This is a delicious way to enjoy shredded beef without all the thick barbecue sauce with all the flavor.

1 pound rump roast
1 cup water
¼ cup barbeque sauce
2 tablespoons honey
1 tablespoon steak seasoning
1 teaspoon cumin
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Place the rump roast and water in a slow cooker. Cover, and cook 5 hours on High.
  • Remove the roast from slow cooker, and shred using two forks. Discard fat.
  • In the slow cooker, mix the barbeque sauce, honey, steak seasoning, cumin, onion powder, and garlic powder. Stir in the shredded beef.
  • Cook 1 hour on Low. Allow to sit for 10 minutes before serving.

Stir-Fried Shredded Beef With Peppers image

I don't remember where the exact recipe came from. I think maybe one of the little Betty Crocker books you see at the checkout stand. I did change a couple things to suit our family's tastes. Everyone likes the flavors here and it's fairly quick to make. The longest part is cutting the meat. If the meat is partially frozen - it makes the job easier. Yield is approximate.

1 lb boneless beef sirloin or 1 lb round steak
1 tablespoon cornstarch
2 teaspoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon white pepper
2 medium bell peppers
3 green onions
2 teaspoons cornstarch
1 teaspoon water
2 teaspoons soy sauce
1/2 teaspoon sesame oil
3 tablespoons vegetable oil
1 teaspoon ground ginger

Steps:

  • Trim fat from beef steak.
  • Cut beef into very thin strips.
  • Toss beef, 1 TBSP cornstarch, 2 tsp oil, the salt and pepper in ziploc bag. Refrigerate at least 30 minutes.
  • Cut bell peppers into thin strips.
  • Cut green onions into 1 inch pieces.
  • Mix 2 tsp cornstarch, water, soy sauce and sesame oil. Set aside.
  • Heat skillet or wok until very hot.
  • Add 3 TBSP vegetable oil; rotate skillet to coat bottom.
  • Add beef and ginger. Stir-fry 1 minute or until meat is browned.
  • Add bell peppers; stir-fry 1 minute.
  • Stir in cornstarch mixture; cook and stir 15 seconds or until thickened.
  • Stir in green onions.
  • Serve over hot rice.

1 pound lean beef
2 stalks celery
1/2 red chili pepper
1 tablespoon cornstarch
1/2 teaspoon salt
1 egg white
oil for deep-frying
1 tablespoon oil
1 tablespoon soy sauce
1/2 teaspoon sugar
1/2 to 1 teaspoon , hot red pepper oil

Steps:

  • 1. Cut beef against the grain, then shred. Shred celery. Crush chili pepper. 2. Blend cornstarch, salt and egg white. Add to beef and toss gently to coat. Meanwhile, heat oil. 3. Place beef in a wire basket or strainer. Immerse in oil, deep-fry 1 minute then lift out. Reheat oil and deep-fry 1 minute more. Repeat process a third time, then drain beef on paper toweling. 4. Heat remaining oil. Add celery and chili pepper. Stir-fry a few times to soften slightly. Stir in soy sauce, sugar and hot pepper oil. Stir-fry until celery is translucent (about 2 minutes). 5. Stir in beef shreds only to reheat. NOTE: This Szechwanese dish may be served over rice or boiled rice-flour noodles. (The triple-frying makes the meat dark and chewy.)
