1 pounds ground beef sirloin
1/2 pounds ground beef chuck
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoons chopped thyme leaves
1 1/2 teaspoons garlic paste, or half that amount fresh garlic crushed through a garlic press
1/2 teaspoons kosher salt
1/2 teaspoons freshly ground black pepper
2 tablespoons butter
1 large onion, cut into thin strips
1 packages (8-ounce) sliced fresh cremini mushrooms
1/3 cups dry white wine
8 slider buns, split
3 tablespoons creamy mustard spread (such as Dijonnaise)
1 cups baby arugula
3 ounces creamy blue cheese or Gorgonzola cheese, cut into small pieces

Steps:

  • In a large bowl, gently combine ground sirloin, ground chuck, mustard, Worcestershire sauce, thyme, 1/2 tsp of the garlic paste (or 1/4 tsp of the fresh garlic), salt, and pepper. Form into eight 2 1/2-inch-diameter patties of equal thickness; refrigerate. Melt butter in a large skillet over medium high heat. Add onions and sauté for 4 minutes or until translucent. Add mushrooms and sauté for 4 more minutes. Stir in remaining garlic. Deglaze skillet with wine; let wine cook down until almost evaporated. Remove pan from heat and keep it warm. Prepare an outdoor grill with a medium-hot fire (or heat a stovetop grill pan over medium heat). Toast buns on grill 1 to 2 minutes, until lightly toasted. Grill sliders 2 to 3 minutes per side for medium-rare doneness. Spread bun bottoms with Dijonnaise, then top with arugula and sliders. Spoon the mushroom mixture over each slider and top with blue cheese and bun tops.

The real Philadelphia Cheesesteaks come "wid wiz" (cheese whiz), so if you want to be really authentic you can substitute that for the american cheese.

12 slices deli roast beef
1/4 cup butter, room temperature
8 ounces white mushrooms, sliced thinly
1 onion, sliced thin
6 slices American cheese
6 dinner rolls or 6 slider-sized buns
6 long toothpicks

Steps:

  • In a saute pan, melt butter over med-low heat.
  • Add sliced onion and mushroom to pan, saute until onion is nicely carmelized.
  • Remove onion and mushroom from pan onto warm plate. Set aside.
  • Briefly warm roast beef slices in same pan of butter until no pink shows on meat. Do Not Overcook Beef. Remove from pan onto warm plate.
  • Split dinner rolls in half and place cut side up on a baking sheet.
  • Place a folded slice of american cheese on half of each split roll.
  • Lightly toast dinner rolls in conventional oven at 350 degrees F. until cheese is just melted.
  • Remove rolls from oven and top the plain halves with roast beef, onions, and mushrooms. Pile it high!
  • Place cheesy halves on top, secure with a long toothpick, and you have yummy sliders ready to eat.

2 (10 ounce) steaks, your choice (can sub 4 smaller steaks)
1 tablespoon oil
2 tablespoons butter
1 small onion, thinly sliced
2 garlic cloves, minced
1 teaspoon dried thyme or 1 tablespoon fresh thyme
8 ounces mushrooms, sliced
salt
pepper
1/2 cup beef broth
1 -2 tablespoon cognac or 1 -2 tablespoon brandy
1 cup blue cheese
blue cheese, crumbles (garnishment)

Steps:

  • Season the steaks with salt and pepper. Heat the oil in a heavy skillet on medium-high heat. Add the steaks and sear on high heat until done to your preference, about 2-4 minutes per side for rare to medium rare.
  • Let the steaks rest in a heated oven until ready to eat.
  • Melt the butter in the same pan. Add the onion and saute at medium heat until tender, about 5 minutes. Add the garlic and thyme and saute until fragrant, about a minute.
  • Add the mushrooms and season with salt and pepper and saute until tender, about 5 minutes. Add the broth and cognac and deglaze the pan and simmer until it has thickened and reduced by about half.
  • Remove from heat and stir in the blue cheese and pour over the steaks. Garnish with additional blue cheese crumbles.

1 large sweet onion, sliced
1 tablespoon olive oil
2 packages (12 ounces each) Hawaiian sweet rolls
1-1/2 pounds sliced deli roast beef
12 slices provolone cheese
3/4 cup butter
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons Worcestershire sauce
1 teaspoon garlic powder

Steps:

  • In a large skillet, cook green peppers and onion in oil over medium-high heat until tender, 8-10 minutes. Without separating rolls, cut each package of rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Layer with roast beef, pepper mixture and cheese; replace top halves of rolls. , In a small saucepan, melt butter, dried onion, Worcestershire sauce and garlic powder. Drizzle over rolls. Cover and refrigerate 8 hours or overnight., Preheat oven to 350°. Remove rolls from refrigerator 30 minutes before baking. Bake, uncovered, 15 minutes. 1 splash olive oil
1 onion, thinly sliced
½ cup minced bell pepper
1 teaspoon Italian seasoning, or to taste

2 cups canned sliced mushrooms
1 (12 count) package Hawaiian-style dinner rolls, sliced in half
8 slices provolone cheese

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Mix steak and meat tenderizer together in a bowl.
  • Heat olive oil in a skillet over medium heat. Add onion and bell pepper; cook and stir until slightly softened, about 3 minutes. 1 (12 count) package Hawaiian bread rolls
½ large green bell pepper, chopped

¼ cup mayonnaise
8 slices pepper Jack cheese

Steps:

  • Heat a skillet over medium-high heat. Add steak, bell pepper, and onion. Cook until steak is hot and reaches your desired color, 7 to 10 minutes.
