THROWDOWN'S SLOPPY JOES
Steps:
- For the BBQ Sauce:
- Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onions and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add the ketchup and the water and bring to a boil. Reduce the heat and simmer for 5 minutes. Add the remaining ingredients and simmer until thickened, stirring occasionally, about 10 minutes.
- *Transfer the mixture to a food processor and puree until smooth, season with salt and pepper, to taste. Pour into a bowl and allow to cool at room temperature. Sauce will keep for 1 week in the refrigerator stored in a tightly sealed container.
- For the Garlic Toast:
- Combine the butter and garlic in a small saucepan and cook over low heat until the butter is melted. Season with salt and pepper, to taste. Remove from the heat and let sit 5 minutes.
- Preheat the broiler.
- Put the bread on a baking sheet and broil until both sides until lightly golden brown, about 1 minute per side. Remove from the oven and brush them with the garlic butter. Transfer to a serving platter and set aside until ready to serve.
- For the Neat Joes:
- Heat the oil over high heat in a large high-sided saute pan until the oil begins to smoke.
- Add the beef, breaking it up into small pieces using a metal spatula or wooden spoon, season with salt and pepper, to taste, and cook until golden brown. Remove with a slotted spoon to a plate. Drain off all but 1 tablespoon of the fat from the pan. Add the onion and celery and cook until soft, about 3 minutes. Add the poblano, bell peppers and garlic and cook for 1 minute. Add the ancho powder and cook for 30 seconds. Add the BBQ sauce, 1/4 cup of water and the ketchup, bring to a boil and cook, stirring occasionally, until slightly thickened, about 5 minutes. Reduce the heat to medium-low, stir in the mustard, Worcestershire, honey, brown sugar and molasses. Cover and simmer for 15 minutes. Remove the cover, return the meat to the pan and continue cooking until slightly thickened, about 10 minutes longer. Add the vinegar, season with salt and pepper, to taste, and stir in the 1/2 cup of parsley or cilantro.
- Top slices of the garlic bread with some of the sloppy joe mixture, sprinkle with cilantro or parsley.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

- Add to a cast Iron Dutch oven a splash of olive oil. Season the Bone-in short ribs with salt and pepper and sere for 2-3 minutes on each side, we are looking for some char here so don't panic. Remove to a paper towel lined cooling dish. At this point you can preheat your oven to 325.
- Now let's layer some flavors for the sauce. In the same pot add the onions and garlic; allow these to sweat for 3-4 minutes or until glossy. Add the Smoked Paprika, Chili Powder, Cumin and Coriander; cook this for about 2 minutes until it smells fragrant. Add the tomato paste, let this bubble until slightly browned 2-3 minutes; this will give us a nice earthy smoke flavored sauce. Next, add the Cola and Beer (there will be extra beer you know what to do) add the Ketchup and the soy sauce and bring to a simmer until it thickens up, around 3-5 minutes.
- Now it's time to put the Ribs back inches Add the chicken broth and bring to a simmer for about 5 minutes. Put the lid on that bad boy and slide it into the oven for 3 hours. What emerges from the oven will be molten tender goodness. Pull the ribs form the lava mixture and allow to cool a bit then shred ala pulled pork. At this point it is a good idea to spoon out some of the fat that has rendered from the beef. Place the shredded Beef back into the Dutch oven, bring to a simmer and serve with your favorite roll and coleslaw if desired.
