BUTTERY STEAMED CABBAGE
It's surprising really, but simple buttered steamed cabbage is a delicacy. Steaming transforms this vegetable into a delectable dish.

Steps:
- Trim the cabbage, then shred it. To shred, cut the cabbage in half, then slice each half into thin slices and separate the slices with your hands into strips, as shown in the video below. Place the strips in a colander and rinse.
- Transfer the rinsed cabbage to a large, deep skillet, without drying it off - the water adhering to the cabbage will allow it to steam. You can a tablespoon of water to the bottom of the pan, but I usually don't find it necessary.
- Turn the heat to medium-high and cover the skillet. When the cabbage starts to steam, which should take about a minute, lower the heat to medium.
- Steam, covered, for about 5 minutes. Uncover, stir, and cook for 2 more minutes to allow any remaining water to evaporate. If you still have too much water in the pan, you can drain it into a colander.
- Add the butter, garlic, salt, and black pepper, stirring to combine. Cook for 2 more minutes, stirring, until the butter has melted. Garnish, if desired, with dried parsley and red pepper flakes. Serve warm.

This is another one of those simple recipes that takes minutes to make but are old fashioned good. The cabbage has beautiful color and it is still crisp. Brings out the flavor of the cabbage Use the other half of the cabbage for coldslaw etc.or invite more people over :-)

- Cut the 1/2 head of cabbage into 4 wedges, core removed.
- they should be about 1 1/2"-2" on the wide side.
- Place in a steamer, side by side, one cut side down.
- Steam for 6 minutes, flip carefully& steam for a further 6-8 minutes.
- Butter lightly, salt& pepper.
- Do not over cook.

- Heat a gas or charcoal grill. Whiz the limes, olive oil, fish sauce, garlic, cilantro, salt, cayenne and sugar in a small chopper or blender until the sauce is pale orange and the garlic is pulverized. Set aside. Remove the loosest, toughest outer leaves from the cabbage, and cut into 8 evenly-sized wedges. Do not remove the stalk or inner core. Lightly brush the wedges with grapeseed or canola oil. Place the wedges on the grill and cover. Cook for 5 to 7 minutes, or until the edges of each layer are blackened and the cabbage is beginning to soften. Flip each wedge over, cover the grill, and cook for an additional 5 to 7 minutes on the other side. Remove the cabbage when it is beginning to wilt, but is still firm in the middle. (This will also be somewhat a matter of taste; I like it fairly crispy still, but you may prefer it more well-done.) If necessary, turn the heat down or move the wedges to a cooler part of the grill so they don't burn. But don't be afraid of those blackened edges; you want a lot of grill and char marks on the cabbage to give it smoky flavor. Take the cabbage off the grill and arrange the wedges on a plate. Pour the dressing over top and serve immediate, with wedges of lime to garnish.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Cut the head of cabbage in half vertically through the core. Cut each half into 4 wedges. Place the wedges on the baking sheet.
- Combine butter, caraway seeds, and vinegar in small bowl. Brush 1/2 of the mixture over the wedges. Season with salt and pepper.

- 1. Cut the cabbage lengthwise into six wedges; remove most of the core from each wedge but leaving enough to keep the leaves intact. Place a steamer basket in a large saucepan or Dutch oven. Add enough water to reach just below the basket. Bring the water to a boil; add the cabbage wedges to the basket. Cover and steam until the cabbage is tender, 8 to 10 minutes.
- 2. Meanwhile, melt the butter in a small saucepan over medium heat. Add the chile, garlic, and salt. Cook, stirring for 1 minute. Remove from the heat. Transfer to a small bowl and let cool slightly. Stir in the lemon zest, lemon juice, and orange juice.

- Preheat oven to 350°F. Heat oil in an oven-proof skillet over medium-high. Add cabbage wedges to skillet and cook, flipping once, until charred, 8 to 10 minutes; transfer to a plate.
- Swirl 1 tablespoon oil, shallot, and chiles in skillet. Cook, stirring, until softened, 2 to 3 minutes. Stir in tomato sauce and 1 cup water; bring to a boil. CABBAGE WEDGES WITH CHEESE SAUCE
We celebrate St Patrick's Day with a big meal each year and cabbage usually plays some part in the feast. One year, a guest brought this cabbage dish to share and it was a big hit. She originally found the recipe in an issue of Taste of Home magazine. The chili sauce called for in this recipe is not particularly spicy (although hot versions are also sold) and is usually sold in a bottle in the ketchup aisle in US supermarkets. The brand I most often have used is Heinz.

- Cut cabbage into 8 wedges, leaving a bit of the core on each to help hold eachpiece together.
- Bring a pot of water to boil and steam cabbage wedges, covered, until crisp-tender, approximately 10-15 minutes.
- Drain and remove the core, then set wedges in a greased 9x13" casserole.
- For the sauce, in a medium pot, saute green pepper and onion in butter until tender.
- Add flour, salt and pepper, stirring quickly, and cook until it gets bubbly.
- Add milk slowly, whisking, then cook and stir until sauce thickens.
- Pour over cabbage.
- Bake, uncovered, at 375 F for 15 minutes.
- Meanwhile, mix together cheese,mayo, and chili sauce; ladle over the cabbage wedges and return to oven for 5 more minutes.
