An omelet is one of the best things you can have early in the morning. There are lots of ways you can change the regular recipe and adapt it according to your mood and taste. This omelet has cream cheese and spinach, is ready in just 10 minutes and will for sure satisfy you in a hungry morning!

2 eggs
salt
1 tablespoon vegetable oil
4 ounces of spinach, chopped
1 garlic clove, chopped
1 tablespoon cream cheese

Steps:

  • Start by cooking the omelet. So, take a large bowl, scramble the eggs and season them with a pinch of salt.
  • Add vegetable oil in a skillet, add the eggs and cook them until the omelet reaches the right thickness (preferably 1-2 minutes).
  • Heat another skillet and begin cooking the spinach. Crush garlic to add more taste to it.
  • Use a knife and spread cream cheese on half of the omelet's surface. Add spinach and close your omelet with the remaining half.

4 large eggs
1/4 cup whole milk
1 bunch fresh spinach
1 small yellow onions or 1 small shallot
1/4-1/2 teaspoon ground nutmeg
4 tablespoons butter
4 ounces cream cheese, at room temp
1 tablespoon fresh lemon juice
1/2 teaspoon fresh lemon zest (optional)
salt and pepper

Steps:

  • Wash spinach leaves well-remove stems and slice leaves very thin; set aside.
  • Whip the cream cheese with lemon juice and zest if using; set aside.
  • Dice onion or shallot; set aside.
  • In a large skillet over medium heat melt 2 tbsp of the butter.
  • Add the spinach and onion and sauté for 3-5 minutes. You want the onion slightly translucent and the spinach wilted. Remove from heat and pour into a bowl; set aside.
  • Melt the remaining 1-2 tbsp butter in the same pan over medium heat.
  • Whip the eggs well with the whole milk and pour into the hot pan.
  • Allow eggs to cook slowly, allowing eggs to almost set completely.
  • Pour 1/2 the cheese mixture over 1/2 of the omelette, add the spinach onion mixture; sprinkle on the nutmeg, salt and pepper, and the remaining cheese.
  • Fold the omelette over, turn off heat and let stand for 3 minutes.
  • Serve.

1 tbsp butter
2 eggs
dash Worstershire sauce
dash pepper
1 tbsp water
2 cups spinach (chopped if large leaves)
1/4 onion, chopped small
1 clove garlic, crushed
1 oz cream cheese

Steps:

  • Makes one serving. Increase appropriately for more servings!
  • Mix the eggs, water, Worstershire, and pepper, set aside.
  • Heat your pan with 1/2 tbsp of the butter, and sautée the onions for about 5 minutes. They should be starting to turn clear. Add the garlic, stir a minute more, then add the spinach. The spinach should release water after a minute or two. Cook until most of the water has evaporated. Remove from pan and set aside.
  • Melt the remaining 1/2 tbsp of butter, and add the egg mixture. Push up the edges as they form to let the still-liquid egg get to the outside. When the top is almost set, put the spinach mix on. Break up the cream cheese with two knives, and put little dabs all over the filling.
  • Fold the omelette in half, let it cook another 30 seconds or so, then serve!
  • My kids and I all love this one. My 10yo doesn't even complain about the onions!

½ cup fresh cilantro leaves
salt and pepper to taste
3 tablespoons butter

Steps:

  • Mix the cream cheese with the cilantro in a bowl, adding salt and pepper to taste.
  • Heat one-quarter of the butter in a well-seasoned omelet pan or 8 inch non-stick frying pan over medium-high heat. When the butter is hot and bubbling, swirl it around in the pan.
  • Just before the butter begins to brown, beat 2 of the eggs and pour into pan. Lower the heat.
  • After 10 seconds or so, the omelet will coagulate. Push the omelet to one side of the pan with a spoon or spatula, and let the raw egg run over the cleared skillet. Repeat this one more time, then take the skillet off the heat.
  • Dab one quarter of the herbed cream cheese along the middle of the omelet from one side to the other. Season the omelet with additional salt and pepper to taste. If it has not completely set, place the pan over medium heat for a half minute longer. When the omelet is set, slide it from the pan onto a plate so that the omelet rolls up and the herbed cream cheese runs along the length of the roll. Serve it right away. Make three more omelets the same way, making sure the pan and butter get good and hot before adding the beaten eggs. Serve each one as soon as it is cooked.

1 tablespoon unsalted butter
½ cup sliced fresh mushrooms
4 cloves garlic, minced
¼ cup heavy whipping cream
4 cups baby spinach
1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
¾ cup reserved pasta water

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
  • Meanwhile, melt butter in a heavy skillet over medium-high heat. Add sliced mushrooms and sauté until softened, about 3 minutes. Add garlic and sauté until fragrant, about 30 seconds. Reduce heat, and pour in cream.
  • Scoop out 3/4 cup of pasta cooking water and set aside. Place spinach in the bottom of a colander and drain the gnocchi over the spinach to wilt it.
  • Stir cheese into the skillet and add reserved cooking water; keep stirring until cheese is melted.
  • Add gnocchi and wilted spinach to the skillet and stir until well combined. Serve immediately.

1 tablespoon butter, divided
1 tablespoon all-purpose flour
3 to 4 tablespoons milk, divided

Steps:

  • In a skillet, saute spinach in 1/2 tablespoon butter for 1 minute, stirring constantly. In a small bowl, stir flour, 2-3 tablespoons milk and salt until smooth. Add to spinach; cook and stir until thickened, about 1 minute. Set aside and keep warm. , In another bowl, whisk eggs, salt, pepper and remaining milk. In another skillet over medium heat, cook egg mixture in remaining butter. As the eggs set, lift edges, letting uncooked portion flow underneath.
