An easy steak stir-fry sitting on baby spinach and smothered in Balsamic vinaigrette makes for an extremely flavorful salad.

¼ cup peanut oil
2 tablespoons soy sauce
1 teaspoon ground black pepper
1 pound skirt steak, sliced into strips
½ green bell pepper, chopped
¼ onion, chopped
2 tablespoons chopped green onion
1 tablespoon chopped fresh ginger root
1 tablespoon chopped serrano pepper
1 cup fresh baby spinach
¼ cup balsamic vinaigrette salad dressing

Steps:

  • Whisk together the peanut oil, soy sauce, and pepper in a bowl; pour into a resealable plastic bag. Add the steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 12 to 24 hours.
  • Cook and stir the steak and the marinade in a large skillet over medium heat. Stir in the bell pepper, onion, green onion, ginger, and serrano pepper. Cook until the steak is evenly brown. Serve over a bed of spinach with the balsamic vinaigrette.

3 tablespoons vegetable oil
2 large eggs
Kosher salt and freshly ground pepper
12 ounces sirloin steak, trimmed and cut into 1/2-inch-thick pieces
2 carrots, diced
2 stalks celery, diced
1 leek (white and light green parts only), thinly sliced and well rinsed
3 cloves garlic, minced
1 1-inch piece ginger, peeled and minced
2 cups frozen grain-and-rice blend, thawed
2 cups sugar snap peas, halved
2 tablespoons low-sodium soy sauce

Steps:

  • Heat 1 teaspoon vegetable oil in a large nonstick skillet over medium heat. Whisk the eggs with 1 tablespoon water and a pinch each of salt and pepper. Pour into the skillet and stir a few times with a rubber spatula to spread. Cook, undisturbed, until just set, about 2 minutes. Fold into thirds like an omelet and transfer to a plate.
  • Wipe out the skillet and heat 1 tablespoon vegetable oil over high heat. Season the steak with salt and pepper. Add to the skillet and cook, stirring, until the meat just starts browning, about 3 minutes. Transfer the steak to a bowl and set aside. Wipe out the skillet and heat the remaining 1 tablespoon plus 2 teaspoons vegetable oil. Add the carrots, celery and leek and stir-fry until slightly softened, about 2 minutes. Add the garlic and ginger and stir-fry until just softened, about 2 minutes. Add the rice blend and stir-fry until warmed through, about 2 minutes.
  • Pour off any collected juices from the steak; add the steak to the skillet along with the peas and soy sauce. Stir-fry until the peas are tender, 2 to 3 minutes. Slice the eggs into strips; stir into the rice.

2 boneless New York strip steaks (1 3/4 pounds total; each 1 1/2 inches thick)
Coarse salt and ground pepper
3 medium carrots, shredded
1 mild green chile, such as Anaheim, thinly sliced
1/2 cup chopped fresh parsley
1/4 small red onion, diced small
1 tablespoon rice vinegar
1 teaspoon sugar

Steps:

  • In a medium saucepan, bring rice and 1 1/2 cups water to a boil over high. Stir, cover, and reduce heat to low. Cook rice 15 minutes, remove from heat, and let stand, covered, 5 minutes.
  • Meanwhile, heat broiler, with rack in top position. Place steaks on a broiler-proof rimmed baking sheet and season with salt and pepper. Broil until medium-rare, about 10 minutes, flipping once. Transfer to a cutting board, tent with foil, and let rest 5 minutes.
  • Transfer rice to a large bowl. Add carrots, chile, parsley, onion, vinegar, and sugar. Season with salt and pepper and toss to combine. Thinly slice steak against the grain and serve with rice.

1/2 pound dried flat rice noodles, 1/8 inch thick
1/4 cup light-brown sugar
3 tablespoons white vinegar
3 tablespoons Asian fish sauce (nam pla)
1 tablespoon tamarind paste, mixed with 1 tablespoon water, or 2 tablespoons molasses
1/4 teaspoon coarsely ground dried red chiles, or to taste
1 tablespoon dried shrimp, minced
2 tablespoons canola oil
2 shallots, minced
2 large cloves garlic, minced
Salt
1/4 pound string beans, trimmed and thinly sliced lengthwise
1/4 pound sugar-snap peas, cut in half
12 medium shrimp (1/2 pound), peeled and deveined
1 cup fresh bean sprouts
3 scallions (green parts only), very thinly sliced on the diagonal
1 tablespoon roasted peanuts, coarsely chopped, for garnish
1 lime, quartered lengthwise, for garnish
Fresh cilantro sprigs, for garnish

Steps:

  • Soak noodles in warm water for 20 minutes, or until softened; drain well. Meanwhile, combine 1/4 cup water, sugar, vinegar, fish sauce, tamarind mixture, and dried chiles in a small saucepan. Simmer, stirring, for 5 minutes. Remove from heat, add dried shrimp, and set aside.
  • Heat oil in a large nonstick skillet or wok over medium heat. Add shallots and garlic, and stir-fry for 2 minutes. Stir in sugar mixture, and reduce heat to lowest possible setting. Bring a medium saucepan of salted water to a boil. Add string beans, and cook for 1 1/2 minutes. Add sugar-snap peas, and continue cooking for 30 seconds. Drain, and set aside.
  • In another large nonstick skillet, cook shrimp over medium-high heat, 3 minutes per side. Meanwhile, add noodles, a quarter of the bean sprouts, and half the scallions to the shallot mixture. Raise heat to high, and boil, stirring, for 2 minutes. Add shrimp, string beans, and sugar-snap peas, and stir for 1 minute more. Turn out noodles onto a platter, sprinkle with peanuts and remaining scallions, and arrange lime quarters, coriander sprigs, and remaining bean sprouts beside them.

1/4 cup chopped red onion

1 medium tomatoes, chopped

Steps:

  • Cut beef into thin strips. In a wok or large skillet, heat 1 tablespoon oil until very hot.
  • Add beef and stir fry for 2-3 minutes, until beef is browned outside but still pink in the center. Remove to a plate.

2 cups brown rice
1 lb sirloin steak
2 tablespoons olive oil
1/2 garlic clove, minced
1/2 teaspoon red wine vinegar
1/4 teaspoon kosher salt
1/4 teaspoon fresh coarse ground black pepper
1 onion, sliced (I prefer cippollini)
1 tomatoes, diced

Steps:

  • Cook rice fully before starting meat.
  • Fill large saucepan with 4 c water & 2 c brown rice. Bring to boil. Reduce heat, cover, & simmer 50 minutes. Set aside.
  • Trim fat from steak and cut into small, thin pieces.
  • In a large skillet, heat oil and sauté garlic until garlic is golden.
  • Add steak, vinegar, salt, and pepper. Cook for 6 minutes, stirring beef until brown.
  • Add onion and tomato. Cook until onion is transparent. Stir in rice until well mixed.
  • Note: My husband hates onions, but loves the flavor they do give this dish. To appease him, I cook with the onions & remove them prior to adding the rice.

  • Cook your rice according to the package, then transfer the cooked rice to your refrigerator to cool (it doesn’t need to be cold, just not hot). Go ahead and set your frozen corn on the counter to thaw a bit.
  • While the rice cools, pan fry the strip steak with olive oil and a generous amount of the steak seasoning of your choice on both sides. I love to use my cast iron skillets for this.
  • Keep watch on your strip steak so that you don’t overcook it (cook it how you like it!), but proceed to chop up your veggies in the meantime. Dice the peppers (the more colorful the peppers, the better, in my opinion!) and red onion, then combine them in a large bowl with the kidney beans and corn. Add your rice and stir.
  • When your strip steak is done, slice into bite-sized pieces and add them to your large bowl of veggies and rice.

Mash chiles and garlic with the flat side of a chef’s knife on cutting board, alternating chopping and mashing, until broken down into a coarse paste. Transfer to a large bowl. Add lime juice, fish sauce, honey, and 1 Tbsp. oil, stirring vigorously to dissolve honey.
  • Place steak in a medium bowl and pour 3 Tbsp. dressing over, holding back any pieces of chile with a spoon; reserve remaining dressing in bowl. Let steak marinate, turning every minute or so, at least 10 minutes or up to 1 hour.
  • Meanwhile, bring a medium pot of salted water to a boil. Remove from heat, add noodles, and cover. Let sit, stirring every minute to keep from sticking, until noodles are al dente, 5–8 minutes. Drain and rinse under cold running water. Drain well again and set aside.
  • Combine cabbage, daikon, and cucumbers in a large bowl; season lightly with salt. Massage with your hands to release excess water. Drain off any water that pools in bottom of bowl.
