- Combine the sugar, thyme, and 1 cup water in a small pot. Bring to a boil and cook, stirring occasionally, until the sugar is dissolved. Let cool and discard the thyme.
- Combine the thyme syrup with the strawberries, lemon juice, and 5 cups cold water in a large pitcher. Chill for 30 minutes or up to 12 hours. Serve over ice, garnished with additional thyme. Add a splash of vodka, if desired.

Stir in lemon juice, gin (if using), and 6 cups cold water; strain into a large pitcher. Refrigerate until cold, at least 1 hour (and up to 1 week). Serve over ice, garnished with thyme sprigs, if desired.

- Tip the sugar and 1 litre water into a saucepan over a medium heat and heat, stirring, until the sugar has dissolved. Remove from the heat and leave to cool completely.
- Put the strawberries in a blender and blitz to a purée. You can strain this through a fine mesh sieve to remove any seeds, if you prefer. Tip the strawberry purée into a large jug with the sugar water and lemon juice, and stir to combine. Pour into glasses filled with ice and serve garnished with whole strawberries, if you like. Will keep chilled for a day.

- Make Thyme Simple Syrup: In a small saucepan, combine water and sugar and bring to a boil. Let boil for about 1 minute until the sugar has completely dissolved. Remove from heat and immediately add thyme sprigs. Allow to steep for 8-10 minutes. Discard thyme sprigs.
- Meanwhile, blend strawberries, lemon juice and about a cup of water in a food processor or blender until completely smooth. Pour the mixture through a fine mesh strainer and strain into a container with a spout or the pitcher you will serve it in, pressing on solids. Discard any pulp.
- Stir in another 1-2 cups of water and simple syrup to taste {depending on how sweet/tart/concentrated you like your lemonade}.
- Refrigerate until cold and serve over ice. Garnish with a sprig of thyme and strawberry or lemon slice if desired.
