GARLIC SESAME GREEN BEAN STIR FRY
Steps:
- Gather all the ingredients.
- Finley dice garlic and set aside.
- Cut the ends off green beans and cut into 1/2 pieces. Set aside.
- In a large Teflon fry pan, add 1/2 tbsp Neutral Cooking Oil along with diced garlic on medium heat. Cook until garlic lightly brown, about 1-2 minutes, and transfer to a holding plate.
- In the same large Teflon fry pan, add another 1/2 tbsp of Neutral Cooking Oil on high heat. Once the oil reaches temp and starts to lightly smoke, add cut green beans (be careful for the oil splatter). Sprinkle in salt, black pepper, and White Pepper and cook for 2-3 minutes or until done to liking while occasionally stirring.
- Once green beans are cooked to liking, add in Sesame Oil and garlic chips from step 4), mix well and transfer to serving plate.

- Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
- Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.

- Stir-Fry Sauce: Combine the stir-fry sauce ingredients in a small bowl.
- Set aside.
- Stir- Fry: In a large skillet or wok.
- Heat the oil and stir-fry the green beans,until they are barely crisp-tender, about 2 minutes.
- Add water and continue stir-frying for another 2 minutes, until the beans are crisp-tender and the water has evaporated.
- Add the sauce and continue stir-frying for 5 or 6 more minutes.
- Until the beans are tender,BUT, not over cooked.
- Serve immediately.

- Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
- Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
- Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

- Combine the chicken broth, honey, sugar, rice vinegar, soy sauce, sesame oil and red pepper flakes (optional) in a small dish and whisk to combine. Set aside.
- Pat the tofu dry and cut into cubes. Heat one tablespoon of vegetable oil in a large nonstick skillet or wok over medium heat. Add tofu and cook until browned on all sides. Drain on paper towels and sprinkle lightly with salt.
- Add remaining tablespoon of oil to the skillet and increase the heat to high. Add the green beans and onion; cook until the green beans are blistered, about 5-7 minutes.
- Add snow peas and cook for another 2-3 minutes or until crisp tender.
- Add the tofu back to the skillet and reduce the heat to medium-low; give the sauce a quick whisk to reincorporate any ingredients that have settled to the bottom, then carefully add to the skillet. Add the sesame seeds. Stir to combine and cook until the sauce has thickened, about 2-3 minutes.
- Serve topped with scallions.
