LEMON PUDDING WITH STRAWBERRY CREAM

- Remove the zest of 1 lemon in wide strips with a vegetable peeler. Juice both lemons to make about 5 tablespoons. Chop 1 cup of the strawberries and combine with 1 tablespoon granulated sugar and 1 tablespoon lemon juice in a bowl; set aside to macerate while you make the pudding.
- Meanwhile, whisk the remaining 1/2 cup granulated sugar, the cornstarch and salt in a medium bowl. Whisk in the egg yolks and 1/4 cup half-and-half until smooth. Bring the remaining 1 1/2 cups half-and-half and the lemon zest to a boil in a medium saucepan over medium-high heat. Remove from the heat and let sit 10 minutes to infuse. Gradually whisk in the sugar-yolk mixture, then the remaining 1/4 cup lemon juice.
- Return the saucepan to medium-high heat and cook, whisking constantly, until the pudding comes to a boil and thickens, about 3 minutes. Continue cooking, whisking constantly, about 1 more minute. Remove from the heat and whisk in the butter until smooth. Strain the mixture through a fine-mesh sieve, pressing it through with a rubber spatula; discard the lemon zest.
- Divide the macerated strawberries among 8 clear plastic cups or glasses; top with the lemon pudding. Press plastic wrap directly onto the surface of each and refrigerate until set, at least 4 hours or overnight.
- When the pudding is set, pulse the remaining 3/4 cup strawberries in a mini food processor until smooth. Beat the heavy cream and confectioners' sugar in a large bowl with a mixer on medium speed until soft peaks form, about 1 minute. Add the strawberry puree and continue beating until stiff peaks form. Top the pudding with the strawberry whipped cream and sprinkle with the crumbled cookies. Top with sliced strawberries.
STRAWBERRY CREAM-STUFFED PASTRIES RECIPE BY TASTY

- In a food processor or blender, puree the strawberries until smooth.
- Pour the strawberry puree through a sieve into a medium bowl to remove any seeds and clumps. Chill for 15 minutes, until the puree is cold.
- In a separate large bowl, beat the cream cheese and ½ cup (80 g) of powdered sugar together with an electric hand mixer. Mix in the milk and strawberry puree. Set aside.
- In a small bowl, whisk the beaten egg and water together. Set aside.
- Preheat the oven to 400˚F (200˚C).
- Roll a foot-long (30 cm) piece of aluminum foil into a tube. Repeat with 3 more pieces of foil to make 4 tubes total.
- On a cutting board, roll the puff pastry out to 13 inches (33 cm) by 13 inches (33 cm). Slice the puff pastry lengthwise into 1½ inch-wide (4 cm) strips.
- Wrap 2 of the strips around a foil tube, brushing the edges with egg wash and gently pressing together to adhere. Repeat with the remaining pastry strips and foil tubes.
- Balance the ends of the foil tubes over the edges of a roasting pan or baking sheet so the pastry isn't touching the surface of the pan. Brush egg wash all over the pastry spirals.
- Bake for 25 minutes, until golden brown.
- Let the pastry tubes rest at room temperature for 5 minutes. Gently remove the foil tubes. Transfer the pastry tubes to a baking sheet lined with parchment paper and bake for 5 more minutes. Let cool to room temperature.
- Fill a piping bag or zip-top bag fitted with a round tip with the cream cheese mixture. Pipe the cream cheese filling into the pastry tubes.
- Dust with powdered sugar and drizzle with chocolate syrup.

STRAWBERRY AND RASPBERRY TART WITH MEYER LEMON PASTRY CREAM
Steps:
- Preheat the oven to 375 degrees F.
- Grate the butter on a box grater and add to the bowl of a food processor with the flour, 1/4 cup of the sugar and the salt. Pulse to combine until the mixture resembles Parmesan cheese. Add the egg yolk and 3 tablespoons of ice water. Pulse to combine until the dough comes together and holds its shape when pressed between your fingers. Turn the dough out onto a floured work surface. Gently knead a few times and bring the dough together into a ball, then flatten into a disc. Roll the dough out evenly into a 1/4-inch-thick circle. Transfer the dough onto a sheet tray and cover with plastic wrap. Place into the fridge to rest for 30 minutes.
- Remove the dough from the fridge and roll evenly in all directions, making sure it doesn't stick to your work surface and dusting with flour as needed. The dough should be about 1/8-inch thick. Slice the dough in half and transfer to two nonstick 6-inch fluted tart pans with removable bottoms. Press the dough snuggly into the edges ensuring the dough runs fully up the side. Use a rolling pin to trim the excess dough. Line each tart with a piece of foil and fill with baking beans (or I use rice!), making sure the foil is tightly packed to the corners. Transfer the dough to the oven to blind bake for 6 minutes. Rotate the pan, then bake for another 6 minutes. Remove the foil and baking beans and place the tart back into the oven until lightly golden, another 4 minutes. Set aside to cool.
- Set up an ice bath. Add the cornstarch and 1/4 cup of the heavy cream to a small bowl. Mix to create a slurry and set aside. Add 1/2 cup of the sugar and the 4 whole eggs to a large bowl and beat with a whisk until pale yellow and foamy. Add the remaining 2 cups heavy cream, the remaining 1/2 cup sugar, the vanilla extract and lemon peel to a small saucepan and whisk to combine. Turn the heat to medium-high and bring to a boil, then pour half of the mixture into the bowl with the eggs and sugar and immediately whisk vigorously to combine and temper the mixture. Pour the contents of the bowl into the saucepan and continue to whisk. Add the cornstarch slurry and whisk to combine. Reduce the heat to medium-low and continue to whisk until the mixture begins to thicken and it reaches the texture of pudding, 3 to 4 minutes. You want to continuously whisk to avoid scorching the mixture. Strain through a fine mesh strainer into a bowl. Set the bowl over the ice bath to cool.
- Place the apricot preserves and a splash of water into a small saute pan. Turn the heat to medium and stir to gently melt the preserves, about 5 minutes. Set aside.
- To assemble the tart, spoon an even layer of the lemon pastry cream into each tart shell, but not fully to the top. Line the outside of the tart with raspberries and working inward, arrange the inside of the tart with the sliced strawberries. Repeat this process alternating with more raspberries and strawberries. Glaze the top of each tart with the apricot mixture.
- Serve the tarts with a dollop of whipped cream. Enjoy!

- Beat the cream cheese, confectioners sugar, lemon peel and juice until smooth.
- Cover and refrigerate.
- This filling can be made ahead or it can be kept in the refrigerator.
- Remove the hulls from your strawberries, wash and dry well.
- Place on a paper-lined tray with the hull side down.
- Cut an x half way down the strawberry.
- Pull the sections apart only slightly.
- Spoon your filling into pastry bag fitted with a 1/2" star tip.
- Pie approximately a tsp.
- of filling into each strawberry.
- The berries may be filled 2 hrs.
- before serving.
- To serve: Place in petit-four cups.

STRAWBERRY-LEMON CREAM TART

- Whip cream to stiff peaks. Place lemon curd in medium bowl. Stir in 1/2 of whipped cream. Fold in remaining cream. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Preheat oven to 350°F. Roll pastry out on lightly floured surface to 14x11-inch rectangle. Cut 4 1-inch-wide strips off short side and 4 1-inch strips off long side. Transfer pastry rectangle to ungreased cookie sheet. Pierce with fork. Brush with some of egg glaze. Arrange 1 pastry strip on each edge of rectangle so outside edges meet, trimming as necessary, forming tart edges. Brush top of strips with egg glaze. Repeat with remaining pastry strips. Brush top of strips with egg and sprinkle with sugar. Bake tart 5 minutes. Pierce with fork if puffed. Continue baking until golden brown, about 20 minutes. Cool completely.
- Spread cream mixture in tart. Arrange strawberries atop lemon cream in rows, cut side down.
FRAISIER (STRAWBERRY CREAM CAKE)
The frasier cake brings together tender sponge cake, luxurious pastry cream, and ripe, juicy strawberries in a classic French dessert.

- In a medium bowl, vigorously whisk together the egg yolks and sugar until lightened. Whisk in the cornstarch. In a saucepan, warm the milk, then slowly pour it into the egg mixture while whisking constantly. Pour the combined mixture back into the saucepan and cook over medium heat, whisking constantly, until very thick, about 5 minutes. Cover the surface with plastic wrap and refrigerate.
- Preheat the oven to 350°F. Line a rimmed sheet pan with parchment paper.
- Make the sponge cake. Sift the flour. In a large bowl, whisk together the egg yolks and one-third of the sugar until lightened. In a separate bowl, beat the egg whites into stiff peaks, adding the remaining sugar a little at a time halfway through the beating time. Fold the beaten egg whites into the yolk mixture, then fold in the flour. Spread the batter evenly into the prepared sheet pan. Bake for 10 minutes. Cool completely.
- Carefully peel the parchment paper from the cake.
- Using the cake ring, cut out two circles from the cake.
- Add the butter to the bowl of a standing mixer fitted with the whisk attachment and beat until light and creamy.
- Add the pastry cream and beat until well incorporated. Transfer the mixture to a bowl.
- Place the cake ring on a serving plate and place one cake circle on the bottom.
- If necessary, briefly rinse the strawberries and pat them dry on paper towels.
- Set aside one dozen of the most attractive strawberries for the top decoration. Hull and cut similarly sized strawberries in half and place them next to each other around the perimeter of the ring with the cut side touching the ring.
- Cover the strawberries with a little of the pastry cream to seal them against the ring.
- Hull the remaining ones and place in the center of the cake.
- Cover the layer of strawberries with some of the pastry cream.
- Place the second cake disk on top.
- Evenly spread a thin layer of the pastry cream on top.
- Hull the remaining whole strawberries then set them on top of the cake, pointed ends up.
- Scrape the remaining pastry cream into a pastry bag fitted with a 1/3-in plain pastry tube and pipe pointed mounds of cream on top of the cake between the strawberries.
- Refrigerate overnight. Just before serving, carefully remove the ring.
