MAMA'S BLACKBERRY COBBLER

Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. This is her mama's recipe. The blackberries start on top, but then end up tucked under a golden brown crust after it's baked. -Lisa Allen, Joppa, Alabama

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

This stovetop blackberry cobbler takes less than 1/2 an hour until it's done cooking !! Luscious with fresh or froze berries.

1 Cup All purpose flour
1 1/2 teaspoons Baking powder
1/2 teaspoon Sea salt
2 tablespoons Sugar
2 tablespoons Butter
1/3 Cup Buttermilk
4 Cups Blackberries
3/4 Cup Sugar
1/4 teaspoon Cinnamon
1/4 tablespoon Allspice Ground
1 teaspoon Lemon Juice
1 teaspoon Lemon Zest
1/3 Cup Water

Steps:

  • 1. In a medium bowl, whisk together flour, baking powder sugar and salt. Add butter to the mixture using a fork. Add milk all at once and stir till the flour is just moistened. Handle as little as possible. Set aside 2. In a two quart pan add berries, lemon juice & zest, sugar, cinnamon, allspice and water. Heat until boiling, stir a little so the berries are well coated with the sauce. Once the berry mixture is boiling, tear off spoonful chunks from the dough ball and drop them into the fruit around the edges of the pot. You should have enough for six or so dumplings. Cover the pot and reduce the heat to simmer. Cook for 25 minutes till the dough is set. NO PEEKING ... if you are a watcher... use a glass lid like I do. 3. Place dumplings in serving bowls and top with berries. Serve with cream or ice cream. ENJOY !!!

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
  • In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
  • Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. 1 cup all-purpose flour
2 teaspoons baking powder
½ cup milk
¼ cup melted margarine
2 cups fresh blackberries
½ cup white sugar
1 cup water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Whisk 1/2 cup sugar together with the flour and baking powder in a mixing bowl. Stir in the milk and margarine until a batter forms. Scrape into the prepared baking dish. Add the blackberries, and sprinkle with 1/2 cup sugar. Pour in the water.

⅔ cup milk

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
