St Johns Honey Fudge From The Isle Of Man Recipes
ST. JOHN'S HONEY FUDGE FROM THE ISLE OF MAN
This recipe was posted for the British Isles Culinary Cruise 2009. It comes from the Isle of man Community Website: www.iofm.net. It is traditionally made and sold at the Tynwald Fair, which is the oldest surviving fair on the Isle of Man. It is still held at the village of St. John's every 5th July. The chocolate probably came into the recipe because smugglers along the coast introduced exotic foods and spices. This fudge has a smooth, chocolatey flavor with a hint of honey.

Steps:
- Boil the sugar, chocolate, salt and milk for five minutes, stirring constantly.
- Add the honey, keep stirring, and cook to a soft-ball stage (230 - 240 deg. F).
- Remove from heat and stir in the butter.
- Let stand about 5 minutes, then beat until smooth & creamy and pour into an 8" square buttered pan.
- Cut when firm.
HONEY FUDGE CAKE FOR A CROWD
Having a party and need alot of cake? This is a yummy fudgy cake made with honey for an extra special flavor. You will need to mix this is a bowl that can easily hold a gallon. You can use a big stockpot for this and use a drill with your beater in it for a mixer. Cooking time includes a cool-down time for the cake.

Steps:
- Sift dry ingredients together. Set aside.
- Cream butter until light and fluffy. Slowly add honey while continuing to cream.
- Add eggs one at a time beating well after each addition.
- Combine water and vanilla and add to creamed mixture alternating with flour mixture.
- Pour into greased and floured baking pans. This will fit into one 18x26x1 inch pan. You can use smaller pans (four 9x13).
- Bake at 325 fro 25 minutes.
- Cool and cut cake into pieces 12 x 8. (or 6 x 4 for the 9x13 pans).

- In a heavy saucepan, combine the chips, honey, butter and salt. Cook and stir over low heat until chips are melted; stir until smooth. Gradually stir in milk and vanilla; heat through, about 2 minutes (do not boil).
