SAVORY SPINACH PARMESAN BITES

Steps:
- In a large sauté pan over medium heat, melt the butter. Add onions and cook until the onions are translucent and soft, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Remove the pan from the heat and let cool.
- In the meantime, remove excess water from thawed spinach by pressing it between paper towels. (The spinach does not need to be cooked.) In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan, salt and pepper, and onion/garlic mixture. Combine well.
- Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper. Wait about 15-20 minutes. This helps the stuffing mix to soften so it's easier to form the balls.
- One at a time, using your hands, roll the mixture into individual 1-inch balls. Place each one on the parchment-lined baking sheet. Bake for about 15-20 minutes, or until very slightly browned.

- Preheat the oven to 350F. Line a baking sheet with parchment paper.
- In a large pan, melt the butter over medium-high heat. Add the onions and cook until soft. Add the garlic and stir. Remove from heat and set aside.
- In a large bowl, combine the spinach, breadcrumbs, eggs, Parmesan cheese, salt, pepper, and butter mixture. Stir to thoroughly combine.
- Using a small cookie scoop or spoon, scoop the mixture into your hands and roll into a ball, and place them on the baking sheet.
- Bake for 15 to 20 minutes, until lightly browned.

- Place spinach and water in a Dutch oven; cover and cook for 3 minutes or until wilted. Drain and set aside., In the same pan, melt butter. Stir in the cream, lemon zest, garlic and pepper flakes; bring to a gentle boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly reduced. Stir in cheese and spinach; heat through. Sprinkle with croutons.

- Spoon 1 teaspoon of dip onto each cracker. Top with 1 piece of shaved Parmesan. Serve immediately or chill in fridge until ready to serve.
SAUTEED SPINACH WITH PARMESAN CHEESE
Steps:
- Thoroughly wash and dry spinach and remove stems.
- Using half the ingredients and working in batches, heat olive oil in a large skillet over moderate heat. Saute garlic about one minute. Add spinach leaves, increase heat to high, and stir until evenly wilted, about 2 minutes. Add salt, pepper, and tomatoes. Cook an additional minute. Stir in grated Parmesan, remove from heat, taste, and adjust seasonings. Serve immediately. If spinach releases too much water, you can drain mixture in a colander before serving. Taste and adjust seasonings again after draining.

Steps:
- Preheat oven to 350 degrees.
- grease 9-inch pie plate.
- Melt butter in a 10 inch skillet over medium heat.
- Cook onions and garlic in butter 2 to 3 minutes or until tender.
- Stir in spinach; spread mixture in a pie plate.
- Spread with cottage cheese.
- Stir bisquick mix, milk, lemon juice, pepper and eggs until blended.
- pour into pie plate; sprinkle with Parmesan cheese and nutmeg.
- Bake about 35 minutes or until knife inserted in center comes out clean.
- Cool 5 minutes.
- Sprinkle with additional Parmesan cheese, if desired.
