8 oz cream cheese, softened
½ cup spinach, cooked, drained
2 cups shredded mozzarella cheese
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
2 cups flour
4 eggs, beaten
2 cups seasoned breadcrumb
canola oil, for frying
marinara sauce, for dipping

Steps:

  • In a medium bowl, combine the cream cheese, spinach, mozzarella, salt, pepper, and garlic powder, stirring until thoroughly mixed.
  • Transfer the mixture to a square baking pan lined with parchment paper and spread the mixture evenly in the dish.
  • Freeze for 30 minutes.
  • Invert the frozen spinach dip onto a cutting board and remove the parchment paper.
  • Slice the block into 1-centimeter strips, then slice the strips in half into sticks.
  • Place the flour, eggs, and breadcrumbs into three separate bowls. Dip the spinach dip sticks into the flour, then the eggs, then the breadcrumbs, then back into the eggs, and finally back into the breadcrumbs. Set the breaded sticks aside on a plate.
  • Heat oil in a pot over medium-high heat. Fry the breaded sticks for about 30 seconds to a minute, until golden brown.
  • Cool, then serve with marinara sauce!

3 tablespoons all-purpose flour
2 eggs
1 tablespoon water
1 cup dry bread crumbs
2-1/2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
1/8 teaspoon pepper
12 sticks string cheese
1 tablespoon butter, melted
1 cup marinara or spaghetti sauce, heated

Steps:

  • Place flour in a shallow bowl. In another shallow bowl, beat eggs and water. In a third shallow bowl, combine the bread crumbs, Italian seasoning, garlic powder and pepper. Coat cheese sticks with flour, then dip in egg mixture and coat with bread crumb mixture. Repeat egg and bread crumb coatings. Cover and freeze for at least 2 hours or overnight. , Place on a parchment lined baking sheet; spray with cooking spray. Bake, uncovered, at 400° for 6-8 minutes or until heated through. Allow to stand for 3-5 minutes before serving. Serve with marinara or spaghetti sauce for dipping.

20 oz frozen spinach
6 oz cream cheese, cubed
1 ¼ cups shredded mozzarella cheese, divided
5 tablespoons grated parmesan cheese, divided
1 tablespoon Tasty Zesty Spice Blend, plus more for topping
½ teaspoon kosher salt
chip, or carrots or celery sticks, for serving

Steps:

  • In a medium microwave-safe bowl, microwave the spinach until completely defrosted, about 5 minutes. Remove from the microwave and let sit until cool enough to handle, about 5 minutes.
  • Transfer the spinach to a surface lined with 4 paper towels. Gather the towels around the spinach and position over the bowl. Wring out to remove all of the moisture. Discard any excess liquid that accumulates in the bottom of the bowl.
  • Return the spinach to the bowl and add the cream cheese, 1 cup (100 g) shredded mozzarella, 4 tablespoons Parmesan, the zesty spice blend, and salt.
  • Microwave for 4 minutes, stirring halfway, until the cream cheese is completely softened and the mozzarella is melted. Stir well to combine, then microwave for 30 seconds more to melt any remaining cream cheese clumps.
  • Top with remaining ¼ cup mozzarella and tablespoon of Parmesan. Return to the microwave for 1½-2 minutes, until the mozzarella on top is melted. Sprinkle with more zesty spice blend.
  • Serve with chips, carrots, or celery.
  • Enjoy!

My SIL shared this with me when she was visiting from the frigid North. It was a HUGE hit at the pool party and a snap to prepare. This is a tasty appetizer but would also be a good lunch or light dinner recipe.

1 prepared 12-inch pizza crust (Boboli)
1 lb deli spinach dip, with lots of spinach
1 -1 1/2 cup mozzarella cheese
1 (4 ounce) can water chestnuts (if not already in dip)

Steps:

  • Preheat oven to 425 degrees.
  • Place prepared crust on pizza pan.
  • Spread spinach dip over entire crust.
  • Sprinkle with water chestnuts if the spinach dip does not already contain them.
  • If you can't find a good spinach dip in your local grocery deli there are many fine recipes here on Zaar.
  • Sprinkle with Mozzarella cheese.
  • Bake 10- 12 minutes until cheese and dip are bubbly and slightly browned.
  • Cool a few minutes before cutting.
  • Cut into wedges for lunch or dinner or cut into squares to use as an appetizer.
