STRAWBERRY BREAD
This is wonderful hot or cold, for breakfast or as a dessert. A definite family favorite!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5-inch loaf pans.
- Slice strawberries and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing batter.
- Combine flour, sugar, cinnamon, salt and baking soda in large bowl; mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.
- Bake in preheated oven until a tester inserted in the center comes out clean, 45 to 50 minutes (test each loaf separately). Let cool in pans on wire rack for 10 minutes. Turn loaves out of pans, and allow to cool before slicing.

STRAWBERRY SOURDOUGH BREAD
This recipe is posted in several locations on the web; however, they all say "Mix in the oil....". None of the recipes I found said how much oil. So I developed this recipe adding in oil, applesauce and salt. I also thought it would be better with the strawberries coarse chopped. This is a delicious quick bread that can be made when splitting your starter. The bread gets the flavor of the sourdough and has baking soda and salt to help as a rising agent.

Steps:
- Preheat oven to 350 degrees, spray an 8 1/2 inch x 4 1/2 inch loaf pan with baker's cooking spray or lightly oil and flour; set aside.
- In a large mixing bowl lightly beat the eggs; mix in the oil, applesauce and sugar; stir in the sourdough starter.
- In a smaller bowl, mix together the flour, baking soda and salt; add to the sourdough mixture; stirring to combine.
- Fold in the pecans and chopped strawberries; pour mixture into prepared pan and bake in preheated oven for 45 to 60 minutes.
- Cool on wire rack, slice and serve with butter or cream cheese.
- Please note: The cooking time reflects using a sugar substitute for part of the sugar. If using sugar the cooking time may be longer.

My husband and I are strawberry lovers, so each spring we pick about 30 quarts. This recipe makes two delicious loaves. One we eat right away; the other we freeze and pull out when family comes to visit.

- In a large bowl, combine flour, baking soda, sugar, cinnamon and salt. Add egg, egg whites and oil; stir just until moistened. Fold in strawberries and nuts. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack.

- Combine strawberries, lemon juice, acai powder, and 1 cup water in a blender; blend until smooth.
- Pour into a pitcher and add remaining 2 cups water and 1 tablespoon sweetener. Add more sweetener according to sweetness desired. Serve over ice.

- In the morning make your dough combine 2 tablespoons (15-20 grams) of unfed sourdough starter with 30g of water 30 g of bread flour. Mix until there are no dry bits of flour, cover loosely with plastic wrap and let sit out for 4-5 hours or until it doubles in volume.
- Around 4 hours of Levain making, Mix all the flours in 320 g water in a large bowl. And mix by hand until there are no dry bits. Knead for 1-2 minutes until well combined. Cover and let rest for 30 minutes
- Then stretch and fold the dough every 1 hour for until 2 hours. This means grabbing the underside of the dough and stretching it up and over the rest of the dough. Perform a few of these turns each time you handle the dough.
