SPLENDA LEMON MERINGUE LOAF
The Splenda adds a sweetness and lower calories to this tantalizing sweet and tangy bread. The creamy texture comes from the yogurt. Give it a try, you'll love it! Makes 2 small loaves.

Steps:
- Prep all your ingredients before hand, this will help to make sure things move quickly and to be sure you have all the ingredients.
- In a large bowl combine the pastry flour, all-purpose flour, splenda, baking powder, salt and grated lemon rind.
- Using a whisk mix all the dry ingredients till well blended.
- In a separate bowl combine the oil, eggs, lemon juice, yogurt and milk. Mix the ingredients together with a wire whisk till well blended.
- Add the dry mixture to the wet mixture and fold together with a rubber spatula, just till combined.
- Pour batter into 2 greased loaf pans ( 8 x 41/2 ).
- Bake in a 350F oven for 30 -35 minutes or until a skewer inserted into the center comes out clean.
- Remove from oven and allow to cool in the pans for 10 minutes before removing.
- Cool on a wire rack.
- FOR GLAZE:.
- Combine the 1/4 cup of sugar, lemon juice and rind in a saucepan.
- Bring to a boil and cook for 2 minutes.
- Remove from saucepan and brush on top of the loaves.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x5-inch loaf pan.
- Whisk flour, salt, baking powder, and baking soda in a bowl. Cream sugar and butter in a separate bowl with an electric mixer. Add eggs, lemon juice, lemon zest, lemon extract, and vanilla; beat until incorporated.
- Pour the egg mixture into the flour mixture; whisk until smooth. Add oil and mix well. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool on a wire rack.
- While the cake is cooling, mix powdered sugar, milk, lemon zest, and lemon extract in a bowl until smooth. Pour over the cooled loaf. Slice up the loaf when the icing sets.

SPLENDID SPLENDA MERINGUES

Steps:
- Preheat oven to 300 degrees.
- Spray cookie sheet; set aside.
- Combine egg whites, cream of tartar, and salt in a very clean bowl.
- Beat until foamy.
- Add splenda a little at a time until egg whites are stiff and glossy.
- Fold in vanilla.
- Spoon meringue on cookie sheet.
- Bake 18-20 minutes.
- Variations: Fold in 1-2 tbsp of cocoa with vanilla.
- Add different extracts instead/along with vanilla.
- Add food coloring with extracts (i.e swirl red coloring with peppermint extract.)
