Steps:
- For the perfect spiced pie crust: Mix the flour, cinnamon, salt and nutmeg in a bowl. Add the butter and vegetable shortening. Work the butter into the flour using a pastry cutter until the mixture resembles tiny pebbles. Add the white vinegar, egg and 5 tablespoons cold water and stir until just combined.
- Form 2 equal-sized balls. Place each in a large plastic bag (do not seal) and slightly flatten with a rolling pin; this makes it much easier to roll out the crust later. After flattening, seal the bag tightly. Place in the freezer for 15 to 20 minutes to chill.
- Preheat the oven to 375 degrees F.
- Remove 1 bag of dough from the freezer (save the other dough for another use), remove the dough from the bag and place it on a lightly floured surface. Roll the dough starting at the center and working outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out. If you think the bottom is really sticking to the surface below while rolling, use a metal spatula to loosen it. When fully rolled out, loosen again with a spatula and lift the pie crust into a 9-inch pie pan (or you can roll the pastry over the rolling pin, lift it onto the pie pan and unroll it). Gently press the dough against the corner of the pan and tear off any excess dough. Then tuck under the edges and go around the pie pan pinching the dough to crimp the edge.
- For the pie filling: In a bowl, mix the apples, lemon juice, granulated sugar, flour and salt. Set aside.
- For the crumb topping: Cut the butter into the flour with a pastry cutter, then add in the brown sugar, oats and salt.
- Add the apples to the prepared pie shell and top with the crumb topping. Bake for 1 hour, covering the edge of the crust with foil if it starts to brown too quickly. After an hour, sprinkle the chopped pecans over the pie, then bake for a further 5 minutes.
- Remove the pie from the oven and pour 1/2 jar (or more, if you're feeling dangerous and naughty) of caramel topping over the top. Allow to cool slightly before serving - or don't if you can't wait!

Steps:
- Prepare my pie crust recipe through step 5.
- In a large bowl using a rubber spatula or wooden spoon, stir the apples, lemon juice, flour, cloves, nutmeg, cinnamon, sugar, and vanilla extract together until thoroughly combined. Set filling aside as the oven preheats; this time allows the apples to begin letting off their juice.
- Preheat oven to 400°F (204°C).
- On a floured work surface, roll out one of the discs of chilled dough (if you made the entire pie dough recipe- you can freeze the other half of the dough at this time). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9×2 inch pie dish. Tuck it in with your fingers, making sure it is smooth. Spoon the apple filling into the crust, leaving some of the liquid in the bowl- don't want all that in the pie. Use a small paring knife to trim excess dough off the edges. Flute the edges.
- In a medium bowl, combine the brown sugar, cinnamon, flour, and walnuts. Using a rubber spatula, stir in the butter. The crumble topping will be thick and crumbly. Sprinkle over apples.
- Place the pie onto a large baking sheet and bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 375°F (190°C) and bake for an additional 30-35 minutes. After the first 20 minutes of bake time, I place a pie crust shield on top of the pie to prevent the edges from browning too quickly.
- Allow the pie to cool for 3 full hours at room temperature before serving. This time allows the filling to thicken up. Serve with vanilla ice cream if desired. Cover pie leftovers tightly and store in the refrigerator for up to 5 days.

- Stir the brown sugar, cornstarch, lemon juice, and cinnamon together in a mixing bowl. Add the sliced apples and stir until the apples are evenly coated.
- Spread into an even layer in the prepared baking dish. Pour the caramel sauce evenly over everything, then make the topping.
- Stir the flour, brown sugar, baking powder, and salt together in a medium bowl.
- Add the butter and use your fingers to cut it into the mixture until it comes together and forms large crumbles.
- Sprinkle the topping evenly over the caramel sauce.
- Set the baking dish on a large rimmed baking sheet to catch any juices that might spill over and bake 25 to 35 minutes, until the caramel and apple juices are bubbling around the edges and the top is light golden.
- Cool for 20 to 30 minutes to let the juices set up a little bit, then serve with ice cream and additional caramel sauce.
- Uneaten crumble can be stored, covered, in the fridge for 3 or 4 days. Be sure to let your crumble cool to room temperature before covering and refrigerating.

- Preheat oven to 375° F. Place the pie dough into a 9 inch glass or ceramic pie plate. Create a fluted crust with your fingers or crimp the edges with a fork. Refrigerate until the rest of the pie is prepped.
- Wash, peel, and thinly slice the apples, placing them in a large mixing bowl and tossing them in the lemon juice. Add the flour, sugar, spices, salt and vanilla to the apples and stir together until they are completely coated.
- In a separate bowl stir together all of the oat topping ingredients except the cubed butter. Once the topping ingredients are combined add in the cold cubed butter and work it into the mixture with your hands or a pastry blender until crumbles form.
- Pour the apples into the unbaked prepared pie crust. Top the apple filling with the oat topping. Bake the pie for 45-55 minutes or until the filling is bubbly and the crust is golden brown. If the crust and topping start to get too brown, place a piece of foil loosely over the top. I usually do this about halfway through the baking time.

- Preheat oven to 350F. In a large microwave-safe bowl, melt the butter, about 1 minute on high power.
- Allow the butter to cool momentarily so you don't scramble the egg; then add the egg, sugars, vanilla, cinnamon, allspice, cloves, salt, and whisk to combine until batter is smooth (All spices and salt should be added to taste and use what you have on hand; omitting what you don't have and mixing and matching with other spices such as ginger or pumpkin pie spice is okay).
- Pour filling mixture into frozen pie crust (I didn't bother pre-thawing it)and lightly smooth filling with a spatula. It's okay to fill pie crust up nearly to the brim; I did and it did not overflow. As insurance, place pie crust on a baking tray so if it does overflow a bit, it won't pool in the bottom of the oven.
