SALADE NIçOISE WITH FRESH TUNA

Salade Niçoise With Fresh Tuna image

In this elegant variation of the classic French salad, seared fresh tuna stands in for the conventional canned sort. The rest of the salad can be assembled a few hours ahead, but the tuna should be cooked and placed on top of the salad just before it is served.

Categories     salads and dressings

Time 1h

Yield 6 servings

Number Of Ingredients 17

3/4 pound red potatoes
1 1/2 tablespoons Dijon mustard
5 cloves garlic, peeled, crushed and chopped (1 1/2 tablespoons)
1 1/2 tablespoons red-wine vinegar
7 tablespoons extra-virgin olive oil
2 teaspoons salt
3 teaspoons freshly ground pepper
1 1/2 cups water
3/4 pound string beans (preferably haricot verts), tips and strings snapped off
1 yellow pepper
2 very ripe medium-size tomatoes ( 3/4 pounds)
1 1/2 cups sliced red onions
1 cup nicoise or black oil-cured olives
1 pound fresh tuna
1 teaspoon canola oil
About 1 dozen red lettuce leaves
1 cup (loose) basil leaves, shredded into large pieces

Steps:

  • Place the potatoes in a saucepan, cover with cool water and bring the water to a boil over high heat. Cover, reduce the heat to low and boil gently for 25 to 35 minutes, until the potatoes are tender but still firm when pierced with a fork. Drain off the water and set the potatoes aside until cool enough to slice.
  • Meanwhile, prepare the dressing. In a large bowl, mix together the mustard, garlic, vinegar, olive oil, 1 teaspoon of salt and 1 teaspoon of pepper. Whisk until it comes together.
  • Peel the potatoes, if desired, and cut into 1/2-inch slices. Toss with the dressing.
  • Bring the 1 1/2 cups of water to a boil in a saucepan. Add the beans, cover and return to a boil. Boil over high heat for 1 to 3 minutes (less for haricot verts and more for larger beans) until just tender but slightly firm to the bite. Drain and run under cold water for a few seconds to stop the cooking and preserve the bright green color. Cut the beans in half.
  • Peel the yellow pepper as best you can with a vegetable peeler (much easier to do if the pepper is firm and thick-walled). Then cut the pepper through the pleats, remove and discard the seeds and continue peeling the skin from the pieces. Pile up the peeled pepper wedges and cut them into thin julienne strips (about 1 1/2 cups). Cut the tomatoes in half crosswise, press out the seeds and cut the unpeeled flesh into 1-inch pieces.
  • No more than 1 hour before serving, add the beans, yellow pepper, red onions, tomatoes and black olives to the potatoes. Mix well.
  • When almost ready to serve, heat 1 large cast-iron or heavy skillet over high heat for about 2 minutes, until very hot. Sprinkle the tuna with the remaining 2 teaspoons of black pepper and 1 teaspoon of salt and then roll in the canola oil. Place the tuna steak in the hot skillet and sauté over high heat for about 2 minutes, turning once, until lightly browned on the outside and cooked until rare on the inside. Cut into 1/2-inch slices.
  • To serve, line a large platter with the lettuce leaves. Mound the salade niçoise in the center of the platter and place the sliced tuna and the basil leaves on top. Serve immediately.

STEAK NICOISE SALAD WITH BLANCHED GREEN BEANS & CASHEW-LIME VINAIGRETTE

Steak Nicoise Salad with Blanched Green Beans & Cashew-Lime Vinaigrette image

Provided by Michele

Time 1h42m

Number Of Ingredients 21

Steak Nicoise Salad with Blanched Green Beans & Cashew-Lime Vinaigrette
5 oz. container of baby spring mix greens, butter lettuce, or favorite combination
1 large ripe heirloom tomato, sliced and quartered
12 oz bag of baby red potatoes, cooked tender and sliced
1.5 pound top sirloin, flank or tri-tip, grilled and sliced thin
nicoise or kalamata olives, quartered
1 recipe Blanched Green Beans (about 12 oz)
1 recipe Cashew-Lime Vinaigrette
1 recipe Chinese 5 Spice Marinade
salt for cooking potatoes and green beans
ice water for shocking the beans
Chinese 5 Spice Marinade
2 tablespoons of coconut aminos, tamari or soy sauce
2 tablespoons of olive oil
1/8 teaspoon Chinese 5 spice
1/8 teaspoon white pepper
Cashew-Lime Vinaigrette
1/2 cup lime juice (about 5 limes)
1/4 cup cashew butter (I've also used almond)
1/4 teaspoon cayenne 1
1/2 cup pistachio oil

Steps:

  • Step 1 1) Mix the marinade ingredients in resealable bag or bowl and marinate the steak in the refrigerator at room temperature for 90 minutes up to 12 hours, flipping or tossing several times.
  • Step 2 2) For the green beans, bring 1 quart of water and 1/8 cup salt to a boil. Cook green beans 3 minutes until tender not crunchy. At this point the beans can be served immediately with butter, but in this case, drain and submerge beans in an ice water bath to stop the cooking process. (At this point the beans can be kept in the fridge until ready to use). Beans can be made a day in advance.
  • Step 3 3) Wash and place potatoes in a small pot with enough water to cover the potatoes. Add 1 tablespoon of salt. Bring to a boil and simmer at a low boil until potatoes are tender, about 30 minutes. Drain and set aside to cool or store in the refrigerator if you are making a day in advance. Just before salad assembly begins lightly coat potato with olive or pistachio oil and slice in half.
  • Step 4 4) Measure all all the ingredients for the vinaigrette. Combine all the ingredients in a mason jar, shake vigorously and either store in the fridge or set aside if using in the next few hours.
  • Step 5 5) Assemble the salad ingredients on a large platter-everything except the steak.
  • Step 6 6) 60 minutes prior to guest arrival arrival place steak on the counter to bring to room temperature. If the steak is over 1 inch thick (like tri-tip) pre-heat oven to 275 degrees. If the steak is 1 inch thick or less, skip the oven step and prepare the grill. 30 minutes prior to dinner time, place the steak on raised rack on parchment lined baking sheet and bake for 20 minutes or until internal temperature is 95 degrees (or close enough). It's better to be just under than over.
  • Step 7 7) While steak is in the oven, pre-heat and prepare gas grill. If grilling a steak at about 1 inch in thickness, place steak on the hot side at medium-high heat in a 10 o'clock / 4 o'clock position for 3 minutes. Move steak (same side) to the 7 o'clock / 2 o'clock position and grill for 3 minutes. Flip steak and repeat the pattern to complete the cross hatch marks. When the steak is at the desired temperature, remove the steak to a cutting board to rest for 10 minutes. Note: while steak rests it will come up about another 5 degrees in temperature. So, you want to remove the steak from heat about 5 degrees earlier than the desired end result (120 - 125 degrees for rare | 130 - 135 degrees for medium rare | 140 - 145 degrees for medium | 150 - 155 degrees for well)
  • Step 8 8) Slice steak against the grain in thin slices and add to salad platter.

SALAD NICOISE

Time 1h25m

Yield 4 servings

Number Of Ingredients 26

6 very fresh eggs
6 to 8 red-skinned or yukon gold potatoes, of a uniform, medium size (2-inch diameter)
1/2 teaspoon salt
1 pound very fresh, crisp, young, string-less green beans
2 tablespoons salt
1 tablespoon finely minced shallots or scallions
1/3 cup dry white wine
1/3 cup cold water
Salt and freshly ground black pepper
3 to 4 tablespoons excellent olive oil
1 large head Boston lettuce
Oil and Lemon Dressing, recipe follows
3 to 4 ripe red tomatoes quartered through the stem or 12 to 16 ripe full-flavored cherry tomatoes halved through the stem
1 (2-ounce) can or bottle anchovy fillets packed in olive oil
1 (8-ounce) can oil-packed chunk white tuna, drained
Fresh lemon juice
1 cup good mayonnaise
2 tablespoons capers (fine fat ones if possible)
1/2 cup small Italian or French black olives, pits in, and packed in brine
Fresh parsley sprigs
1/2 lemon, zested and juiced (at least 1 tablespoon)
1/4 teaspoon salt
Freshly ground black pepper
1/2 tablespoon Dijon mustard
1/2 tablespoon finely minced shallots or scallions
1/2 cup excellent olive oil

Steps:

  • With a push pin, pierce the large ends of eggs to release the air bubble, which otherwise can expand during cooking, cracking the egg shell. Into a 3-quart sauce pan place the eggs. Pour in 2 1/2 quarts of cold water. Bring just to the rolling boil, remove from heat, cover the pan closely, and set the timer for 17 minutes.
  • Transfer the eggs to a bowl of ice cubes and water, and let cool for 2 minutes (to shrink the egg body from the shell) while you bring the egg water back to the boil. Then transfer the eggs back into the boiling water and let boil for exactly 10 seconds (to expand the shell from the egg body).
  • At once, and 1 by 1, tap an egg gently all over on a hard surface to crack the shell and starting at the large end, peel under a thin stream of cold water. Return it to the iced water, and continue with the rest. Let them chill a good 20 minutes in the iced water?rapid cooling helps prevent the dark line between yolk and white.
  • Always store hard-boiled eggs in the refrigerator, submerged in ice water in an uncovered container, where they will keep perfectly 3 to 4 days.
  • Scrub the potatoes under running water with a vegetable brush, and place in a steamer basket over a saucepan containing 2 inches of water. Bring to the boil, lower heat to moderate, cover closely, and steam about 20 minutes or until cooked through?be sure they are really cooked through, cut one in half and taste carefully. Peel while still hot, halve them, cut into slices 1/4-inch thick.
  • In a 2-quart bowl, combine salt, shallots, wine, and water. Lift the potatoes gently into a the 2-quart bowl. Using a bulb baster, so as not to break the slices, baste the potatoes with the liquid. Taste for seasoning adding more salt, if needed, grinds of pepper, and several spoonfuls of the olive oil. Baste several times as the potatoes cool.
  • In a large kettle, set over moderately high heat, bring 6 quarts of water to the boil. Wash and drain the green beans, then snap off both ends. Add 2 tablespoons of salt to the boiling water and drop the beans into the kettle. Cover the kettle for a moment, just until it boils again. Uncover at once and boil slowly (moderate bubbles) for 3 to 4 minutes. The beans are done when just cooked through?taste one to be sure?just tender with the slightest crunch. Drain immediately. At once return the beans to the kettle and run cold water into it to cool the beans rapidly, adding a tray or two of ice cubes if you have them. When chilled, in 5 minutes or so, drain again, dry in a clean towel, and refrigerate in a covered bowl until ready to assemble salad.
  • Separate the lettuce leaves, wash, and spin dry. Shortly before serving so that all elements will remain at their freshest, toss the lettuce leaves in a large bowl with just enough dressing to coat them. Taste the potatoes, adding a little more seasoning if necessary. Halve the eggs. Toss the green beans with a spoonful of the dressing. Lightly salt the cut surfaces of the tomatoes and dribble over a little dressing. Open and drain the anchovies, separating them with a form. Drain the canned tuna, flake gently, and season with lemon juice and pepper. Arrange the largest lettuce leaves nicely around the sides of the serving bowl or platter, and make a bed of the remaining leaves in the center, where you will pile the potatoes. Place the egg yolks against the lower part of the potatoes, spoon a dollop of mayonnaise over each yolk, and decorate with crossed strips of anchovies and a sprinkling of capers. Divide the beans, tomatoes, and tuna into 6 portions, and place at strategic intervals around the potatoes.
  • Survey the platter, scattering black olives and tucking parsley springs wherever needed. Serve as soon as possible.
  • Grate the lemon peel into a screw-top jar, add the salt, several grinds of pepper, mustard, minced shallots, and 1 tablespoon lemon juice. Shake well to blend, then pour in the oil and shake vigorously again. Taste for seasoning, adding more lemon, salt and pepper if needed.
  • Yield: about 2/3 cup

Time 1h30m

Yield 4 servings

Number Of Ingredients 14

1/4 cup plus 1 tablespoon olive oil
1 clove garlic, finely grated
1/2 teaspoon dried crushed rosemary
Kosher salt and freshly ground black pepper
One 1 1/2-pound flank steak
1 pound red skinned potatoes (5 to 6 medium), sliced 1/4-inch thick
8 ounces green beans, trimmed
3 tablespoons red wine vinegar
1 tablespoon whole grain or Dijon mustard
1 tablespoon finely chopped shallot (about 1 small)
1 teaspoon honey
One 5-ounce bag baby spinach
1/3 cup pitted and halved kalamata olives
2 vine-ripe tomatoes, cut into large chunks

Steps:

  • In a small bowl, mix 1 tablespoon of the oil with the garlic, rosemary, 1 teaspoon kosher salt and 1/2 teaspoon pepper. Place the steak in a zip-top bag, add the marinade and rub the flank steak all over. Let stand for 30 minutes at room temperature to marinate and to allow the steak to come to room temperature.
  • While the steak marinates, place the potatoes in a medium pot, add a generous pinch of salt and cover with cold water. Bring to a boil, reduce the heat to a simmer and cook until the potatoes are tender and easily pierced with the tip of a knife, about 15 minutes. Add the green beans to the water in the last 5 minutes. Drain and set aside.
  • Preheat the grill over medium heat. In a medium bowl, whisk the vinegar with the mustard, shallots, honey, 1/2 teaspoon salt and pepper to taste until smooth. Whisk in the remaining 1/4 cup olive oil.
  • Grill the steak, flipping once, until the internal temperature reads about 130 degrees F, 7 to 8 minutes per side. Let rest on a cutting board for 10 minutes, and then thinly slice across the grain.
  • To serve, toss the baby spinach with 2 tablespoons of the dressing and divide among 4 plates. Evenly top with the potatoes, green beans, olives, tomatoes and sliced steak. Drizzle the remaining vinaigrette over the top and lightly season with salt and pepper.
