STOVE TOP SMOKER PORK TENDERLOIN WITH GREEN PEPPERCORN SAUCE
Save a little tenderloin to serve cold with slice tomatoes for tomorrow's lunch. From the Cameron Cooking Guide. This recipe is to be made using a stove top smoker.

- Trim tenderloins of all fat and fell. Rub with olive oil and thyme.
- Smoke on medium high for 25 minutes. DO NOT OVERCOOK!
- Let stand for 10 minutes, and serve with sauce.
- Make sauce by combining egg yolk, lemon juice, Dijon, and salt in a blender or food processor.
- While mixing, add olive oil and the cream in a steady stream until smooth. Add the peppercorns and pulse 1 or 2 times only.
- Refrigerate until ready to use. Serve sauce at room temperature.

SMOKED PORK TENDERLOIN WITH GREEN PEPPERCORN SAUCE
This recipe uses a stovetop smoker with 1 1/2 tablespoons of hickory wood chips. NOTE on cooking times: Place the smoker on the stovetop with the lid slightly open. When the first hint of smoke appears, close the lid and start cooking time. FYI: The temperature inside the smoker is about the same as a 375 F oven. Smoke time is an estimate due to the differing stovetops. Ceramic tops must add 20% cook time, for example. Assure your smoker is sealed properly and increase time appropriately, but refrain from raising the temperature.

- PREPARE THE SMOKER: Place the wood chips in a small pile in the center of the smoker base. Place the drip tray on top of the wood chips inside the smoker base. Use non-stick spray or foil for easier cleanup.
- Place the wire rack on top of the drip tray, then arrange the food to be hot-smoked on the wire rack. You can spray the wire rack for cleanup ease as well.
- Slide the lid closed and place the entire unit on the heat source (single burner). Medium-high settings yield the best results.
- SMOKIN'! Trim tenderloins of all fat. Rub with olive oil and thyme. Smoke on medium high for 25 minutes. Do not overcook! Let stand for 10 minutes and serve with sauce.

STOVE TOP SMOKER SOUTHWESTERN PORK TENDERLOIN
It is becoming harder to find pork tenderloins that are not packed in plastic, floating around in some kind of seasoned brine. I have nothing against brine, but those pre-seasoned tenderloins have an odd, artificial taste that becomes odder when smoked. Look for pork tenderloins in their natural state. From the cookbook, "Smokin" My Note: I found that after 25 minutes smoking, the meat was only half-done. My tenderloins were on the large side. I finished the tenderloins in my rotisserie for another 25 minutes, and they were perfect. Smoky juicy tender meat with a crispy outside. Used mesquite chips with the southwestern seasoning. Good combo.

- Prepare rub for tenderloins by snapping the stems off the dried chiles, if using them. For a milder rub, tap out and discard the seeds. Crumble the peppers into a small saucepan and add the coriander and cumin seeds. Toast the mix over low heat, stirring constantly, until the seeds are lightly browned and little wisps of smoke rise from the pan. Pour the spices into a plate and cool to room temperature. Grind them into a powder in a spice mill.
- Store in a covered container in a dark place for up to two weeks.
- Trim any excess fat from the tenderloins, if you like. I leave it on, there is never all that much.
- Season the pork tenderloins with 4 teaspoons of the rub.
- Smoke over medium heat using the wood chips of choice (2 tablespoons alder or cherry wood chips OR 4 or 5 teaspoons hickory wood chips) until an instant-read thermometer reads 145ºF, about 25 minutes from the time the smoker lid is closed. Check the tenderloin(s) for doneness with the thermometer after 20 minutes of cooking time, the remaining cooking time will vary with the thickness and shape of the tenderloin. SEE My NOTES.

- Make the brine. In a small saucepan, combine the brown sugar, salt and 2 cups of water. Bring to a boil over high heat, stirring to completely dissolve the sugar and salt. Remove from the heat and pour into large metal bowl. Stir in ice cubes until mixture is cooled. It should take about a quart of ice cubes. Pour the brine into a gallon sized zip top bag and add the pork. Squeeze out excess air and brine for 1 hour.
- Remove the pork from the brine and pat completely dry. Brush the tenderloin with oil and season on all sides with the pepper.
- Cook. Grill the pork, with the grill top closed, 5 minutes, then flip, grill 5 minutes more and repeat on final side until the interior temperature reaches 140°F. If using a grill pan indoors, heat over high heat, grill the pork covered with a domed lid for the same times. Remove the pork from the grill to a plate and tent to keep warm. The pork will cook a little more as it rests. Rest the pork for about 15 minutes before slicing. Make the sauce during that time.
