1 pound beef top round steak, cut into 1/4-inch x 2-inch strips
1 tablespoon paprika
2 tablespoons butter
1 can (10-1/2 ounces) beef broth
2 garlic cloves, minced
2 medium green peppers, cut into strips
1 cup thinly sliced onion
2 tablespoons cornstarch
2 tablespoons reduced-sodium soy sauce
1/3 cup cold water
2 fresh tomatoes, peeled and cut into wedges
Cooked rice

Steps:

  • Sprinkle meat with paprika. In a large skillet, melt butter over medium-high heat. Brown beef. Add broth and garlic. Simmer, covered, for 30 minutes. Add green peppers and onion. Cover and continue to simmer for 5 minutes. , Combine cornstarch, soy sauce and water; stir into meat mixture. Cook and stir until thickened. Gently stir in tomatoes and heat through. Serve over rice.

Here's what you need: new york strip steak, kosher salt, coarsely ground black pepper, vegetable oil, butter, cream, brandy or cognac, dijon mustard

14 oz new york strip steak, or other steak of good quality
2 teaspoons kosher salt
2 tablespoons coarsely ground black pepper
1 tablespoon vegetable oil
2 tablespoons butter, divided
1 cup cream
⅓ cup brandy or cognac
1 tablespoon dijon mustard

Steps:

  • Liberally season steak with salt and pepper, being sure to coat the entire surface of the meat. Using your hands, press the seasoning into the meat to create an even coating.
  • Heat the vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat until just smoking. Add the steak to the pan and sear for 4 minutes. Turn and sear the other side for another 4 minutes, for medium-rare. If steak has a fat-cap on its side, be sure to sear it as well for 30 seconds to 1 minute. Once cooked to desired doneness, transfer the steak to a cutting board to rest.
  • Reduce the heat to medium and add the brandy to the skillet. Allow the brandy to cook down for about 1 minute while using a whisk to scrape off any browned bits in the bottom of the pan. Once the brandy has reduced by half, add the cream and continue to whisk until combined. Add the Dijon mustard and remaining tablespoon of butter and continue to cook until mixture begins to reduce and thicken, 5-7 minutes. The final pan sauce should have a rich consistency and coat the back of a spoon. Reduce the heat to low.
  • Slice the steak into ½-inch (1.5cm) pieces. Pour cream sauce over the top and serve.

2 teaspoons salt
1 teaspoon brown sugar
2 teaspoons chili powder

2 pounds flat iron steaks

Steps:

  • Stir together the paprika, salt, sugar, chili powder, chipotle powder, black pepper, garlic powder, onion powder, and cumin in a small bowl until blended. Rub the seasoning mix all over the flat iron steaks, then wrap them tightly with plastic wrap. Marinate in the refrigerator 2 to 8 hours (the longer the better).
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Cook the steaks on the preheated grill until cooked to your desired degree of doneness, about 4 minutes per side for medium. Allow the steaks to rest for 5 minutes in a warm location before slicing.

I always use this sauce when I make beef tenderloin but I have also used a variation of it on pasta. You could also use this for stroganoff instead of a canned cream of mushroom soup-based sauce.

2 cups heavy cream
3/4 cup beef stock
1 shallot, minced
2 -3 garlic cloves, minced
3 tablespoons unsalted butter
1/2-1 tablespoon cracked black pepper
3/4-1 cup sliced mushrooms (optional)
1/4 cup asiago cheese (grated, only if using for pasta)

Steps:

  • Add the butter to an 8-10 inch skillet on medium heat.
  • When butter is melted add minced shallot and garlic to pan and saute until shallots are tender. If using mushrooms add them now also.
  • Add cracked pepper, beef stock, and heavy cream to pan. If using cheese add it now.
  • Reduce heat to low and simmer 15 minutes, stirring occasionally.

2 to 3 tablespoons whole black peppercorns, crushed
1-1/2 teaspoons white pepper
4 boneless beef top loin steaks (12 ounces each)
1 teaspoon salt
1/4 cup butter, melted
1/4 cup Worcestershire sauce
1 teaspoon hot pepper sauce
1/4 cup half-and-half cream

Steps:

  • Combine peppercorns and pepper; rub over both sides of steaks. Chill for 1 hour. , Sprinkle salt in a large skillet; heat on high until salt begins to brown. Add steaks and brown on both sides. Add butter; reduce heat to medium-high. Cook steaks for 1-2 minutes on each side. , Add Worcestershire and hot pepper sauce; cook each side 2-3 minutes longer or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 2 green bell peppers, cut into strips

1/4 teaspoon salt
2 (12 ounce) trimmed New York strip steaks (may use sirloin or any favorite cut of beef steak)
1 1/2-2 tablespoons freshly cracked black peppercorns
2 tablespoons steak sauce
2 tablespoons water
1 cup whipping cream

Steps:

  • Place a 10 inch cast iron skillet over medium heat untill hot.
  • Sprinkle salt in skillet.
  • Place steaks over salt.
  • Cook 1 to 2 minutes on each side or until browned.
  • Remove from skillet.
  • Combine pepper, steak sauce and water in hot skillet.
  • Cook over medium heat, stirring constantly, to loosen brown bits on the bottom of the skillet.
  • Stir in whipping cream
  • Bring to a boil, reduce heat and simmer, stirring constantly 3 to 4 minutes or until slightly thickened.
  • Add steak and simmer for 5 minutes or until desired doneness, stirring occasionaly.
