1 3/4 cups all purpose flour
1 teaspoon ground cinnamon
1/4 tablespoon ground cloves
2 teaspoon ground ginger
1/2 tablespoon fresh ginger, finely grated
1/4 teaspoon nutmeg
1 teaspoon salt
1 teaspoon baking soda
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter, softened
2 eggs
1/2 cup apple sauce
1/2 cup sour cream
Frosting
1 (8-ounce) package cream cheese, softened
1 teaspoon vanilla
3 cups icing sugar
Candied ginger, chopped in small squares

Steps:

  • 1.Preheat oven to 350 degrees F. Grease four mini loaf pans 6x3x2" with cooking spray. 2.In a medium bowl whisk together the dry ingredients. Set aside. In the bowl of a standup mixer with a paddle attachment cream butter and sugars together. Add eggs one at a time and mix well. Add the apple sauce and sour cream. Add the flour mixture slowly mixing well. 3.Pour batter into prepared pans and bake for 30 min. or until a cake tester comes out clean. 4.Cool for 5 minutes and then remove from pan, cool completely on racks. 5.For the frosting, beat the cream cheese with a hand mixer until soft and light. Add the vanilla and slowly add 1/2 cup of icing sugar at a time and blend in. Spread the icing on top of the cakes and decorate with the candied ginger.

I read many other recipes and a lot were missing the basics from the ingredient list this is the closet to theirs that I have came up with I hope you all enjoy �� first time submitter long time follower

1 1/2 cups all-purpose flour
1/2 teaspoon ground cloves
2 teaspoons ground ginger
1 teaspoon ground mustard
1 teaspoon baking soda
1 1/2 teaspoons nutmeg
1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1/2-3/4 cup candied ginger (homemade)
1 teaspoon orange extract (or juice )
1/2 teaspoon both lemon and vanilla extract
1 cup apple butter
4 ounces cream cheese
2 cups icing sugar
1/4 teaspoon lemon extract
1 1/2 teaspoons lemon zest
1 teaspoon orange juice

Steps:

  • Start with butter and sugar then add the egg Beat Ingredients in a stand mixer mix until light and fluffy then add remaining wet ingredients. Mix dry ingredients together and whisk then add dry ingredients to wet ingredients in until just combined , don't over mix it will cause tough bread ❤️Batter will be really thick don't worry :) bake at350 for 50-60 mins and let cool completely before frosting.

For those of you who may not like the very spicy, dark version so often served during the holidays, this loaf is lighter and very moist. A hint of orange is a wonderful addition, and the cream cheese icing is a perfect compliment. (Originally published by Veronica Hill.)

1 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup butter, softened
1 teaspoon ground cloves
1 cup white sugar
2 1/4 teaspoons ginger
1 teaspoon baking soda
1 teaspoon orange extract (optional)
1 cup applesauce
8 ounces cream cheese, room temperature
1 teaspoon vanilla extract
2 1/2 cups confectioners' sugar
1/2 teaspoon orange extract

Steps:

  • Preheat oven to 350°F Grease and flour a 9-inch loaf pan, or even a square baking pan.
  • In a medium bowl, stir together the flour, ginger, cinnamon, cloves and salt; set aside.
  • In a large bowl, cream butter and sugar until light and fluffy. Dissolve baking soda into applesauce and mix into creamed butter. Add flour mixture. Mix until smooth.
  • Pour the batter into a loaf pan.
  • Bake for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out just slightly sticky. (Be careful not to over bake, for this cake can dry out easily. Just remember that the toothpick shouldn't come out clean, but a little sticky).
  • For the frosting, beat the cream cheese until light and fluffy. Beat in the vanilla. Gradually beat in the powdered sugar. Frost the cake when it is completely cooled. Decorate with chopped candied orange peel or candied ginger.
  • *Note: This recipe tastes best the next day.
