BITTER MELON AND BLACK BEAN SAUCE BEEF
A classic Chinese dish that can be made with chicken instead of beef. If chicken is used, cooking time will be more depending on the thickness of the chicken pieces.

- Fill a bowl with ice; add enough salted water to make an ice bath. Bring a large pot of lightly salted water to a boil. Cook the bitter melon in the boiling water until tender yet firm, about 2 minutes; strain the melon. Place the melon into the ice bath; allow to sit until bitterness is extracted, about 1 hour. Drain melon.
- Whisk 1 teaspoon soy sauce, 1 teaspoon cornstarch, and baking soda together in a bowl. Add beef and toss to evenly coat. Marinate in the refrigerator for 1 hour.
- Heat wok, or a large skillet, on high until smoking. Add 1 tablespoon oil. Lay beef evenly across the bottom of the wok; cook until browned, about 2 minutes per side. Remove beef. Pour in 1 teaspoon of oil; allow to heat. Add onion, garlic, and ginger; cook and stir until fragrant, about 30 seconds. Stir in bitter melon; cook until combined, about 1 minute.
- Stir black bean sauce into melon mixture. Stir in remaining soy sauce, oyster sauce, and sugar. Pour in 3/4 cup water; cover and let simmer until flavors combine, 2 to 3 minutes. Uncover and mix in remaining cornstarch and 1 teaspoon water and stir until thickened.

STIR-FRIED BEEF AND BITTER MELON

- 1. Soak fermented black beans. 2. Cut bitter melon lengthwise in half. Scoop out seeds then cut in 1/4-inch slices. Parboil 2 to 3 minutes. 3. Slice beef thin against the grain. Combine cornstarch, soy sauce, salt and sugar. Add to beef and toss to coat. 4. Blend water and remaining cornstarch to a paste. Drain soaked black beans. Mince garlic and mash with beans. 5. Heat oil. Add remaining salt, then beef. Stir-fry until beef loses its redness (about 2 minutes). Remove from pan. 6. Heat remaining oil. Add black bean mixture and stir-fry a few times. Add bitter melon and stir-fry to heat and coat with oil (about 1 minute). 7. Stir in stock and heat quickly. Cook, covered, 2 minutes, over medium heat. 8. - Heat the olive oil in a skillet over medium heat. Cook the onion and garlic in the hot oil until fragrant, about 5 minutes. Mix the pork into the onion and garlic; cook until no longer pink, about 5 minutes. Stir the prawns into the mixture and cook until no longer translucent, about 5 minutes more. Add the tomatoes; season with salt and pepper. Continue cooking until the tomatoes soften, about 5 minutes. Stir the bitter melon through the mixture and cook until the melon is tender, about 5 minutes. Serve hot.

- Start by mixing the sliced beef with the marinade ingredients (cornstarch, baking soda, oyster sauce, shaoxing wine, light soy sauce and water). Marinate the beef for 20 minutes.
- To prepare the bitter melon, cut each melon in half lengthwise, and use a spoon to scoop out the seeds. Scrape all the white parts clean, because the white parts cause the bitterness. Then slice the melon on a 45-degree angle into thin slices.
- Prepare an ice bath and set aside. Boil a pot of water, and stir in 1 tablespoon each of salt and baking soda. Blanch the bitter melon for 1 minute, and use a slotted spoon to immediately transfer the bitter melon to the ice bath. Drain and set aside.
- Preheat the wok over high heat. Add 1 tablespoon of oil and sear the beef for about 45 seconds. Remove from the wok and set aside.
