Steps:
- Preheat the oven to broil.
- In a medium bowl, whisk together the eggs, milk, salt and pepper until smooth. Fold in the cheese and tomatoes and set aside.
- In a 9-inch, oven-safe nonstick frying pan over medium heat, melt the butter. Add the onion and saute until softened, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Pour the egg mixture over the spinach, and cook until almost set, 2 to 4 minutes.
- Transfer the pan to the oven and broil until golden brown on top, 5 to 7 minutes. Remove from the oven and turn out onto a serving plate.

- Heat the spinach in a saucepan with 1/2 cup of water, until completely thawed. Strain the spinach, reserving half the amount of liquid.
- Crumble the matzo into a medium-size mixing bowl and pour the spinach and the remaining liquid over them. Mix thoroughly until the matzo are softened. Add the Parmesan, eggs, salt, nutmeg and pepper.
- Heat the margarine in a 12 inch skillet and add the spinach mixture. Cook on medium heat, uncovered for 5 minutes on each side. Sprinkle with grated Parmesan and serve immediately.

- Heat the spinach in a saucepan with 1/2 cup water, until completely thawed.
- Then drain and wring spinach dry using a clean kitchen towel.
- Sauté the onions & mushrooms in 2 Tablespoons of margarine until softened, about 5-8 minutes, stirring occasionally.
- Crumble matzoh crackers into a medium size bowl, pour the mushroom mixture, spinach and half the amount of water.
- Mix thoroughly until the matzoh crackers are softened, if needed add a little more of the remaining hot water.
- Add the Parmesan, eggs, salt nutmeg and pepper.
- Heat 2 Tablespoons of the margarine in a 12 inch skillet and add the spinach mixture.
- Cook on medium heat, uncovered 4 minutes on each side.
- Sprinkle with grated Parmesan.
- Serve immediately.

- Slice onions and press garlic. In a wok or skillet sprayed with cooking spray, saute onions and garlic.
- Once translucent add sliced mushrooms and spinach. Cook until mushrooms reduce in size.
- In another skillet (capable of going in the oven) place Morningstar Farms crumble while still frozen and season to taste. Cook over medium heat until mostly thawed, then add veg mixture.
- Once completely thawed, ensure mixture is spread evenly across pan and pour egg beaters evenly over mixture, reduce heat to approx 3 on an electric stove.
- Continue cooking until egg begins to solidify, feel free to ease egg on the sides of the pan away and allow the free flowing egg to flow underneath.
- When mixture is just about firm, place under broiler to complete the process, once done remove from oven and place green onion, tomatoe on top. Dust with bread crumbs and place back under broiler just until egg starts to brown. Remove and enjoy.
