Spinach and Shrimp Miso Soup image

This quick simple-to-make soup is clock full of shrimp and spinach. The only time consuming part of making this is peeling all the shrimp (which isn't included in the prep time but takes about 30 - 45 minutes). Recipe adapted from Bon Appetit (September 2004)

Number Of Ingredients 10

6 cups chicken broth or 6 cups vegetable broth (I used the lower sodium broth)
1/4 cup soy sauce (I used the low sodium soy sauce)
2 tablespoons mirin
1 tablespoon ginger, peeled and minced
3 carrots, shredded
5 tablespoons miso
2 lbs small shrimp, peeled
4 cups spinach, trimmed and chopped roughly
1 shallots, chopped or 1/2 cup green onion, sliced
1/2-1 teaspoon chili oil

Steps:

  • In a large pot, place first four ingredients (broth- ginger) and bring to a boil over medium-high heat.
  • Add carrots and reduce heat to low and simmer for 5 minutes.
  • Place miso in a bowl and whisk in 1/2 cup of the hot broth.
  • Return all to pan.
  • Return to a boil and add shrimp, spinach and shallot (or green onion).
  • Simmer for 5 minutes or until shrimp is pink.
  • Stir in chili oil and remove from heat.

2 tablespoons vegetable oil
1 onion, chopped
3 green onions, chopped
1 tablespoon chopped garlic
1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
1 whole scotch bonnet peppers or 1 whole jalapeno pepper
4 cups chicken broth
1 bunch spinach, cleaned and sliced
1/2 cup coconut milk
8 ounces peeled shrimp
1 tablespoon lime juice, to taste
salt & freshly ground black pepper

Steps:

  • Heat veg oil in large soup pot on med-high heat.
  • Add onions and saute for 3 mins or til softened slightly.
  • Add green onions,garlic,thyme,allspice and hot pepper of choice.
  • Saute for 1 more minute.
  • Add broth and bring to boil.
  • Add spinach and coconut milk.
  • Reduce heat and simmer for 10 to 15 mins or til spinach is limp.
  • Remove hot pepper and discard.
  • Add shrimp and cook for another 2 minutes or til pink and curled.
  • Add lime juice, season well with salt and pepper.

1 1/2 cucumbers (about 1 pound), peeled, seeded, and cut into 1-inch pieces
2 containers (7 ounces each) plain low-fat Greek yogurt (2 percent)
1 3/4 cups low-sodium store-bought chicken broth
2 scallions (white and pale-green parts cut crosswise into 1/2-inch pieces, dark-green parts julienned)
Coarse salt and freshly ground pepper
1 tablespoon olive oil
2 cloves garlic, minced
5 ounces baby spinach
1 tablespoon finely chopped plus 1 teaspoon red onion
1 tablespoon plus 1 teaspoon, freshly squeezed lemon juice
1 pound rock shrimp, rinsed well

Steps:

  • Stir together cucumbers, half the yogurt, 3/4 cup broth, the pieces of scallions, and 1 teaspoon salt; season with pepper. Heat oil in a large skillet over medium heat until hot but not smoking. Add garlic; cook until just golden, about 1 minute. Add spinach; cook, stirring, until wilted, about 3 minutes. Stir into yogurt mixture.
  • Working in batches, puree mixture in a food processor. Transfer to a large bowl, and stir in remaining yogurt, the onion, and lemon juice. Refrigerate, covered, until cold, about 1 hour.
  • Meanwhile, put remaining cup broth, 3/4 cup water, and 1/2 teaspoon salt in a medium saucepan; season with pepper. Bring to a boil. Add the shrimp; cook until pink and cooked through, 2 to 3 minutes. Drain. Refrigerate the shrimp, covered, until cold, about 1 hour. Divide the soup and shrimp among 4 bowls. Garnish with julienned scallions.

This spinach and shrimp risotto fills the house with a pungent, lemony aroma, and is a great summery dish.

2 tablespoons olive oil
2 tablespoons butter
1 medium shallot, minced
1 clove garlic, minced
2 cups Arborio rice
½ cup white wine
3 ½ cups hot chicken broth
½ pound large shrimp, peeled and deveined
salt and ground black pepper to taste
2 teaspoons olive oil, or as needed
¾ cup frozen chopped spinach, thawed and drained
¼ cup freshly grated Parmesan cheese, or more to taste
4 slices prosciutto, diced
1 small bunch fresh parsley, chopped
½ medium lemon, zested

Steps:

  • Heat 2 tablespoons olive oil and butter in a 12- to 14-inch skillet over medium heat. Add shallot and cook until soft, 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute. Add rice; cook and stir with a wooden spoon until toasted and opaque, about 4 minutes.
  • Add wine and let it reduce for 2 minutes. Add one ladle of chicken broth; cook and stir until it's all absorbed. Continue adding one ladle at a time, cooking and stirring until broth is absorbed before adding the next ladle. When finished, rice will be creamy and tender yet firm to the bite. Stirring in the broth should take 15 to 20 minutes in all.
  • Meanwhile, season shrimp with salt and pepper.
  • Heat remaining olive oil in a skillet; add shrimp and saute just until they turn pink, 2 to 3 minutes; they will not be fully cooked. Remove from the heat.
  • When the risotto is finished, stir in shrimp, spinach, 1/4 cup Parmesan cheese, prosciutto, parsley, and lemon zest. Season with salt and pepper and cook until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Let rest for 5 minutes. Serve with more Parmesan cheese.

1 pound large shrimp
4 cups cooked white rice
1/2 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
4 cups chicken broth (see recipe)
1 1/2 teaspoons salt
Freshly ground pepper to taste
4 cups stemmed fresh spinach leaves, finely chopped
12 cloves roasted garlic, peeled

Steps:

  • Bring a large pot of water to a boil. Reduce heat so the water simmers. Add the shrimp and cook until they turn pink, about 3 minutes. Drain, peel and devein the shrimp. Cut them in half, crosswise and set aside.
  • Place the rice in a mixing bowl and toss with the lemon rind and lemon juice. Pour the chicken broth in a saucepan and bring to a simmer. Season with the salt and pepper to taste.
  • Mound the rice mixture in the center of 4 soup plates. Top with the chopped spinach. Place the shrimp over the spinach. Divide the roasted garlic among the bowls and ladle the broth around the rice. Serve immediately.
