FLUFFY STRAWBERRY FUDGE
Fruit fudge made from preserves.

Steps:
- Grease an 8 x 8 inch square pan.
- In a medium saucepan combine sugar, water and cream of tartar; bring to a boil. Heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Stir in the strawberry preserves; return to a boil. Remove from heat.
- Slowly pour the strawberry mixture over the beaten egg whites, stirring constantly. Beat until thick and fluffy. Pour into prepared pan. Cool for 2 hours, or until firm, and cut into squares.

- Beat cream cheese at medium speed of mixer until fluffy.
- Add melted chocolate,beating until smooth.
- Stir in wafer crumbs and preserves,cover and chill 1 hour.
- Shape mixture into 1 inch balls,roll in almonds or powdered sugar.
- Store in airtight container in refrigerator.

FUDGE BALLS (NO BAKE)
Wonderful little treats, great to take to potlucks (they travel well). I have made these without using the dried fruit, and just with raisins, and they are still wonderful, but even better with the dried fruit!

Steps:
- Combine butter, sugar and salt in a saucepan over medium heat; bring to a boil, cook 4-5 minutes, stirring constantly (start timing when mixture starts to bubble around the edges of pan).
- Remove from heat; add marshmallows, chocolate chips, vanilla, walnuts, raisins and candied pineapple OR apricots.
- Stir vigorously for 1 minute (until marshmallows melt and are blended), working quickly, drop by teaspoonfuls onto waxed paper.
- Store in an airtight covered container, in the fridge or out of the fridge.

- Whisk the condensed milk and strawberry gelatin powder together until obtaining a homogeneous mixture (without lumps). Then, stir in the butter.
- Cook in a medium non-stick saucepan or skillet over medium-low to medium heat (large burner), stirring constantly, until the mixture thickens and starts to peel away or show the bottom of the pan when you scrape it with your wood spoon (about 5-8 minutes). The strawberry fudge mixture should be thick enough to reveal the bottom of the pan for a couple of seconds before the mixture levels out again.
- When the strawberry fudge is ready, remove from the stove and spread mixture onto a plate greased with butter.
- Let cool to room temperature before starting to roll them into balls with greased hands. Use a 1 teaspoon measuring spoon as measure. Then, shape them into strawberry shapes and dredge gently in sugar or sprinkle sugar all around until totally covered. Place into paper bonbon cups and garnish each with a clove as a "stem," as seen in the pictures. Enjoy!
