8 ounces penne
2 tablespoons salt
4 ounces fresh broccoli florets
1 tablespoon salt
2 ounces olive oil
1 clove garlic, minced
3 ounces sliced black olives
Salt and ground black pepper

Steps:

For the pasta: Bring 8 cups water to a boil in a saucepan over high heat. Add the salt and penne. Bring the water back to a near boil, stirring often. Cook to al dente, 5 to 7 minutes; the penne will be firm but not hard.
For the special blanched broccoli: Bring 4 cups water to a boil in a saucepan over high heat. Add the salt and broccoli. Bring the water back to a near boil; then remove the broccoli, drain and immerse in cold water until cool to the touch. Drain and set aside.
For Emilio's special: Heat a 10-inch saute pan over low to medium heat. Add the oil and garlic and saute until the garlic is lightly opaque. Add the broccoli and saute for 30 seconds. Add about 1/4 cup water and the olives. Add salt and black pepper to taste. Continue sauteing until the water has evaporated. Pour the sauteed mixture over the cooked penne.

People used to travel miles and miles just to get salsa and chips to go from Don Emilio's Restaurant in Larchmont, NY. No matter how hard anyone tried, there was no getting the recipe. Then one day at a party in work, a Columbian girl brought in salsa that her husband had made...and it was identical to Don Emilio's. Aaaahhhhh....amazing salsa whenever you want it. And you'll want it often. And you thought chocolate was addictive???? (Check out my guacamole recipe, too)

Ingredients

1 (28 ounce) can redpack plain crushed tomatoes
1 large tomatoes, seeded and chopped
2 medium onions, chopped fine
2 fresh jalapeno peppers (or the equivalent of canned peppers)
1/4 cup white vinegar
2 teaspoons sea salt
1/4 cup fresh cilantro, chopped
additional jalapeno peppers or 3 -5 dashes hot sauce (depending on how much fire you like in your salsa) (optional)

Steps:

Combine onion, jalapeno pepper, salt and white vinegar in a glass or ceramic bowl.
Let this marinate for 1/2 hour.
Add remaining ingredients, mix and chilll until ready to serve-- at least four hours.

This is one of my favorite recipes I first saw it in TA truck stops when I used to travel and then started making my own bigger version. French Fry Melts can be used for lunch, dinner or snacks.

Ingredients

1 (1 lb) package sliced bacon
1 (32 ounce) bag of seasoned French fries
1 (8 ounce) bag of shredded cheese

Steps:

Cut bacon into pieces and place in skillet for 5-10 min on medium heat until crispy (not burned/black).
Preheat oven to 350°F.
Spray cookie sheet with non-stick spray.
Pour french fries on pan.
Place pan in oven in on middle rack.
Bake for 15-20 min until done (to your taste).
Grab spatula and separate fries into 3 plates.
Crumble bacon and cheese over each plate of fries.
Serve with your favorite dipping sauce (recommend ranch).
