MY FAVORITE STRAWBERRY BACON SALAD



My Favorite Strawberry Bacon Salad image

This is our favorite strawberry bacon salad because it's always a crowd-pleaser and if you already have cooked bacon, it takes about 15 minutes to throw together.

8 cups chopped romaine lettuce
1 pound strawberries, sliced
5-6 slices bacon, cooked and chopped
2/3 cup crumbled blue cheese*
2/3 cup chopped pecans*
1/4 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
2 Tablespoon honey
1 teaspoon dijon mustard
salt & freshly ground black pepper, to taste

Steps:

  • Make the vinaigrette first by whisking all of the vinaigrette ingredients together. Taste, then add salt and pepper as needed. You can make the dressing ahead of time and keep it in the refrigerator until ready to use. It's great for up to 2 weeks when stored in the refrigerator.
  • If your bacon is not already cooked, cook it according to its package directions. Cool until ready to handle, then chop it up.
  • In a large bowl, toss all of the salad ingredients together, then mix in the vinaigrette. You may not need all the vinaigrette- use as much or little as you prefer.
  • Plate and serve. Cover and store leftovers in the refrigerator for up to 2 days.

⅛ teaspoon lemon juice

Steps:

  • In a large bowl, mix the romaine lettuce, red onion, strawberries, and mandarin oranges.
  • In a medium bowl, whisk together the mayonnaise, cherry juice, honey, poppy seeds, and lemon juice. Pour over the lettuce mixture, and toss to coat.

1 bunch of fresh romaine lettuce, freshly torn
1 slice red onion
1 carton of freshly sliced strawberry
1 lb of crisply fried bacon
1 cup slivered almonds or 1 cup sliced almonds
1/3 cup sugar
1 tablespoon butter
3/4 cup mayonnaise
1/4 cup milk
1/3 cup sugar
2 tablespoons poppy seeds
2 -4 tablespoons raspberry vinegar

Steps:

  • Toast almonds with sugar and butter mixed together in 350 degree oven until lightly browned (watch closely) Tear lettuce leaves and toss with red onions, strawberries and chopped fried bacon.
  • When almonds are cool sprinkle on top of salad.
  • Whisk dressing together and pour over salad and toss all together.
  • Delightful salad.
  • Believe me you will receive many compliments on this one!

ROMAINE SALAD WITH BACON FAT DRESSING

8 slices thick-cut bacon
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon maple syrup
Freshly ground black pepper
2 hearts of romaine, halved
4 ounces blue cheese
1/2 cup dried cherries
Kosher salt

Steps:

  • Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer the bacon to a paper towel-lined plate and let cool, then chop. Add the vinegar to the same skillet with the bacon fat, followed by the Dijon, maple syrup and a few turns of pepper. Whisk together, heating over medium heat until emulsified, then turn off the heat.
  • To serve, place the romaine on a platter and sprinkle with the bacon, crumbled blue cheese and dried cherries. Drizzle with the warm bacon fat dressing and season with salt and pepper.
