STRAWBERRY CHEESE TEA
Steps:
- In a medium pot, add tea leaves and water. Cook over medium heat for 11 minutes. It should just come to a boil. Strain the tea into a glass pitcher. Reserve the tea leaves for other use. Add 3 tablespoons sugar into the tea and stir to melt. Transfer the pitcher into the fridge and chill until cold, about 6 hours.
- In a blender, add cold tea, strawberry cubes and 1½ tablespoons. Blend until smooth. Taste and adjust with more sugar if needed. Place the blender container along with the tea to the fridge and keep cold.
- Meanwhile, in a large mixing bowl with an electric mixer fitted with a whisk attachment, beat the cream cheese for 1 minute. Add milk and beat for another 2 minutes. Add whipping cream, sugar and salt. Beat until no lumps and foamy, about 2 minutes.
- Pour the tea into 2 serving glasses until 4/5 full. Top with cheese topping. Stir and serve immediately.

- For the strawberry compote, wash strawberries and remove the stem. Dice strawberries into small cubes.
- In a small saucepan, add diced strawberries and sugar. Cook for about 3 minutes on medium-high temperature, so the strawberries soften and the compote gets less watery. Stir frequently. Check the video to see how it should look like.
- Prepare the boba following the package instructions.
- Rinse boba pearls, placing them into a small bowl. Pour brown sugar syrup over them. Let the boba rest for 10 minutes so it can soak in the sugar syrup.
- Prepare the strawberry milk. Wash and remove the stem of strawberries. In a blender's cup, add strawberries, your choice of milk and vanilla extract, and blend for about 1 minute or until smooth.
- Strain milk to remove strawberry seeds.
- Divide evenly boba pearls between 2 tall glasses. Do the same with the strawberry compote. Give it a stir to mix.
- Fill 2/3 of the glasses with ice. Pour half a cup of black tea in each glass, then one cup of strawberry milk.
- Stir to combine and serve right away.

- Steep the tea bags in water for at least 10 minutes for a strong tea. You can steep the tea and store in the refrigerator up to a day in advance if needed.
- While the tea is steeping prepare the boba according to package directions on the stove top. If it is quick-cooking boba you will boil for 5 minutes and let rest covered for 5 minutes.
- Remove the boba from the pot using a slotted spoon and transfer to a bowl with about 4 Tablespoons of simple sugar syrup. See notes.
- Divide sweetened, cooked tapioca pearls among 4 serving glasses. Pour 1/4 cup prepared tea into each topped with 1/2 cup of strawberry milk. Add ice if desired. Serve with fat straws or long dessert spoons to reach the boba.

- Boil a kettle of water then pour half a cup of boiling water into a jug and add the strong black tea. Allow the tea to infuse and prepare the tapioca pearls.
- Place a small saucepan on the stove and fill halfway with water. Set the stove to high and bring the water to a boil then pour in the tapioca pearls.
- Stir the tapioca pearls to prevent them from sticking to one another then cook for 10 minutes. After 10 minutes, strain and rinse with cold water.
- Remove the tea bag from the tea and discard, then stir in the sugar to dissolve.
- Into a tall glass add the cooked tapioca pearls and ice, then top with the tea and strawberry milk.
- Serve with a large straw and stir to combine.

- Add the tea bag to the boiling water and let the tea steep for 5 minutes. Remove the tea bag and let the tea cool to room temperature. Then put the tea in the fridge to fully chill.
- Heat the strawberries, water and sugar on a pan over medium heat, stirring occasionally. As the strawberries warm up, they will begin to get mushy. Use a fork to fully mash them as much as possible. Continue to stir the syrup, letting it gently simmer for 5-10 minutes. Remove the syrup from the heat and let it cool for a few minutes.
- Strain the syrup: Once slightly cooled, strain the strawberry syrup mixture through a fine mesh sieve. Press the mashed strawberries as much as you can to get all the syrup out of them. You should end up with about a ½ cup of syrup. Set the syrup aside for now.
- Make the boba: Bring a pot of water to a boil on the stove. Once boiling, add the boba to the water. At first, the boba will sink to the bottom, then after about 20 seconds, they will float to the top. Slightly lower the heat and continue to simmer for 5 - 10 minutes. Remove the pot from the heat and strain the boba. Run the boba under cold water for about a minute until they have cooled down. Then, stir them into the strawberry syrup to prevent them from clumping together.
- Stir the chilled tea, milk, and boba in the strawberry syrup together. Add in a handful of ice and serve immediately.

- Boil the water in a pot.
- Once the water starts to boil, turn the heat down to a simmer, then add the uncooked tapioca
- Continue to cook on medium/low heat for 30 minutes
- Turn off the heat after 30 minutes, and let the boba pearls sit in the hot water for about 5 minutes
- After 5 minutes, scoop the pearls into a bowl of cold water
- Stir in 2 Tablespoons of sugar, and leave the boba pearls in the water until ready to use
- Rinse and hull the fresh strawberries (frozen strawberries can also be used instead of fresh strawberries)
- Cut the strawberries in quarters and put in a pot
- Add the water and sugar to the pot with the strawberries
- Cook on low heat until the strawberries soften - approximately 10 minutes
- Turn off the heat, and let the strawberries rest for about 5 minutes in the pot
- Strain out the strawberry syrup, and set it aside to let it cool
- Bring water to a rolling boil, then turn off the heat
- Add the teabags to the water and let them steep for 5 minutes
- Squeeze the teabags and bring them out of the tea
- Set the tea aside to cool prior to use
- Add some ice to a tall cup
- Add the cooked tapioca pearls, strawberry syrup, milk and tea
- Stir and enjoy using a thick bubble tea straw
