  • Quarter the white parts of 4 scallions lengthwise; thinly slice the green parts. Soak the scallion whites in cold water, 15 minutes; drain. Whisk 2 tablespoons rice vinegar, 1 minced garlic clove, 1 teaspoon each sesame oil, chili oil and kosher salt, and 1/2 teaspoon sugar. Toss with the scallions (white and green parts), 2 bunches cilantro (leaves and tender stems), 1 thinly sliced serrano chile and 1 english cucumber (cut into thin strips).

2 garlic cloves, minced
1 teaspoon salt
1 cup cilantro, packed
1 cup parsley, packed
1/4 cup sherry wine vinegar (you can substitute either red wine or cider vinegar)
3/4 cup olive oil (I use lite)
1/2 teaspoon hot pepper sauce
1 pinch sugar

Steps:

  • Using your steel knife in the food processor mix garlic and salt; process until it is a paste.
  • Add cilantro and parsley; process to a fine mince.
  • Add vinegar; process for 10 seconds.
  • Add oil in a slow steady stream with the processor on.
  • Add hot pepper sauce (to match your taste) and a pinch of sugar.
  • Chill the dressing for several hours in a glass jar; shake to combine before using.

1/4 cup honey
1/4 cup lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
1 cup fresh cilantro leaves
3 cups tortilla chips
8 cups shredded lettuce
1/2 cup finely chopped red bell peppers
1/2 cup finely chopped red onion
1/2 cup rinsed drained Progresso™ black beans (from 15-oz can)
1/2 cup shredded Cheddar cheese (2 oz)

Steps:

  • Cook chicken as desired until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • Meanwhile, in blender, place honey, lime juice, salt, pepper, oil and cilantro. Blend with on/off pulses until dressing is smooth. Set aside.
  • In each serving dish, place 3/4 cup tortilla chips. Top each with lettuce, bell pepper, onion, beans and cheese.
  • Cut cooked chicken breasts into slices; place on top of salads. Drizzle dressing over top of each salad.

1 cup flat-leaf parsley leaves
1 cup mint leaves
1 cup arugula leaves
2 cups mâche or other soft lettuce leaves

3 tablespoons lime juice, or to taste
2 tablespoons olive oil, or to taste

Steps:

  • Wash the herbs and greens. Fill a large bowl or clean sink with cold water, and add the leaves. Swish them around to loosen dirt, then gently lift out and dry in a salad spinner or on clean kitchen towels. (You can do this up to a day ahead, refrigerating the dry leaves in sealed plastic bags or containers with a paper towel to absorb excess water.)
  • When ready to serve, whisk together the salt, pepper, red-pepper flakes, lime juice and olive oil in a small bowl, then check the seasonings. Put the leaves in a large bowl, drizzle the dressing over them and toss gently to coat. Serve immediately.

5 tablespoons low-sodium gluten-free soy sauce (or coconut aminos)
3-5 drops stevia glycerite (omit if using coconut aminos)
1 tablespoon lemon juice
1/4 teaspoon steak tenderizer (or salt)
1/8 teaspoon black pepper (fresh ground)
4 ounces low-fat cream cheese (or kite hill cream cheese if dairy-free)
1/4 cup 4% cottage cheese (or 1/4 cup mayo or aioli if dairy-free or higher fat)
1/4 cup water
2 cloves garlic
1 tablespoon lime juice (or more to taste)
1/4 teaspoon salt
1 cup cilantro (1 bunch, including stems)

Steps:

  • Marinate steak in coconut aminos, salt, and lemon for at least 30 minutes.
  • While the steak marinates, prepare the sauce. Combine all ingredients un a high power blender and blend until completely smooth. Adjust seasoning to taste, adding more salt and a bit of coconut aminos if it is more sour than you like. Set aside.
  • Heat a nonstick pan over medium-high heat. Add the beef along with the marinade and cook until browned on all sides cooked to your liking, about 7 minutes for medium rare (125ºF).
  • Serve over a bed of lettuce with the sauce drizzled over top.

1/3 cup champagne vinegar
1 teaspoon extra-virgin olive oil
1/4 cup fresh orange juice
1 tablespoon finely grated orange zest
1 jalapeno, seeded and chopped
1/2 teaspoon coarse salt
1 pound sirloin steak (about 1 1/2 inches thick)
1 small red onion, halved and sliced into wedges
Fresh flat-leaf parsley, for garnish

Steps:

  • Process 1/2 cup cilantro, vinegar, oil, orange juice and zest, jalapeno, and salt in a food processor until coarsely chopped.
  • Rub half of the marinade over steak, and refrigerate for 1 hour.
  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 or 4 seconds.) Grill steak, flipping halfway through, until a meat thermometer registers 125 for medium-rare, about 12 minutes. Meanwhile, grill onion, flipping once, until it begins to soften, 3 to 5 minutes.
  • Let steak rest for 10 minutes before thinly slicing. Serve with onion and remaining 1/2 cup cilantro and marinade, and garnish with parsley.

  • Whisk 2 tablespoons oil and next 5 ingredients in small bowl. Arrange salmon and scallops on separate sides in 13x9x2-inch glass baking dish. Pour marinade over and toss to coat, keeping fish and scallops apart. Let marinate at room temperature at least 30 minutes and up to 1 hour, turning occasionally. Drain separately, reserving marinade.
  • Heat remaining 2 tablespoons oil in large nonstick skillet over medium-high heat. Sprinkle salmon and scallops with salt and pepper. Add salmon to skillet; sauté until just opaque in center, about 3 minutes. Using slotted spoon, transfer salmon to platter. Add scallops to skillet; sauté until just opaque in center, about 1 1/2 minutes per side. Transfer to platter with salmon. Pour reserved marinade into skillet; add mussels and clams. Cover and cook over high heat until mussels and clams open, about 3 minutes (discard any that do not open). Using slotted spoon, transfer mussels and clams to platter with salmon and scallops; cool to room temperature. Drizzle seafood with some Cilantro Dressing.
