GRILLED STEAK TACOS WITH CHERRY TOMATO-AVOCADO SALSA
In this supremely summery taco recipe, chile-rubbed grilled steak is topped with a spicy tomato-avocado salsa before being rolled into warm corn tortillas. Grilling the onions, garlic and jalapeño for the salsa adds a concentrated sweetness, while lime zest keeps everything sharp and bright. If you don't have access to a grill, feel free to use your broiler.

- Prepare the steak: In a small bowl, mix together the salt, chile powder, coriander, cumin, garlic and lime zest. Rub mixture all over the steaks, cover and refrigerate for at least 1 hour or preferably overnight.
- Prepare the salsa: Light the grill or heat to medium-high (or heat the broiler). Grill onion, garlic and 1 jalapeño until tender and charred on all sides, 5 to 10 minutes (or place on a broiler pan and broil). Remove from heat until cool enough to handle, then roughly chop onions, peel garlic and remove seeds and stem from jalapeño.
- Transfer grilled onion, garlic and jalapeño to a blender or mini food processor. Halve the fresh jalapeño and seed it, if desired, then add it to the blender. Process to a chunky paste. Scrape into a serving bowl and toss with tomatoes, avocado, cilantro, lime juice and salt.
- Add more charcoal to the grill, if needed, and grill the steaks until done to taste, about 2 minutes per side for rare (or broil). Let meat rest on a cutting board covered with foil for at least 7 minutes. Meanwhile, grill or broil the tortillas until warm.
- To serve, slice the meat across the grain, and serve with the warm tortillas, radishes, lime wedges, salsa and crema. Let people assemble their own tacos at the table.

- Heat oven to 250 degrees. Wrap tortillas in 1 piece aluminum foil; place in oven.
- Heat oil in cast-iron skillet over medium-high heat until hot. Add steak and cook covered 5 minutes. Turn steak, sprinkle with 1/4 t. salt and increase heat to high. Cook covered 5 minutes. Remove meat to cutting board and let stand 5 minutes.
- Meanwhile, combine sour cream, scallions, cumin, 1/4 t. salt, and pepper.
- Thinly slice beef.
- Heat taco sauce in skillet until hot. Add beef. Spoon sauce over meat; sprinkle with cheese. Heat until cheese melts, about 2 minutes.
- To serve steak, spoon meat mixture onto tortillas; top with dollop of sour cream Fold tortillas and serve.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
- In a skillet over medium heat, saute onions until almost translucent. Stir in beef, garlic, and chile peppers, and continue cooking until the meat is no longer pink. Pour in the tomato sauce and chili powder. Mix thoroughly and heat through. Remove from heat.
- Spoon a little of the meat mixture into a corn tortilla and add small amounts of salsa, Cheddar cheese and olives. Fold the tortilla up and place in the prepared casserole dish. Repeat for the remaining tortillas using up all of the meat mixture. Reserve 1/2 cup of Cheddar cheese for topping.
- Pour the other half of the tomato sauce and sour cream over all of the tortillas. Top with green onions and 1/2 cup of reserved Cheddar cheese.
- Bake 30 minutes in the preheated oven, or until hot and bubbly.

- In a small saucepan, heat the buttermilk, water and sugar until an instant-read thermometer registers 95°. Transfer to the bowl of a stand mixer and whisk in the sourdough starter and yeast. Let stand until foamy, about 20 minutes. Attach the dough hook. Add the 3 3/4 cups of bread flour and mix on low speed until smooth, about 7 minutes. Add 2 1/2 teaspoons of salt and mix on low speed until incorporated, about 3 minutes. Transfer the dough to a large greased bowl, cover with plastic wrap and let rise in a warm place until doubled in bulk, about 45 minutes.
- Cut the dough into 20 pieces. Gently shape into balls and transfer to 2 large greased baking sheets. Very loosely cover the dough with plastic wrap. Let stand in a warm place until doubled in bulk, about 2 hours.
- Heat a cast-iron griddle or large skillet over moderately high heat. On a lightly floured work surface, dust 1 ball of dough with flour and roll 1/8 inch thick. Griddle the tortilla, turning once, until browned in spots and pliable, about 30 seconds per side. Wrap the tortilla in a towel and repeat with the remaining balls of dough.
- Light a grill or preheat a grill pan. Grill the scallions over moderately high heat, turning, until lightly charred, 3 minutes total. Transfer to a work surface to cool, then cut into 1/2-inch pieces. In a medium bowl, mix the scallions with the lime juice and serrano and season with salt. Leave the grill on.
