White beans, Italian sausage, spinach and tomatoes make a flavorful and surprisingly sophisticated casserole. Casseroles might have a humble reputation, but this one is special enough to serve at your next dinner party.

1 lb bulk mild Italian sausage
1 medium onion, chopped
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 tablespoons Gold Medal™ all-purpose flour
1 bag (5 oz) fresh baby spinach
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
3/4 cup Progresso™ plain panko crispy bread crumbs

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add sausage; cook 5 to 7 minutes, stirring frequently, until no longer pink. Add onion, garlic, salt, black pepper and red pepper flakes; continue to cook 3 to 4 minutes, stirring frequently, until vegetables have softened slightly. Sprinkle flour over top, and cook 2 minutes, stirring constantly.
  • Add half of the spinach to sausage mixture; cook and stir about 1 minute or until wilted. Add remaining half of the spinach; continue to cook and stir about 1 minute or until wilted. Add tomatoes and beans; cook about 1 minute, stirring and scraping bottom of pan, until combined. Remove from heat; transfer to baking dish.
  • In small bowl, mix bread crumbs and remaining 2 tablespoons oil. Sprinkle over top. Bake 25 to 30 minutes or until bubbly around edges and brown on top.

2 teaspoons olive oil
6 ounces bow tie pasta, cooked and drained
1 (15 ounce) can white beans, rinsed and drained
1 medium zucchini, sliced into thin rounds
½ cup vegetable broth
½ pint cherry tomatoes, halved
1 (6 ounce) package fresh spinach
¼ cup toasted pine nuts

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Heat a dry large skillet over medium-low heat and toast pine nuts, stirring frequently, until pine nuts are golden in spots, about 3 minutes. Remove and set aside.
  • Heat 2 teaspoons olive oil in the same skillet on medium-high heat. Saute the smoked sausage for 5 minutes, or until golden brown, stirring occasionally. Remove smoked sausage and set aside.
  • Add the zucchini and vegetable broth to the skillet and simmer until zucchini are soft, about 5 minutes. Add spinach, white beans and cherry tomatoes; continue to simmer for 2 minutes until spinach is wilted and tomatoes are soft.
  • Turn the heat to low; add the pasta and smoked sausage to the vegetables mixing well to combine and cook for 30 seconds until heated through.
  • Garnish with toasted pine nuts and serve warm.

1 teaspoon minced garlic
1½ cups low sodium chicken broth
2 (15 ounce) cans cannellini beans, rinsed and drained
15 ounces petite diced tomatoes (fire-roasted diced tomatoes work very well too!)
1 teaspoon Italian seasoning
¼ teaspoon crushed red pepper flakes
6 ounces fresh baby spinach
fresh ground black pepper, (to taste)
¼ cup grated Parmesan, (or to taste)

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, stirring, until nicely browned. Add garlic and cook for just another minute or two until garlic is fragrant. Add chicken broth, cannellini beans, diced tomatoes, Italian seasoning, and crushed red pepper. Bring to a boil, then reduce heat to medium and let it simmer, uncovered for 15 minutes to allow broth to reduce a little.
  • Stir in fresh baby spinach and remove from heat. Continue to stir until spinach is wilted. Garnish with fresh ground black pepper and Parmesan. Ladle into bowls and serve with a hunk of crusty bread.

1 lb hot Italian sausage links or 1 lb sweet Italian sausage link
1 tablespoon olive oil
2 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
1 (16 ounce) can cannellini beans, drained
1/2 small onion, finely diced
3/4 cup heavy cream
1/2 cup freshly grated parmesan cheese, divided
1 teaspoon lemon rind, freshly grated
1 tablespoon fresh lemon juice
1/4 teaspoon nutmeg
salt and pepper
1/3 cup dry breadcrumbs
1 garlic clove, minced
4 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • Brown sausages in oil till done, drain and slice into rounds.
  • In large bowl, combine sausage, spinach, beans, onion, cream, 1/4 cup of the Parmesan cheese, lemon peel and juice, nutmeg, and salt and pepper.
  • Turn mixture into a greased 2 qt casserole.
  • In small bowl, mix bread crumbs, remaining 1/4 cup cheese, garlic and melted butter.
  • Sprinkle on top of casserole.
  • Bake uncovered 35 minutes, or until heated through.

  • Add the onion, carrots, celery, and garlic. Cook for 4-6 minutes until onion begins to become translucent.
  • Add the white beans, diced tomatoes with juice, chicken broth, bay leaf, and oregano. Bring to a simmer and simmer covered for 20 minutes.
  • Add the spinach and stir until wilted. Taste and season with salt and pepper.

1 tablespoon olive oil
1 pound fully cooked smoked sausage, cut into 1/4-inch slices

1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained

To make the soup even heartier, we have added pasta and turkey sausage. Use your favorite smoked sausage if you wish, but you may have a bit more grease in the pan than if you used turkey. Brown the sausage and onions, then add garlic, rosemary, seasonings, beans and chicken stock. Add uncooked pasta and let it them get tender, then stir in swiss chard.   • Heat oil in a large soup pot or Dutch oven over medium heat. Add shallot or onion and carrots then saute until crisp tender, 5-7 minutes, placing a lid on top for the last few minutes to help speed along the softening process. Turn heat up slightly then add kielbasa and continuing sauting until sausage starts turning golden brown, 5 minutes. Add garlic then saute until extremely fragrant and golden brown, 1-2 minutes, being careful not to burn the garlic.
  • Add a glug of chicken broth then use a spatula or wooden spoon to scrape up the caramelized bits from the bottom of the pot. Add remaining chicken broth plus beans, bay leaf, and parmesan cheese rind then turn heat up to high to bring soup to a bubble. Turn heat down to medium-low then simmer for 15 minutes.
  • Add fresh spinach and grated parmesan cheese then stir and simmer until spinach is wilted, 1-2 minutes. Remove bay leaves (you can leave parmesan cheese rind in to continue to flavor the soup) then scoop into bowls and serve.
