MEXICAN STUFFED SHELLS
A beloved favorite recipe that's been around awhile. While the crushed tortilla chips are optional, I personally love the crunch.

Steps:
- Preheat oven to 350°.
- In a frying pan cook ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.
- While the ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on baking sheet so that they don't stick together.
- Pour salsa on bottom of a 9×13 inch baking dish. Stuff each shell with the meat mixture placing shells in dish open side up. Cover shells with taco sauce. Cover with foil and bake for 30 minutes.
- After 30 minutes, add shredded cheese and crushed tortilla chips; bake for 10-15 more minutes, with the foil removed. Top with green onions and serve with sour cream and/or more salsa.

STEAK FAJITA ROLLS RECIPE BY TASTY
Here's what you need: olive oil, onion, garlic, green bell pepper, red bell pepper, yellow bell pepper, chili powder, paprika, cayenne powder, cumin, garlic powder, dried oregano, salt, pepper, flank steak, monterey jack cheese, long wooden toothpicks or cut wooden skewer

Steps:
- Preheat the oven to 350˚F (180˚C).
- Heat a large ovenproof skillet over medium heat and add the oil. Sauté the onion, garlic, and bell peppers until soft, about 5 minutes.
- Combine the chili powder, paprika, cayenne, cumin, garlic powder, oregano, salt, and pepper in a dish, and use the mixture to season the flank steak with on both sides. Lay the steak flat on a cutting board with the grain running up and down. Place the sautéed onions and peppers in the middle of the steak, leaving an inch or so on both ends. Cover the onions and peppers with a layer of cheese.
- Tightly roll up the meat from left to right; this will ensure that you cut against the grain when you slice the meat. Stick toothpicks through the sides of the roll to help it hold its shape and use a sharp knife to cut in between the toothpicks.
- Return the skillet to high heat, add the steak, and sear until a nice crust has developed, about 3 minutes. Flip and repeat with the other side. Transfer the skillet to the oven and bake for 10 minutes, or until cooked to your preference.

- In a shallow dish combine lime juice, garlic, cumin, and oregano. Add steak, cover and refrigerate 8 hours to overnight.
- Pre-heat the oven to 350 degrees. Cook pasta shells according to package directions. Drain and rinse in cold water, set aside. Heat and lightly grease an outdoor grill or indoor grill pan. Grill steak, onions, and peppers for 6-8 minutes (or until the steak has reached the desired doneness) turning once. Remove the steak and vegetables and cool slightly. Cut the steak into thin slices and chop the green pepper and onion. Place steak, green pepper, and onion into a medium bowl. Stir in sour cream, 2 tablespoons of Mexican cheese blend and cilantro.
- Stuff the cooked pasta shells with the meat mixture. Arrange shells on a lightly greased 8-inch baking dish. Pour salsa over the shells.
- Cover with foil and bake for 25 minutes or until heated through. During the last few minutes or cooking remove the foil and top the shells with leftover Mexican cheese blend. Remove from the oven and serve over a bed of shredded lettuce.
