SPLIT PEA SOUP WITH HAM HOCKS

1/4 cup olive oil
1 large onion, finely diced
2 celery stalks, finely diced
2 carrots, finely diced
One 1-pound bag split peas, rinsed and picked through
1 1/2 pound smoked ham hock
2 quarts chicken stock, water, or combination
Salt and freshly ground black pepper

Steps:

  • In a large saucepan, saute onion, celery and carrots over medium-high heat. Add peas and ham hock and cover with stock by a couple inches. Bring to a simmer and cook about 1 hour until soup is thick and peas have almost disintegrated but not quite. Season, to taste, with salt and pepper. Remove ham hock and let cool. Pull meat from ham hock bone and shred. Garnish with ham and pepper.

2 tablespoons butter
1 large onion, chopped fine (about 1-1/2 cups)
salt
2 medium garlic cloves, minced
7 cups water
1 lb ham steak (left whole)
3 bacon, thick cut (left whole)
1 lb split peas, picked through and rinsed (2 cups)
2 thyme, sprigs of fresh
2 bay leaves
2 medium carrots, peeled and cut into 1/2-inch pieces
1 medium celery rib, cut into 1/2-inch pieces
pepper
hot sauce, to taste (optional)

Steps:

  • Heat butter in large Dutch oven over medium high heat. When foaming subsides, add onion and 1/2 tsp salt; cook, stirring frequently, until softened, about 3 - 4 minutes.
  • Add garlic and cook until fragrant, about 30 seconds. Add water, ham steak, bacon, green peas, thyme, and bay leaves. Increase heat to high and bring to simmer, stirring frequently to keep peas from sticking to bottom.
  • Reduce heat to low, cover and simmer until peas are tender but not falling apart, about 45 minutes.
  • Remove ham steak, cover with foil to prevent drying out, and set aside. Stir in carrots and celery; continue to simmer, covered, until vegetables are tender and peas have almost completely broken down, about 30 minutes longer.
  • When cool enough to handle, remove skin and shred ham into small pieces with two forks, Remove and discard thyme sprigs, bay leaves and bacon slices. Cut the fat off the bacon and chop into small pieces. Stir ham and bacon back into soup and return to simmer. Season to taste with salt and pepper. Add a few shakes of hot sauce, if desired.

1 pound dried split peas
1 ham hock
3 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
2 teaspoons minced garlic
1 pound Smithfield ham, chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
8 cups water
1 bay leaf
2 teaspoons fresh thyme
Parmesan Truffled Potato Chips, recipe follows
2 pounds red bliss potatoes, scrubbed well and patted dry, skins left on
4 cups vegetable oil, for frying
1/4 cup grated Parmesan
1 tablespoon truffle oil
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
  • Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
  • In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
  • Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.
  • Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration.
  • Heat the oil in a large, heavy pot to between 340 and 350 degrees F.
  • Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.

I am fifty years old, and I picked this recipe up watching my mother make it when I war young, and I'm sure she learned it from her mother. It's a great Split Pea soup recipe for the frugal. Serve with crusty French bread for dunking, a sprinkle of pepper and a pat of butter on the top of the soup.

1 pound leftover ham bone with meat attached
1 cup chopped onions
2 cloves garlic, minced
2 teaspoons freshly ground black pepper
1 pound dried split peas
1 cup chopped carrots

Steps:

  • Place the ham bone in a large pot over high heat. Add water to cover, bring to a boil, reduce heat to low and let simmer overnight. Allow to cool and clean the stock, discarding the bone, excess fat, and any cartilage. Return any good ham meat to the pot and bring back to a boil.
  • Add the onion, garlic and ground black pepper and allow to simmer for 1 hour. Then pour in the split peas and the carrots and allow to simmer for at least 1 more hour to allow the peas to break down. Stir together well and season to taste.

1 ham bone with some meat
4 carrots, diced
½ large Spanish onion, diced

Steps:

1 cup chopped onion
1 teaspoon vegetable oil
1 pound dried split peas
1 pound ham bone
1 pinch salt and pepper to taste

Steps:

  • In a medium pot, saute onions in oil. Add the split peas, ham bone, and enough water to cover ingredients; season with salt and pepper.
  • Cover, and cook until there are no peas left, just a green liquid, 2 hours. While it is cooking, check to see if water has evaporated. You may need to add more water as the soup continues to cook.
  • Once the soup is a green liquid remove from heat, and let stand so it will thicken. Once thickened you may need to heat through to serve.

2 1/2 lbs smoked ham, picnic bone in
3 quarts water
4 bay leaves
1 lb split peas (2 1/2 cups)
1 teaspoon dried thyme
2 tablespoons olive oil
2 medium onions, chopped medium
2 medium carrots, chopped medium
2 medium celery ribs, chopped medium
1 tablespoon butter
2 medium garlic cloves, minced
1 pinch sugar
3 small new potatoes, diced 1/2 inch
1 dash ground black pepper
1/4 cup red onion, minced
3 tablespoons balsamic vinegar

Steps:

  • Place the ham, bay leaves, and 3 quarts water in a large stock pot or dutch oven. Cover and bring to a boil over medium heat. Reduce the heat to low and simmer until meat is tender and pulls away from the bone, 2 to 2 1/2 hours. Remove the ham meat and bone from pot. When ham is cool enough to handle, shred the meat into bite sized pieces and set aside. Discard rind, fat, and bone.
  • Add split peas and thyme to ham stock. Bring back to a boil, reduce the heat, and simmer, uncovered, until peas are tender but bot dissolved, about 45 minutes.
  • While ham is simmering, heat oil in a large skillet over high heat until simmering. Add the onions, carrots, and celery and saute, stirring frequently, until most liquid evaporates and the vegetables begin to brown, 5 to 6 minutes. Reduce the heat to medium-low and add the butter, garlic, and sugar. Cook the vegetables, stirring frequently, until deeply browned, 30 to 35 minutes; set aside.
  • Add the sauteed vegetables, potatoes, and shredded ham to the pot with the split peas. Simmer until the potatoes are tender and the peas dissolve ad thicken soup to the consistency of light cream, about 20 minutes more. Season with ground pepper to taste. (The soup can be refrigerated in an airtight container for 2 days. Warm the soup over low heat until hot.) Ladle the soup into bowls, sprinkle with red onion, if using, and serve, passing balsamic vinegar separately.
