Here's what you need: vegetable oil, flour, tomato paste, chicken stock, chili powder, dried oregano, cumin, garlic powder, salt, pepper, shredded chicken, tortilla chip, shredded mexican cheese blend, sour cream, tomato, fresh cilantro, queso fresco

2 tablespoons vegetable oil
2 tablespoons flour
2 tablespoons tomato paste
1 ¾ cups chicken stock
1 tablespoon chili powder
½ teaspoon dried oregano
1 teaspoon cumin
1 teaspoon garlic powder
salt, to taste
pepper, to taste
2 cups shredded chicken
tortilla chip
2 cups shredded mexican cheese blend
½ cup sour cream
1 tomato, diced
fresh cilantro, optional
queso fresco, optional

Steps:

  • Heat a small saucepan over medium heat and add the oil and flour. Whisk together and cook gently until it resembles wet sand, about 1 minute.
  • Add the tomato paste and whisk. Add chicken stock, chili powder, cumin, garlic powder, oregano, salt and pepper. Stir.
  • Bring up to a simmer and cook about 5 minutes until sauce thickens. Remove from heat and set aside. Reserve ½ cup (120 ml).
  • Toss the shredded chicken with about ½ cup (120 ml) of the reserved sauce.
  • Preheat oven to 400°F (200°C).
  • Place a layer of tortilla chips in a skillet or bake dish. Add a layer of cheese and half the chicken mixture. Drizzle some enchilada sauce over the top.
  • Add a second layer of tortilla chips followed by another layer of cheese and the remaining chicken. Drizzle with sauce.
  • Bake for 8-10 minutes until cheese is melted.
  • Top with sour cream, diced tomato, cilantro, and crumbled queso fresco. Serve immediately.

1 (15 ounce) can Progresso® black beans, drained, rinsed
2 cups shredded Monterey Jack cheese
½ cup sour cream
8 (8 inch) flour tortillas
1 teaspoon Chopped green onions
1 teaspoon Chopped tomatoes

Steps:

  • Heat oven to 350°F. In small bowl, mix cooking sauce and chiles. Spray bottom of 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1/4 cup sauce mixture in bottom of baking dish. In medium bowl, stir together chicken, black beans, 1 cup cheese, the sour cream and 1/2 cup sauce mixture.
  • Spoon about 1/2 cup chicken mixture down center of each tortilla. Roll up tortillas; arrange, seam sides down, in baking dish. Top enchiladas with remaining sauce mixture. Sprinkle with remaining cheese. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down.
  • Bake 35 minutes. Remove foil; bake 5 to 10 minutes longer or until hot and cheese is melted.
  • Top with green onions and tomatoes.

2 cups chopped deli rotisserie chicken (from 2-lb chicken)
6 low-carb flour tortillas (6 inch)
3 cups shredded lettuce
1 1/2 cups refrigerated prechopped tomato
1/4 cup crumbled queso fresco cheese (1 oz)
6 medium green onions, chopped (6 tablespoons)

Steps:

  • Heat oven to 425°F. Place mole sauce in medium saucepan. Gradually add broth, stirring with wire whisk until smooth. Cook over medium-high heat, stirring often, until thoroughly heated.
  • Meanwhile, place chicken in small microwavable bowl. Cover with microwavable plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High 1 to 2 minutes or until thoroughly heated.
  • Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Spoon 1/3 cup chicken down center of each tortilla. Spoon 1 tablespoon sauce over chicken on each tortilla; fold 2 sides toward center. Place enchiladas, seam sides down, in baking dish. Pour remaining sauce over enchiladas.
  • Bake uncovered 9 to 10 minutes or until thoroughly heated.
  • Place 1 enchilada on each serving plate; top with lettuce, tomato, cheese and onions.
