SPINACH NESTS
These beautiful spinach nests are made easy by wilting the spinach first, then forming into small nests before baking with a center of creamy Philadelphia Cream Cheese.

Steps:
- Preheat oven to 300°F. Place half of the spinach in water and salt in large saucepan; cover. Cook on medium heat 5 to 8 min. or until spinach is wilted, stirring often. Remove spinach with tongs; drain in colander. Repeat with remaining spinach. Cool slightly.
- Mix spinach and onion; divide mixture into 6 portions. Squeeze out excess water. Using your hands, form little "nests", making small indentation in center. Place nests in baking dish; place 1 cream cheese piece into center of each nest.
- Bake 10 min. or until heated through.

SPAGHETTI NESTS

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter the bottom and sides of four 4-inch-diameter springform pans.
- For the pasta: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta and place in a large bowl. Add the spinach, cheese, oil and 1/2 teaspoon salt. Toss well until the spinach is wilted. Set aside to cool.
- For assembly: Beat the Parmesan, milk, salt and egg together in a large bowl until smooth. Pour the sauce over the spaghetti mixture until well combined. Twirl 1/2 cupfuls of the spaghetti mixture around tongs or a large fork and transfer to the prepared pans. Make an indentation in the middle of each nest of pasta and drizzle with olive oil. Bake 15 minutes. Let cool 10 minutes before removing the sides from the pans. Remove the bottoms of the pans from the nests using a thin metal spatula.
- Spoon 1/2 cup of the marinara sauce on each of 4 serving plates. Place the spaghetti nests on the sauce. Place 3 balls of the mozzarella in each nest and serve.

ROBIN'S NESTS
Tasty cookies made with walnuts and fondant. The title suggests what cookies will look like when finished, little nests with eggs in them...cute! Got the recipe from my aunt, don't know where it originated before that!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg yolks then stir in the vanilla. Stir in the flour and mix well.
- In a shallow dish, such as a pie pan, beat egg whites until foamy. Spread walnuts on a plate or waxed paper.
- Roll 1 teaspoon of dough into a ball; roll in egg whites then in walnuts. Place 2 inches apart on a cookie sheet. Make a depression in each ball with your thumb.
- Bake in preheated oven for 12 minutes.
- Meanwhile, cream the remaining 2 tablespoons butter with corn syrup, blue and green food coloring and almond extract. Gradually stir in confectioners' sugar. Roll 1/2 teaspoon of fondant mixture into egg-shaped balls. Place fondant eggs into hollows of baked cookies.

Ready, Set, Cook! Special Edition Contest Entry: When we saw the simply potatoes contest we immediately thought of making potato nests. They are delicious and simple to make, the spinach and the goat cheese gives them a nice creaminess. Enjoy!

Steps:
- Preheat oven at 400°F.
- In a medium bowl, mix Simply Potatoes Hashbrowns with 4 tablespoons of olive oil, salt and lemon pepper. Mix well making sure the potatoes are coated with oil.
- Spray a non-stick 12 cup- muffin tin with cooking spray.
- Carefully arrange hashbrowns evenly in each muffin cup, pressing the sides and forming a small well in the center.
- Bake at 400F for 20-25 minutes, until they start to brown lightly. Set aside. Reset the over to 375°F.
- In the mean time, squeeze water out of t he spinach and sauté in remaining 1 tbsp of olive oil, until most of the liquid has evaporated, about 6-8 minutes. Add sundried tomatoes, a pinch of salt and a pinch of garlic powder. Cook at medium heat for an additional 2 minutes. Set aside.
- In a small bowl, combine goat cheese and milk and mix well until smooth and creamy.
- In a medium size bowl, beat the eggs with a pinch of salt. Add goat cheese and spinach-sundried tomato mixture. Mix well.
- Fill the potato cups with the egg mixture and bake at 400F for 15 minutes. Let cool slightly before un molding. Un mold carefully using a butter knife around the sides of the nests.
