SICHUAN PORK, BROCCOLI & CASHEW STIR-FRY
A Chinese-inspired one-pan supper with crunchy greens and nuts, and a rich chilli and soy sauce

Steps:
- In a small bowl, mix together the sauce ingredients and set aside. Heat the oil in a large wok. Season the pork and sear in batches, then remove and set aside.
- Fry the garlic until golden - about 30 secs - then add the broccoli and onions. Stir-fry for 2 mins, then add the pork and cashews along with the sauce. Keep stir-frying for another 2-3 mins until everything is hot and simmering.

PORK AND BROCCOLI STIR-FRY
All the ingredients can be adjusted to suit taste. If you like spicy then add in about 1 teaspoon or more dried red pepper flakes. Can use either red or green bell pepper or use both, and 1 teaspoon fresh minced ginger can be replaced with the dry ginger.

Steps:
- Partially freeze the pork to make slicing easier.
- Cut acrooss the grain into 1/4-inch thin strips; set aside.
- Slice the broccoli stalks into 1/4-inch pieces and cut the tops into florets; set aside.
- In a small bowl whisk together the broth, cornstarch, oyster sauce, soy sauce and ginger powder; set aside.
- Heat oil in a wok or large skillet until hot, turning the wok to coat sides.
- Add in the pork strips broccoli STALKS (the florets will be added in later), bell pepper, fresh garlic and dried chili flakes (if using) stir-fry for 3-4 minutes or until the pork is browned.
- Leaving the pork mixture in the wok and add in the broccoli florets, mushrooms and green onions; stir fry for 2 minutes.
- Add in the broth/cornstarch mixture gradually to the wok; tossing well to coat with meat and veggies; cook for 3 minutes or until thickened and bubbly, stirring occasionally and adding in more oyster sauce and/or soy sauce to taste.
- Season with black pepper to taste if desired.
- Serve with hot cooked rice.

- In a medium bowl, combine orange zest and juice, soy sauce, vinegar, and cornstarch; set stir-fry sauce aside.
- In a large nonstick skillet, heat 1 teaspoon oil over medium. Working in two batches, cook pork until browned on one side, 1 to 2 minutes (pork will cook more in step 4). Transfer to a plate and set aside; reserve skillet.
- Add remaining teaspoon oil, garlic, and scallion whites to skillet. Cook, stirring occasionally, until scallions wilt, 1 to 2 minutes. Add broccoli and 1/2 cup water; cover and cook until broccoli is crisp-tender and water has evaporated, 2 to 4 minutes.
- Add pork (with any juices) and stir-fry sauce to skillet. Cook, stirring, until pork is cooked through and sauce has thickened, 1 to 2 minutes. Top with scallion greens.

BROCCOLI WITH GARLIC BUTTER AND CASHEWS
A new recipe a neighbor gave us. What a hit with my family. Just the right mixture of garlic and cashews with our favorite side dish, broccoli. And, so very easy to make!! If in a pinch, you could probably use frozen broccoli too, but I haven't tried.

Steps:
- Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
- While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

I found this several years ago in Cooking Light magazine and have modified it slightly to suit our tastes. It is one of my "go to" meals as it is quick, delicious and very figure friendly.

Steps:
- Spray non-stick skillet with cooking spray and place over medium heat.
- Add onion and cook 8 minutes, stirring occasionally. Remove from pan and set aside.
- Recoat pan with cooking spray and stir fry broccoli 3 minutes.
- Add broccoli to onion.
- Spray pan again and fry pork and red pepper for 4 minutes or until pork loses its pink color.
- Reduce heat. Stir in the green onions, sugar, ginger, and garlic and cook 30 seconds.
- Stir in onion and broccoli.
- Add chicken broth and soy sauce.
- Cook 1 minute.
- Drizzle with sesame oil and sprinkle with cashews.
- Serve over rice.

STIR-FRIED BROCCOLI WITH CASHEWS

- Cut off the florets of 1 bunch broccoli; peel and thinly slice the stems. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat; add 4 smashed garlic cloves and 4 thin slices ginger and stir-fry until just golden, 1 minute. Add the broccoli, 1/4 teaspoon kosher salt and 1/2 cup water. Stir-fry until crisp-tender, 4 minutes. Stir in 2 tablespoons oyster sauce, a splash of white vinegar and some cashews.
STIR FRIED PORK AND BROCCOLI WITH CASHEWS

- Using a sharp knife, slice the pork tenderloin into 1/4-inch thick slices across the grain. Cut each slice crosswise at 1/4-inch intervals so that you have long thin pieces of meat. Transfer pork to a small bowl, add 1 tablespoon of the soy sauce, the rice wine, and toss until thoroughly combined. Refrigerate for at least 30 minutes. In a small bowl combine 1/4 cup of the chicken broth, the 2 remaining tablespoons of soy sauce, the cornstarch, oyster sauce, sesame oil and crushed red pepper and set aside. Heat a wok over high heat until hot. Add the cooking oil and, when hot, add the pork. Stir-fry until no longer pink, about 1 minute. Transfer the pork to a plate and cover loosely with aluminum foil to keep warm. Add the onion and garlic to the wok and cook until slightly softened and fragrant, about 30 seconds. Add the broccoli and remaining 1/2 cup of chicken stock and cook, stirring, until the broccoli is tender-crisp, about 3 minutes. Add the soy sauce mixture and cook for 1 minute, or until the sauce is thickened. Return the pork to the wok and add the cashews. Toss to thoroughly combine and serve immediately with rice, garnished with the green onions. - Heat a little of the oil in a wok and toast the cashew nuts until they start to turn golden. Tip out of the pan, then add the rest of the oil. Stir-fry the broccoli for 2-3 mins until it has turned bright green (it will still be very firm).
- Add a splash of water to the pan, then cover with a lid and steam for about 4 mins or until the stems just give with a knife. Push to the side of the pan, then pour the oyster sauce into the other side. Bring to the boil, then stir into the broccoli. Toss in the cashews and serve.
