If your little champ is a huge sports fan, then this cake in the shape of a jersey makes the perfect birthday or special occasion recipe.

Number Of Ingredients 7

1 pkg. (2-layer size) yellow cake mix
2 cups cold milk
2 pkg. (4-serving size each) JELL-O Chocolate Flavor Instant Pudding
few drops food coloring, any color
2 cups thawed COOL WHIP Whipped Topping, divided
1 Tbsp. decorating gel
6 candy-coated chocolate pieces

Steps:

  • Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Grease foil; set aside. Prepare cake batter and bake in prepared baking pan as directed on package. Cool in pan 15 min. (Do not remove cake from pan.) Pierce cake with large fork or skewer at 1/2-inch intervals; set aside.
  • Add milk to dry pudding mixes in medium bowl. Beat with wire whisk 2 min. or until well blended. Pour evenly over cake. Refrigerate 4 hours or overnight.
  • Remove cake from pan using foil handles; place on cutting board. Cut cake into pieces with serrated knife as shown in diagram. Arrange on large serving platter to resemble a jersey, removing cake from foil before placing on platter. Stir food coloring into whipped topping; spread on top and sides of cake. Decorate with gel and candies to represent your favorite sports team. Store in refrigerator.

The Jersey Shore Cookbook author Deborah Smith adapted this recipe for crispy pork-studded pancakes from The Chicken or the Egg, a restaurant in Beach Haven, New Jersey.

Yield Makes 8 pancakes

Number Of Ingredients 13

4 strips cherrywood-smoked bacon (or any good-quality bacon)
4 thin slices pork roll, Taylor brand preferred
2 links breakfast sausage
2 large eggs
1 pint buttermilk
1/4 cup vegetable oil
1 tablespoon granulated sugar
1/2 teaspoon salt
2 cups all-purpose flour
1 teaspoon baking soda
Scant 1 tablespoon baking powder
Butter, for cooking and serving
Maple syrup, for serving

Steps:

  • In a large frying pan or griddle over medium-high heat, cook bacon, pork roll, and sausage until bacon is crisp, sausage is browned, and pork roll is slightly crisp. Remove from heat and set aside.
  • In a large bowl, combine eggs, buttermilk, and oil. In another bowl combine sugar, salt, flour, baking soda, and baking powder. Add dry ingredients to wet and mix by hand (not with an electric mixer). A few lumps are okay. Transfer to a pitcher or gravy boat.
  • Heat a griddle (preferred) or nonstick frying pan over medium heat. Melt a little butter in the pan (unless using nonstick pan). While pan is heating, dice bacon, pork roll, and sausage into small pieces.
  • When pan is hot, pour batter into 3-inch-diameter circles and immediately sprinkle each with some of the meat mixture. When bubbles begin to form (after about 2 to 3 minutes), flip pancakes with a spatula and cook for another 2 minutes or so, until golden brown. Serve topped with butter and syrup.

1 box Betty Crocker™ Super Moist™ cake mix (any flavor*)
Water, vegetable oil and eggs called for on cake mix box
Tray or cardboard (15x12 inches), covered with wrapping paper and plastic food wrap or foil
1 1/2 containers Betty Crocker™ Whipped fluffy white frosting
Food colors

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • Make and bake cake as directed on box for 13x9-inch pan. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour. For easier handling, refrigerate or freeze cake 30 to 60 minutes or until firm.
  • Meanwhile, tint 2 1/4 cups of the frosting with food color as desired for your favorite team's jersey color. Tint 1/2 cup frosting as desired for team name and numbers. Remove cake from freezer. Using serrated knife, cut rounded top off cake to level surface; place cake cut side down on cutting board.
  • Place short side of cake toward you. Poke toothpick in cake at a point 4 inches from top and 1 inch from outside edge, on both sides. Poke toothpick in cake at bottom, 1 inch from outside edge, on both sides. Cut 1x8-inch piece (marked with toothpicks) from outer edge of each side. Cut each piece in half crosswise, forming 4 (1x4-inch) pieces. Cut neck hole from top of cake.
  • On tray, place largest piece of cake. Using small amount of jersey-colored frosting, attach 2 small rectangular pieces on each side of top of cake to lengthen sleeves. Frost with a thin layer of frosting to seal in crumbs. Refrigerate or freeze 30 to 60 minutes to set frosting.
  • Frost entire cake with jersey-colored frosting. Pipe other color frosting onto cake to create team name, numbers and shirt trim. Store loosely covered.

1-1/2 cups canned vanilla frosting
Orange paste food coloring
4 pieces black shoestring licorice

Steps:

  • Prepare cake batter according to package directions. Pour into a greased and floured 2-1/2-qt. ovenproof bowl., Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from bowl to a wire rack to cool completely., In a small bowl, combine frosting and food coloring. Place cake on a serving plate. Spread with frosting. Gently press a meat mallet into frosting so texture resembles a basketball. For seams, gently press licorice into frosting.
