Grilled Beef and Blue Cheese Tacos image

Everyone loves the tangy sauce that goes with these sizzling steak tacos. For an authentic feel, I like to wrap the tortillas in foil and steam them while the steak and onions are cooking. -Lois Szydlowski, Tampa, Florida

Categories     Dinner

Time 35m

Yield 6 servings.

Number Of Ingredients 12

2 medium red onions, cut into 1/4-inch slices
2 tablespoons canola oil
1/2 teaspoon salt, divided
1 beef top sirloin steak (1-1/2 pounds)
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1 garlic clove, minced
1/4 teaspoon pepper
12 flour tortillas (6 inches), warmed
1 cup crumbled blue cheese

Steps:

  • Brush onions with oil; sprinkle with 1/4 teaspoon salt. Sprinkle steak with remaining salt. Let steak and onions stand 5 minutes., Meanwhile, in a large bowl, combine soy sauce, Worcestershire, brown sugar, vinegar, garlic and pepper. Halve onion slices; cut steak thinly across grain. Add onions and steak to soy mixture; toss to coat. Serve in tortillas with blue cheese.

ULTIMATE TAILGATE STEAK AND EGGS TACOS

Ultimate Tailgate Steak and Eggs Tacos image

Provided by Food Network

Time 5h

Yield 12 tacos

Number Of Ingredients 8

2 New York strip steaks, at room temperature
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter
Steak sauce, for drizzling
12 large eggs
1/2 cup milk
12 flour tortillas
Hot sauce, for serving

Steps:

  • Preheat a grill for cooking over high heat.
  • Liberally sprinkle the steaks on both sides with salt and pepper. Grill the steaks until just slightly less cooked than desired. Set in a foil pan, top each steak with 2 tablespoons sliced butter and cover with aluminum foil to rest about 20 minutes.

  • At game time: Preheat a grill for cooking at about 300 degrees F.
  • Drizzle steak sauce over the steak to taste, then cover the pan again and place the entire pan on the grill to reheat, about 10 minutes. Stir the steak and continue to reheat until warmed through.

Add the eggs and cook, stirring frequently, until scrambled and cooked through. Meanwhile, wrap the tortillas in foil and warm them on the grill.
  • Build the tacos and serve immediately, topping with hot sauce to taste.

GRILLED PRIME CHEESETEAK TACOS

Grilled Prime Cheeseteak Tacos image

Provided by Jeff Mauro, host of Sandwich King

Time 2h45m

Yield 12 tacos

Number Of Ingredients 14

1 1/2 pounds center-cut tenderloin
1 poblano chile
Olive oil, for drizzling
1 yellow onion, sliced into 1/4-inch strips
Kosher salt and freshly ground black pepper
12 fresh corn tortillas
Cheese Sauce, recipe follows
12 pickled cherry peppers, stemmed, seeded and thinly sliced
One 12-ounce can evaporated milk
2 teaspoons Dijon mustard
4 ounces sharp yellow Cheddar, freshly grated
2 ounces pepper jack cheese, freshly grated
2 ounces blue cheese, crumbled
2 teaspoons cornstarch

Steps:

  • Put the tenderloin on a parchment-lined baking sheet and freeze for 1 hour. Flip the tenderloin and freeze for another hour. Use a very sharp knife to slice the meat as thinly as possible.
  • Roast the poblano directly over an open flame, turning regularly, until blistered and blackened all over, about 5 minutes. Put in a bowl, cover with a kitchen towel and let cool for at least 10 minutes. Rub off the blackened skin, remove the stem and seeds and slice into 1/4-inch strips.
  • Heat a cast-iron griddle over medium-high heat on one side and medium-low heat on the other side. On the cooler side, drizzle with olive oil, add the onions and cook, stirring occasionally, until tender and beginning to char, 5 to 7 minutes. Add the roasted poblano to the onions and cook for another 3 minutes.
  • Sprinkle the meat with a generous amount of salt and pepper. Drizzle the hot side of the grill pan with olive oil, then lay the meat in a single layer, in batches if necessary. Cook very quickly on the first side, about 1 minute. Flip and cook on the other side, another minute or so. Repeat the process until all the meat is cooked. Reserve in a bowl along with the onions and pepper until you are ready to serve.
  • Heat both sides of the griddle over medium-high heat and oil lightly. Arrange the tortillas in a single layer on the griddle and heat about 30 seconds per side, then wrap in a clean kitchen towel to keep warm.
  • To build the tacos: In a warm tortilla, layer some meat, spoon on a couple of tablespoons of Cheese Sauce, add a few of the pepper and onions and top with the pickled cherry peppers.
  • Set a medium saucepan over low heat. Add the evaporated milk and Dijon and whisk together until uniform and smooth. Toss the Cheddar, pepper jack and blue cheese with the cornstarch in a bowl until totally coated. Whisk the cheese mixture into the milk mixture and heat, stirring constantly, until all the cheese is melted and the sauce is silky and smooth, about 5 minutes. Keep warm over low heat until ready to use.

  • First, pat the steak dry with paper towels, then drizzle with the olive oil and lemon juice. Add the minced garlic, then season generously with salt and pepper. Rub the seasonings into the steak using your hands. If you have time, season the steak the day before and let it marinate in the refrigerator.
  • Preheat an outdoor grill over high heat to 500F. Once the grill is hot, add the flank steak. Grill the beef for 3 to 4 minutes per side, until the inside is a medium. If your flank steak is on the thicker side, increase the grilling time by a few minutes. Allow the beef to rest before slicing it thinly into bite sized pieces
  • For the avocado salsa: toss together the diced avocado, diced tomato and shallot in a medium bowl, along with the cilantro, lime juice, olive oil and salt. Don't want to make your own salsa? Store-bought salsa will also work well! Try adding some diced avocado to store-bought salsa to give it more flavor!
  • I recommend warming your tortillas on the grill for this taco recipe! Just place them on the top rack of the grill as the steak is cooking, then remove and keep them warm. To enjoy these tacos, first place a generous amount of the sliced beef flank steak onto a tortilla, top with a few spoonfuls of the avocado tomato salsa and add a bit of crumbled blue cheese on top! Season the tacos with your favorite steak sauce or hot sauce to add more flavor!
