Parmesan Crusted Crushed Turnips are a delicious, low-carb alternative to crushed potatoes!

Number Of Ingredients 7

12 small to medium turnips (peeled)
Salt
2 tablespoons olive oil
3 cloves garlic (minced)
Freshly ground black pepper
1 cup freshly grated Parmesan cheese (or as needed)
Chopped fresh chives

Steps:

  • Place peeled turnips in a pot of salted water to cover. Bring to a boil. Cook 20 to 30 minutes or until turnips can be pierced easily with a paring knife. Drain. Let cool slightly.
  • Preheat oven to 375 degrees.
  • Place the turnips on a clean kitchen towel or double layer of paper towels. Gently press each one down until it's approximately 1/2-inch high. Let them drain for 15 minutes then carefully flip them over onto a dry section of the towel or onto fresh paper towels so the other side drains and dries a bit.
  • Combine garlic, olive oil and salt and black pepper, to taste in a small bowl.
  • Line a baking sheet with parchment paper or nonstick aluminum foil. Place the flattened turnips on the lined baking sheet. Brush each turnip with a little of the olive oil and garlic combination. Sprinkle Parmesan cheese over each turnip, gently pressing it down.
  • Carefully and quickly flip each turnip over. Repeat with the remaining olive oil and garlic combination and cheese.
  • Bake for 20 to 25 minutes. Flip each turnip and bake an additional 15 minutes. Garnish with chopped fresh chives and serve.

2 pounds turnips (about 5 medium)
1 cup plus 2 tablespoons heavy cream
1 tablespoon all-purpose flour
2 teaspoons chopped fresh thyme
1 clove garlic, finely grated
1/4 teaspoon finely grated lemon zest
1/4 teaspoon freshly grated nutmeg
Large pinch of ground cinnamon
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1 cup fresh breadcrumbs
3 tablespoons sliced almonds, roughly chopped
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. Peel the turnips and slice 1/8 inch thick (use a mandoline if you have one). Whisk the cream, flour, 1 teaspoon thyme, the garlic, lemon zest, nutmeg, cinnamon, 1 teaspoon salt, and pepper to taste in a large, deep skillet. Add the turnips and bring to a simmer over medium heat; cover and cook until the turnips are softened, about 3 minutes.
  • Stir the turnip-cream mixture and spread evenly in a 2-quart baking dish. Cover with aluminum foil and bake until the turnips are very tender, 35 to 40 minutes. Uncover and continue baking until the cream mixture is slightly thickened and the top is golden, about 10 more minutes.
  • Meanwhile, make the topping: Melt the butter in a large skillet over medium heat. Add the breadcrumbs, almonds and the remaining 1 teaspoon thyme and cook, stirring, until the breadcrumbs are toasted, about 4 minutes. Stir in the parsley and a pinch of salt. Remove the gratin from the oven and sprinkle with the breadcrumb topping.

  • Place the turnips in a large pot with enough water to cover by 2 inches. Bring to a boil over high heat, then reduce the heat to low and simmer until fork-tender, about 25 minutes. Drain thoroughly, until completely dry.

This recipe has been a family favorite for years. It has been passed down from my Grandmother and has since been requested every Thanksgiving holiday.

1 large turnip, peeled and diced
2 tablespoons white sugar
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
salt and ground black pepper to taste

Steps:

  • Place the turnip in a saucepan with enough water to cover the cubes; place the saucepan over medium heat; bring to a boil; cover and reduce heat to medium-low. Simmer 5 minutes; drain water and return turnip to saucepan.
  • Return the saucepan to medium heat. Pour enough fresh water over the turnips to cover; add the sugar. Bring to a boil; cover, reduce heat to medium-low and simmer until turnip pieces are fork tender; drain.
  • Melt the butter in a separate saucepan over medium-high heat. Stir the flour into the butter to make a roux. Whisk in the milk until the mixture thickens. Add the turnips and stir gently to coat. Season with salt and pepper.

  • Peel turnips, then halve horizontally and quarter halves. Arrange turnips in 1 layer in a 12-inch heavy skillet and add enough water (about 1 1/2 cups) to reach halfway up turnips. 2 cups heavy cream
3 cloves garlic, smashed
1 bundle thyme
Pinch of cayenne
Kosher salt
1/2 stick butter, plus extra for baking dish
2 pounds turnips, peeled and sliced very thin (mandoline works best)
1 1/2 cups grated parmigiano

Steps:

  • Special Equipment: mandolin, 11 by 7-inch baking dish
  • Preheat the oven to 375 degrees F.
  • Put the cream, garlic, thyme and cayenne in a saucepan and season it with salt. Taste to make sure it is adequately seasoned. Bring the cream to a boil and then turn off the heat. Let the mixture steep for 15 to 20 minutes.
  • Butter the baking dish and layer in 1/3 of the sliced turnips. Sprinkle 1/3 of the grated cheese over the turnips and dot with 1/3 of the butter. Remove the thyme and garlic from the cream and pour 1/3 of the cream over the turnips. Repeat this process 2 more times until all of the ingredients are used up.
  • Cover the dish with foil, place on a baking sheet and bake in the preheated oven for 35 to 40 minutes. Remove the foil and bake for another 20 minutes, until golden. When done a fork should slide in and out of the center of the dish easily.
  • For easier serving, let the dish rest 10 to 12 minutes before serving.
  • Who knew a turnip could be soooooooooooooo good!

1 teaspoon cumin seeds

1/4 teaspoon ground turmeric

  • 1. Heat the oil in a large nonstick wok or saucepan over medium-high heat, and cook the ginger, stirring, until golden, 1 minute. Add the cumin seeds they should sizzle upon contact with the hot oil. Quickly add the green chili peppers and onion and cook, stirring, until golden, 2 to 4 minutes.2. Add the turnips, turmeric, red pepper flakes, and salt, and cook, stirring, about 4 minutes. Then add the sugar, cover the pan, reduce the heat to medium-low and cook 5 to 7 minutes. Steps:

  • Place the turnips, water and sugar in a large saucepan. Bring to a boil. Reduce heat; cover and simmer, for 5-8 minutes or until tender. Drain and set aside. , In another saucepan, melt butter; stir in flour and salt if desired until smooth. Gradually add milk; bring to a boil. 3 pounds small or medium turnips, trimmed, peeled, cut into 1"-thick wedges
2 garlic cloves, finely chopped
1/2 cup panko (Japanese breadcrumbs)
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 lemon
2 cups parsley leaves with tender stems
Grated Parmesan (for serving)
Kosher salt

Steps:

  • Cook turnips in a large pot of boiling salted water until just tender, about 5 minutes. Transfer turnips to a bowl of ice water to stop the cooking. Drain and pat dry. Transfer to a large bowl.
  • Cook garlic, panko, and 3 Tbsp. oil in a small skillet over medium heat, stirring occasionally, until panko is golden brown, about 4 minutes. Remove from heat and season with salt and pepper.
  • Zest half of lemon over turnips, then cut lemon in half and squeeze juice over. Add parsley and half of the breadcrumbs and drizzle with oil. Season with salt; toss well.
  • Transfer turnips to a platter and top with Parmesan and remaining breadcrumbs.

  • Breadcrumbs can be toasted 1 day ahead; store airtight at room temperature. Turnips can be cooked 8 hours ahead. Let cool, then cover and chill. Bring to room temperature before serving.
