SPINACH SALAD WITH MANDARIN ORANGES AND WARM BACON DRESSING
The perfect salad for entertaining all winter long, and no one can ever refuse the warm bacon dressing!

Steps:
- Place all the ingredients for the salad into a large serving bowl.
- Cut the bacon strips in half lengthwise, then thinly slice them crosswise into bacon bit sized pieces, 1/4″.
- Heat a cast iron skillet, (I used a 9″) over medium heat. When the pan is hot but not smoking, add the bacon to the pan and sauté until browned and the fat has rendered, about 3-5 minutes.
- Turn off the heat and add the Italian seasoning, balsamic vinegar, Dijon mustard, sea salt to taste, black pepper, and olive oil. Whisk to completely combine and then pour the dressing over the salad. Toss to combine and serve immediately.
- For a nice presentation, you can keep back some of the mandarin oranges and pomegranate arils to sprinkle over the top.

- Combine salad ingredients and toss to mix well. Combine dressing ingredients and heat until warm. I put my dressing in a small pitcher like a cream pitcher and let each person add the amount they want at the table. Salad will keep in the fridge for a couple days without dressing.

Steps:
- Mix vinegar, sugar, water, butter, and salt together in a saucepan; bring to a boil. Cook and stir until sugar dissolves and mixture is bubbling, about 1 minute. Remove from heat and cool to room temperature, about 1 hour.
- Whisk egg into dressing; return saucepan to low heat and simmer until dressing thickens, 5 to 10 minutes.
- Combine spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl; pour dressing over salad. Toss to coat.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels. Crumble into small pieces.
- Separate oranges into individual wedges. Cut each wedge into thirds.
- Combine bacon, oranges, spinach, red onion, and pine nuts in a large bowl; toss lightly.
- Whisk oil, orange juice, vinegar, and salt together in a small bowl to make dressing.
- Drizzle some dressing over the spinach mixture; toss to coat. Serve remaining dressing on the side.

SPINACH SALAD WITH ORANGES + DRESSING
I regularly get monthly newsletters from "Taste of Home" and yesterday this recipe was posted there. I really liked the ingredients that were in the dressing, sort of a sweet-tart combination so decided to make it and was very pleased with the results. Homemade dressings are so much more appealing than the store bought ones. I doubled the dressing recipe so there would be extra for tomorrow.

- In a large salad bowl, toss the spinach, oranges, mushrooms and bacon. Set aside.
- In a blender or food processor, combine the ketchup, vinegar, Worcestershire sauce, sugar, onion, salt and pepper.
- Cover and process until smooth.
- While blending, gradually add oil in a steady stream.
- Yields 4-6 servings.

MANDARIN SPINACH SALAD WITH HOT BACON DRESSING

- Cut the bacon into 1-2 inch chunks and fry over medium heat to render out the fat and crisp the bacon. Set the cooked bacon aside and reserve all the drippings. In the bacon drippings sauté the mushrooms until starting to brown just a little, use medium high heat stirring occasionally. Add in the sliced onion and turn down the heat, flavor with salt and a generous amount of pepper. Cook until the onions are soft and clear. About 5–8 minutes.
- Add the liquid from the can of orangs and let reduce by at least half. When reduced add in the oranges, vinegar and the brown sugar. Cook until the oranges breakdown and the dressing thickens a bit. Return the bacon to the pan.
- Taste the dressing and add sugar, salt or vinegar as needed. When ready to serve pour the hot dressing over the spinach greens and toss gently.
