Steps:
- Combine the beef, onion and celery. Season with salt and pepper and combine well.
- Stir in the herbs and mustard.
- Divide the mixture into 8 equal portions.
- Place 4 on a work surface and flatten slightly.
- Place the crumbled cheese in the center of each.
- Flatten the remaining 4 portions and place on top.
- Mold together, encasing the crumbled cheese and shape into 4 burgers.
- Grill under moderate heat for 10 minutes, turning once.
- Split the burger buns and serve the burger on these.

- Preheat grill to medium-high heat.
- Heat a large skillet over medium heat; add oil to pan.
- Add sliced onion and 1/4 teaspoon salt; cook 18 minutes or until golden, stirring occasionally.
- Combine 1/4 teaspoon salt, beef, and next 4 ingredients; toss gently.
- Divide mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.
- Place patties on a lightly sprayed grill rack; grill 4 minutes on each side or until desired degree of doneness.
- Top each patty with 1 tablespoon cheese during last 2 minutes of cooking.
- Place cut sides of rolls on grill rack; grill for 1 minute.
- Place bottom halves of rolls on 4 plates; top each serving with 1 lettuce leaf, 1 tomato slice, 1 patty, 1/4 cup onion mixture, and 1 roll top.

Steps:
- Heat oven to 200C/fan 180C/gas 6. Using scissors, snip open the sausage skins and squeeze the meat into a bowl. Add the breadcrumbs, 2 tbsp chutney and the sage, then mix well with your hands. Divide the mix into 4, then shape into burgers, pushing the chunks of cheese into the middle of each patty. Make sure the cheese is completely sealed in or it will leak out during cooking.
- Place the burgers on a baking tray, then cook for 25 mins until browned and cooked through to the middle. Split open the buns, stuff with your favourite salad, then top with a burger and some of the remaining chutney.

- In a skillet, heat the oil. Add the onion and a pinch of salt and cook over moderately low heat, stirring, until softened, about 10 minutes. Add the red wine, vinegar, honey and thyme and simmer, stirring, until the liquid has evaporated, 15 minutes. Season the onion jam with salt and pepper; discard the thyme.

- In a small saucepan, cook the port over moderate heat until reduced to 2 tablespoons, about 15 minutes.
- Heat a cast-iron griddle until very hot. Form the meat into four 4-by-1-inch patties without packing too tightly. Season generously with salt and pepper. Arrange the patties on the griddle, cover with a roasting pan and cook over moderately high heat for 4 minutes, until very crusty. Flip the patties and cook, covered, for 2 minutes longer; top with the Stilton and cook uncovered for 1 minute. Transfer the patties to a plate and sprinkle with the umami dust, let rest for 2 minutes and set on the buns. Drizzle with the reduced port, top with the buns and serve.
