Sticky baked meatloaf with avocado & black bean salsa image

A healthy and satisfying family supper with lean turkey mince and protein-packed quinoa, with a sticky onion glaze

1 tbsp rapeseed oil , plus a little for greasing
2 large onions , halved and thinly sliced
4 large garlic cloves , grated
1 tsp allspice or mixed spice
1 ½ tsp fennel seeds
2 tbsp smoked paprika
2 tbsp tomato purée
50g quinoa
160g grated carrot
1 tsp dried oregano
½ tsp ground cumin
400g pack turkey leg and breast mince
1 large egg
1 tsp black treacle
400g black beans , drained
1 small red onion , finely chopped
1 avocado , finely chopped
2 tomatoes , finely chopped
½ small pack fresh coriander , chopped
1 red chilli deseeded and finely chopped (optional)
juice 1 lime

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line a deep 500g loaf tin with baking parchment. Heat the oil in a large, non-stick frying pan. Add the onions and fry for 10 mins, stirring occasionally until golden. Stir in the garlic and spices, toast over the heat for 3 mins, then add the purée. Scrape half into a small bowl for the topping.
  • Stir the quinoa and 4 tbsp water into the frying pan and cook for 2 mins. Tip into a bowl, leave to cool for 5 mins, then add the carrot, oregano, cumin, turkey mince and egg. Season with black pepper and mix well. Pack into the greased tin and bake, uncovered, for 35 mins until firm.
  • Meanwhile, mix all the salsa ingredients in a serving bowl, and add 3 tbsp water to the remaining onion mixture with the black treacle.
  • When the meatloaf is cooked, carefully turn it out of the tin onto a shallow ovenproof dish and spread the onion mixture over the top. Return to the oven, bake for 10 mins more, then slice and serve with the salsa.

1 cup canned black beans (about half a 15-ounce can), drained and rinsed
2 tablespoons chopped fresh cilantro
2 tablespoons finely diced red onions
1/4 teaspoon ground cumin
2 plum tomatoes, seeded and diced
1 lime, juiced
1/2 red or green bell pepper, diced
1/2 jalapeno, finely diced
Salt and freshly ground black pepper
2 medium avocados (not too ripe), sliced in half and pitted
1 tablespoon olive oil
1/2 teaspoon chile powder
Salt and freshly ground black pepper
Tortilla chips, for serving

Steps:

  • Prepare a grill for medium-high heat.
  • For the black bean salsa: Stir together the beans, cilantro, red onions, cumin, tomatoes, lime juice, bell peppers and jalapenos in a medium bowl until well incorporated. Season with salt and pepper.
  • For the grilled avocado: Brush the cut sides of the avocados with olive oil and place on the grill cut-side down. Cook until charred, about 1 minute. Season with the chile powder and some salt and pepper.
  • To serve, fill the cavity of each avocado with the salsa and serve with tortilla chips.

This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

3 (15 ounce) cans black beans, drained and rinsed
1 sleeve buttery round crackers (such as Ritz®), crushed
1 cup shredded Cheddar cheese
1 cup diced multi-colored bell peppers
⅔ cup frozen corn kernels
½ cup diced onion, or to taste
24 slices jalapeno pepper, diced
1 egg white
1 (1 ounce) packet hot taco seasoning mix
1 (1 ounce) package spicy Ranch-style seasoning mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
  • Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
  • Bake in the preheated oven until cooked through, 45 to 60 minutes.

This has to be my favorite summer salsa. It's colorful and fresh tasting. It makes a bunch, so invite some friends over. I like to take the lime after it's been juiced and rub down the bowl I will be serving the salsa in. I also rub the lime on the plastic wrap this will help keep the avocados from turning brown. Don't forget the tortilla chips!

1 (14 ounce) can black beans, rinsed and drained
2 cups frozen corn kernels
1 cup cilantro, roughly chopped
½ red onion, chopped
1 ½ limes, juiced
2 tablespoons extra-virgin olive oil
2 teaspoons hot sauce
1 ½ teaspoons ground cumin
salt and ground black pepper to taste
1 avocado, diced

Steps:

  • Mix black beans, corn, cilantro, red onion, lime juice, oil, hot sauce, cumin, salt, and pepper together in a large bowl. Lightly toss in avocado immediately before serving to ensure it does not turn brown.

Cottage Cheese, Avocado, and Black Bean Salsa image

This may look and sound sort of bad, but let me tell you, there isn't a tastier, nutritious, salsa-like dip to hold you over while you wait for dinner. Funny enough, this was created as an experiment with leftovers, and now I have over 15 friends making it on a regular basis! This is a great recipe that can be stored in the refrigerator for several days for a quick, anytime snack. (Frozen corn, heated and cooled in the same manner, may be used in place of the corn on the cob.)

1 ear corn, husked and cleaned
1 (15 ounce) can reduced sodium black beans
1 (32 ounce) container 1% fat cottage cheese
1 avocado - peeled, pitted, and diced
2 roma (plum) tomatoes, seeded and diced
2 cups salsa
1 (13.5 ounce) package tortilla chips, if desired

Steps:

  • Place corn on the cob in a microwave safe dish with 1/4 inch of water. Cover, and microwave on medium high for 4 minutes, or until tender. Cool under running water, and slice kernels from cob. Set aside.
  • Cook the black beans in a small saucepan over medium heat until warm and tender, about 10 minutes. Strain, and rinse under cold water to remove liquid and excess sodium. Set aside.
  • Place the cottage cheese in a mixing or serving bowl. Peel, pit, and dice the avocado into bite size pieces, and add to the cottage cheese. Cut the tomatoes in half lengthwise, remove seeds, and dice into bite size pieces. Add to the cottage cheese along with the corn, black beans, and salsa. Stir until well blended. Cover and refrigerate until ready to serve. Serve with tortilla chips, if desired.
