These tasty little appetizers are a hit at gatherings. I usually make 1/2 of these without the horseradish when kids will be around. Plan ahead, as these need to chill. Time does not include chill time.

6 ounces cream cheese, room temperature
1 1/2 teaspoons horseradish
2 teaspoons heavy cream
6 slices boiled ham, sliced thin

Steps:

  • Combine cheese, horseradish, cream, and beat until smooth.
  • Spread over slices of ham.
  • Roll up ham jelly-roll style, starting at narrow end.
  • Wrap each roll in waxed paper and chill several hours or overnight.
  • Cut into 1/2-inch slices.
  • Serve with toothpicks.

If you lived in Kansas City from the late 60's to mid 90's you have no doubt visited Stephenson's Old Apple Farm Restaurant. The restaurant has since closed, but I was able to purchase an Stephenson's Restaurants Receipts Old Family Secret Recipes which has most of the Restaurants Signature dishes. I am happy to be able to bring this recipe to you to enjoy!

2 tablespoons butter
1/4 cup flour
1/4 teaspoon salt
1 cup hot milk
1/2 cup grated swiss cheese
1/2 cup tomato sauce
6 slices ready-to eat ham (thin slices)
1/4 cup evaporated milk
1/2 cup grated swiss cheese
2 tablespoons butter

Steps:

  • Sauce: Melt butter over low heat. stir in flour, salt to make smooth paste. Remove from heat. Stir in milk gradually until smooth. Add cheese. Stir over low heat to melt. Cool.
  • Roulades: Pour tomato sauce into 10x6x2 inch baking pan. Roll about 2 spoonsful of cheese sauce into each ham slice and roll ham slice, Place folded side down on tomato sauce. Blend evaporated milk into rest of cheese sauce. Pour over ham. Sprinkle with the 1/2 cup grated swiss cheese. Dot with butter. Bake at 350 degrees about 15 minutes or until hot and bubbly.

Roasted Chicken Roulade with American Triple Cream and Georgia Ham image

1/4 cup clover honey
1/4 cup Dijon mustard
1/4 cup whole-grain mustard
2 heaping tablespoons drained prepared horseradish
Kosher salt and freshly ground black pepper
1/4 cup canola oil, plus more for drizzling
1 clove garlic, chopped into a paste
Pinch of red chile flakes
4 ounces baby arugula
Four 6-ounce boneless, skinless chicken breasts
8 paper-thin slices country ham or prosciutto
8 ounces triple-cream cheese, such as Red Hawk
2 tablespoons unsalted butter
Micro arugula, for garnish

Steps:

  • For the mustard sauce: Whisk together the honey, Dijon mustard, whole-grain mustard and horseradish in a small bowl and season with salt and pepper. Cover and let sit to allow the flavors to meld while you make the chicken.
  • For the chicken roulade: Preheat the oven to 400 degrees F.
  • Heat 2 tablespoons of the canola oil over low heat in a large saute pan. Add the garlic and red chile flakes and cook for 30 seconds. Increase the heat, stir in the baby arugula, season with salt and pepper and cook until just wilted, about 2 minutes. Set aside.
  • Drizzle the chicken breasts with a little oil and thinly pound between 2 sheets of parchment paper or plastic wrap. Put the breasts on a flat surface skin-side down, and sprinkle the top sides with salt and pepper. Place 2 slices of the ham on each breast; spread 2 ounces of the cheese over the ham and then top with one-quarter of the arugula in the center. Roll the breasts tightly and tie with butcher's twine. Sprinkle the roulade with salt and pepper.
  • Heat a large ovenproof saute pan over high heat. Add the remaining 2 tablespoons oil and cook until it begins to shimmer. Put the rolls in the pan seam-side up and add the butter. Cook until golden brown on all sides, about 3 minutes. Transfer the pan to the oven and continue cooking until the breasts are just cooked through and the cheese has melted, 4 to 5 minutes.
  • Remove the rolls to a plate and let rest 5 minutes before slicing. Serve with the mustard sauce and topped with a bit of micro arugula.

GERMAN CHICKEN, HAM, AND CHEESE ROULADES



German Chicken, Ham, and Cheese Roulades image

A substantial and altogether winning appetizer. Flattened chicken breasts with thin slices of Westphalian or Black Forest ham, garlic and herbs rolled up and cooked in chicken stock and white wine. Chilled and sliced crosswise into rounds.

2 whole boneless skinless chicken breasts, halved (about 1 pound each)
4 slices Westphalian ham (thin slices) or 4 slices black forest ham (thin slices)
4 slices gruyere (thin slices) or 4 slices emmenthaler cheese (thin slices)
1 medium garlic clove, very finely chopped
1/4 teaspoon marjoram or 1/4 teaspoon sage
fresh ground white pepper
1/3 cup dry white wine
1/3 cup chicken broth
watercress or parsley sprig

Steps:

  • Place each chicken breast between sheets of plastic wrap and pound it lightly with the flat side of a cleaver or a wooden mallet until it is about 1/4 inch thick. Trim the slices of ham and cheese so that they are the same size as the flattened pieces of chicken. Place a slice of ham on each piece of chicken and cover the ham with a slice of cheese. Season with the finely chopped garlic, thyme, marjoram, or sage and white pepper. Roll up the pieces tightly and fasten with wooden picks, or tie securely with string.
  • Arrange the roulades in a greased baking sheet just large enough to hold them comfortably in one layer and pour the wine and broth over them. Cover with aluminum foil. Bake in a preheated 350°F oven 35 to 40 minutes or until the chicken is tender.
  • Transfer the roulades to a platter and cool to room temperature, then cover and chill. Remove the wooden picks or string. Slice the roulades crosswise into rounds and arrange on a chilled serving platter. Garnish with watercress or parsley sprigs and serve. Makes about 20.
  • VARIATION: In a medium sized, heavy skillet melt 2 Tablespoons Clarified Butter, or heat a mixture of 1 tablespoon each butter and flavorless vegetable oil or olive oil over moderate. Add the roulades and sauté, turning to brown lightly on all sides. Add the wine and chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer about 30 minutes or until the chicken is tender. Cool, chill, slice, and serve as directed above.

1 cup fresh breadcrumb

12 slices bottom round steaks (paper-thin slices) or 12 slices tenderloin (paper-thin slices)
1/2 cup olive oil
3 cups beef stock
1 1/2 cups dry red wine
1 bay leaf
1 (12 ounce) package spinach noodles

Steps:

  • Mix onions, garlic, celery, parsley, & bread crumbs.
  • Add salt, pepper, & Pamesan cheese.
  • Blend well.
  • Spread 1-2 tablespoons of filling on each slice of meat & sprinkle with olive oil.
  • Roll up & secure with toothpicks or string.
  • Brown rolls in small amount of olive oil.
  • Add stock, wine, & bay leaf.
  • Simmer for 30 minutes.
  • Remove meat & reduce liquid.
  • Serve rolls & sauce over noodles.
  • Garnish with parsley with desired.

¼ cup Dijon mustard
8 (4 ounce) pieces round steak, pounded 1/4 inch thick
½ cup minced onion
2 teaspoons paprika
2 teaspoons salt
2 teaspoons freshly ground black pepper
8 slices bacon
3 tablespoons canola oil
1 (12 ounce) can beef broth
1 ¼ cups water
2 tablespoons cornstarch
1 cup warm water
¼ cup sour cream

Steps:

  • Spread 1/2 tablespoon mustard over one side of each piece of meat. Sprinkle the onion, paprika, salt, and pepper evenly over the steaks. Lay one slice of bacon on each piece. Roll the steaks jelly-roll style and secure with toothpicks.
  • Heat the canola oil in a skillet over medium heat. Cook meat on all sides until browned. Add the beef broth and water; bring to a boil. Reduce heat to medium low; cover and simmer until tender, about 30 minutes.
  • Remove the meat rolls. Strain the broth mixture and return liquid to the skillet. Whisk together the cornstarch and 1 cup of water. Slowly pour the cornstarch slurry into the skillet, stirring continually until the sauce has thickened, 2 to 3 minutes. Stir in the sour cream. Return rolls to the sauce; serve immediately.

If you lived in Kansas City, Mo from the late 60's to mid 90's to probably had gone to Stephenson's Restaurants the original being at 40 Highway and Lee's Summit Road. They have long since been closed, however I was able to purchase a recipe book called Stephenson's Restaurants Receipts Old Family Secret Recipes that have some of the original restaurants popular dishes. The Apple Fritters were a signature dish,. This is a wonderful recipe and I am glad I was able to share it again with those who remember it.

1 cup milk
1 egg (beaten)
4 tablespoons margarine
1/2 cup sugar
1/2 teaspoon salt
1 orange, juice and zest of
1 cup apple (chopped fine)
3 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
4 cups vegetable oil, to fry fritters enough they float in a pot

Steps:

  • Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla. Sift together the flour, salt, baking powder and stir into milk mixture with a spoon until blended. Do not over mix. Preheat oil in a skillet to 350 degrees. drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool. Roll in powdered sugar. Serve with salads or eat as dessert.

This is a very simple supper, good way to use leftover Holiday ham, this came from Crisco Cookbook. This is a 'soupy' version, not the pretty 'slice' type.

1 1/2 cups herb seasoned stuffing mix, crushed
1/3 cup Crisco shortening, melted
2 tablespoons water
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup milk
2 cups cubed low-sodium ham
1 cup canned peas
1/2 cup shredded American cheese (or your choosing)
1 (3 ounce) can chopped mushrooms
1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 425 degrees, In a bowl, combine the stuffing mix, melted shortening, and water; set aside 1/2 cup of the mixture for the topping.
  • Press remaining crumbs into a 9 inch pie plate. I use Pyrex. *Mixture will barely cover.
  • In a saucepan, combine the soup and milk; add ham, peas, cheese, mushrooms, and onion.
  • Heat through.
  • Turn into the crumb shell. Place on foil-lined cookie sheet.
  • Sprinkle with the reserved 1/2 cup crumb mixture.
  • Bake at 425 degrees for 10 minutes.

8 turkey breast cutlets (about 1 pound)
1 tablespoon Dijon-mayonnaise blend
8 slices deli ham

1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
8 bacon strips
SAUCE:
2/3 cup Dijon-mayonnaise blend
4 teaspoons 2% milk
1/4 teaspoon poultry seasoning

Steps:

  • Bring 4 cups water to a boil in a large saucepan. Add asparagus; cook, uncovered, for 3 minutes or until crisp-tender. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Spread the turkey cutlets with Dijon-mayonnaise. Layer with ham, cheese and asparagus. Sprinkle with poultry seasoning and pepper. Roll up tightly and wrap with bacon., Cook roulades in a large skillet over medium-high heat until bacon is crisp and turkey is no longer pink, turning occasionally, 12-15 minutes. Combine sauce ingredients; serve with roulades.

If you lived in Kansas City you have no doubt visited this restaurant. I am glad I am able to bring this recipe for you to enjoy.

1/2 cup flour
1 1/2 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1/2 cup nonfat dry milk powder
1 cut-up frying chicken
1/4 cup butter
1 1/2 cups hot water

Steps:

  • Dip chicken into water. Coat with mixture of flour and seasonings. Put skin side up into 13x9x2 inch baking pan. Dot with butter. Bake at 425 degrees for 30 minutes (or until golden brown). Remove from oven. Mix 1/2 cup Nonfat Dry Milk Powder with 1 1/2 cups hot water. Pour milk around chicken. Cover with aluminum foil. Return to oven and bake at 350 degrees for 45 minutes.

These look elegant and are unbelievably easy. Is there anything better on salmon than sesame seeds? Yum. Twenty-five minutes!

12 ounces salmon fillets (or 2 each)
salt & freshly ground black pepper
2 tablespoons sesame seeds
3/4 tablespoon olive oil
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1 cucumber, sliced very thinly lengthwise (optional)

Steps:

  • Slice each fillet horizontally, leaving one end untouched; turn over, spread open and salt and pepper; roll the fillet up, turban-like, as tightly as possible using a toothpick to fasten; repeat with the remaining fillet.
  • Put sesame seeds in a small saucer; stand a roulade up in the seed, coating the bottom and drizzle a bit of the olive oil on that side; repeat on the other side; repeat with the other fillet.
  • Grill or broil fillets on aluminum foil about 4 minutes, turn and cook opposite side another 6 minutes or until desired doneness.
  • Whisk vinegar and soy sauce together; remove cooked fillets from grill, drizzle with soy mixture and serve on a bed of cucumber strips.
