegetables aside. 2. In a large bowl, whisk eggs. Whisk in milk, salt and pepper until combined. Stir in feta, olives and cooked vegetables. Gently stir in bread cubes, tossing to coat evenly in egg mixture. Transfer to baking dish, cover with aluminum foil and refrigerate overnight. 3. Remove strata from refrigerator 30 minutes before baking. Heat oven to 350 degrees. Bake, covered, for 25 minutes. 1 can (14 oz) quartered artichoke hearts, drained, coarsely chopped (1 1/2 cups)
1 box (9 oz) frozen spinach, thawed, squeezed to drain
8 cups cubed (1 inch) rustic round bread (about 1 lb)
1 1/2 cups shredded Monterey Jack cheese (6 oz)
6 eggs
2 1/2 cups milk
1/2 teaspoon ground mustard
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Parmesan cheese (2 oz)

Steps:

  • In 10-inch nonstick skillet, heat oil over medium heat. Add bell pepper, onion and garlic; cook about 6 minutes, stirring occasionally, until tender. Remove from heat. Stir in artichokes and spinach; set aside.
