Strawberry Banana Muffins image

Lots of strawberries from last summer, and need to make some room in the freezer. I made a triple batch of these for a wedding social, they were gone in a flash!

1/4 cup unsalted butter (melted)
1/2 cup milk
1 large egg
1 3/4 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
3/4 cup sugar
1 1/2 cups fresh strawberries, chopped
1 banana, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
  • Combine the butter, milk, and egg in a small bowl and beat it lightly. In a larger bowl, pour in your flour, salt, baking powder, and sugar and gently mix it. Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture. Pour in your milk mixture and stir it all up together.
  • Fill up the muffin cups with your batter, then place in the oven and bake for 25 to 30 minutes.
  • Let them cool down for 10 minutes, then remove from the pan and serve these bad boys up.

1 ¼ cups whole wheat flour
¼ cup quinoa flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
3 bananas
1 cup sliced strawberries
⅓ cup honey
⅓ cup canola oil
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a muffin tin with paper liners.
  • Sift whole wheat flour, quinoa flour, baking powder, baking soda, and salt into a large bowl.
  • Combine bananas, strawberries, honey, oil, egg, and vanilla extract in a blender; blend until small chunks remain or mixture is completely smooth. Pour over whole wheat flour mixture; mix until batter is combined.
  • Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool.

½ cup white sugar
¼ cup unsalted butter
2 small ripe bananas, mashed
1 egg
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
5 small strawberries, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 6 muffin cups with cooking spray.
  • Combine sugar and butter in a medium bowl; beat with an electric mixer until pale and fluffy. Add bananas, egg, and vanilla extract; beat for 1 minute.
  • Sift flour, baking powder, baking soda, and salt over the banana mixture. Beat until just combined. Stir in chopped strawberries. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 16 to 18 minutes. Cool for 5 minutes then transfer to a wire rack to cool completely.

2/3 cup sugar
1/2 cup oil
2 eggs
2/3 cup mashed banana
1 teaspoon vanilla
1 2/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup finely chopped strawberry

Steps:

  • Preheat oven to 375°.
  • Line 12 muffin cups with paper baking cups.
  • Combine sugar, oil and eggs and blend well.
  • Stir in bananas and vanilla.
  • Lightly spoon flour into measuring cup and level off.
  • Add flour, baking soda and salt to sugar mixture and stir just until combined.
  • Stir in strawberries.
  • Spoon batter evenly into lined muffin cups.
  • Bake for 17 to 21 minutes or until toothpick inserted in center comes out clean.
  • Immediately remove from muffin cups.

1/2 cup melted butter or coconut oil
1 cup mashed bananas - approx 2 large bananas
2 eggs or 1/2 cup plain or Greek yogurt
1 teaspoon vanilla extract
2 1/4 cup all-purpose flour
3/4 cup light brown sugar
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup chopped strawberries

Steps:

  • Preheat oven to 350* F.
  • Line muffin tin with paper liners.
  • Melt butter (or coconut oil) and place it in a mixing bowl.
  • Add mashed bananas and mix well.
  • Add eggs (or yogurt) and vanilla. Mix well.
  • In a separate bowl, mix together flour, brown sugar, baking powder, baking soda, cinnamon and salt.
  • Toss strawberries into dry ingredients and mix coating the strawberries.
  • Add dry ingredients to wet ingredient bowl and gently mix until incorporated.
  • Do not over mix.
  • Fill cupcake liners 3/4 full.
  • Bake 16 - 18 minutes or until toothpick comes out clean when tested.

EASY STRAWBERRY BANANA MUFFINS - BUBBAPIE
Preheat oven to 350 and line 15 regular size muffin cups with a paper liner. Set aside. In a mixing bowl, add vegetable oil, sugar and eggs and mix well. Mix in bananas and vanilla. Add flour, baking soda and salt and mix until combined. Fold in strawberries.
